- In a small bowl, mix teriyaki marinade, water, cornstarch and pepper until smooth. , In a large skillet, heat 1 tablespoon oil over medium-high heat. Add beef; stir-fry until no longer pink, 6-8 minutes. Remove from pan., Stir-fry onion, green pepper, red pepper and asparagus in remaining 1 tablespoon oil until vegetables are crisp-tender 4-5 minutes. - In a large bowl, mix the honey teriyaki sauce and wine. Place chicken in the bowl, and coat with the marinade. Cover, and marinate in the refrigerator at least 1 hour (it is best if you can marinate overnight).
- Preheat oven to 375 degrees F (190 degrees C).
- Discard marinade, and arrange chicken breasts in a baking dish. Bake 15 minutes in the preheated oven, until almost done.
- Place the asparagus in a pot fitted with a steamer basket over 1 inch of boiling water, and steam 5 minutes, until tender.
- Place 4 asparagus spears on each chicken breast, and top each breast with a slice of Swiss cheese. Return to oven, and continue baking 10 minutes, or until cheese is melted and chicken juices run clear.

- Whisk the soy sauce, mirin, honey and ginger and cornstarch in a small bowl; set aside. Lightly season the chicken with salt. Heat a large non-stick wok over medium-high heat, when hot add 1 teaspoon of the oil, then add the asparagus and cook until tender-crisp, about 6 to 7 minutes. Add the garlic and cook until golden, about 1 minute. Set aside on a dish. Increase the heat to high, then add 1 teaspoon of oil and half of the chicken and cook until browned and cooked through, about 4 minutes on each side. Remove and set aside and repeat with the remaining oil and chicken. Place everything back into the wok, pour the sauce over and cook stirring 30 to 60 seconds until the sauce thickens slightly

- Mix together the soy sauce, honey, sherry, and garlic. coat the salmon in the mixture and allow to rest, skin side up, for either at least 1 hour at room temperature or at least 4 hours in the fridge (it can go overnight if required).
- Heat the oil in a frying pan, and bring a separate pan of water to the boil. Reserving the marinade, fry the salmon skin side down until the flesh on the skinless side is turning opaque, then turn to finish to your liking.
- Add the asparagus to the boiling water at the same time at the salmon is added to the pan, or slightly later if you like your salmon well cooked. Cook for five minutes and then drain and toss in the sesame oil.
- In the last minute of cook time remove the garlic from the marinade and bring the liquid to the boil, allow to reduce by up to half. This happens very quickly and the liquid froths excitedly, I find removing the pan from the heat and swirling to calm it is the best way to judge how much reduction has occurred, then replace on heat if required.
- Serve the salmon on the asparagus and drizzle over the sauce. Serve with sticky rice or sautéed potatoes.

- Make several very shallow lengthwise cuts on the inner side of each chicken thigh, so that later the chicken will be easy to roll. In a medium bowl, combine the shoyu, mirin, sake, and grated ginger. Add the chicken thighs, and marinate them for 20 minutes, turning them over several times. Remove the chicken thighs from the marinade, and wipe them dry with a paper towel.
- Bring a medium pot of water to a boil, and blanch the asparagus spears for 20 seconds. Drain them, and wipe them dry with a paper towel.
- Tightly roll three asparagus spears in each chicken thigh. Secure each roll with five steel, skewers, threaded through the overlapped part of the roll in a fan shape, so that you can hold all five skewers together at one end. They will form a convenient handle by which to turn over the chicken during cooking.
- Heat a broiler or grill. Place the chicken rolls in a broiler pan or on the grill rack, 5 to 6 inches from the heat source, and cook the chicken rolls for 10 minutes. Turn them over, and cook them for 6 minutes on the other side. Remove the chicken rolls from the heat source. With a pastry brush, apply the teriyaki sauce on both sides of the chicken rolls. Return them to the heat source, and dry them on both sides for 1 to 2 minutes. Repeat the basting and drying process several times, until the chicken rolls are coated with a glossy layer of sauce.

- Snap off or trim the tough ends from the asparagus, then put in a baking dish. Whisk the teriyaki ingredients and pour over the asparagus. Gently toss the spears in the dish until they are coated with sauce.
- Set the grill up for direct medium heat. For my gas grill, I preheat the grill with all burners on high for 10 minutes. Next I brush the grate clean, then I turn the burners down to medium.
- Remove the asparagus spears from the teriyaki sauce, letting any excess drip back into the dish. Put the asparagus on the grill perpendicular to the grill grate over direct medium heat. Cook the asparagus, rolling the spears on the grate every couple of minutes and moving them around if there are hot spots. The asparagus is done when they are browned and cooked through, about 8 minutes. I check the spears two ways. First is the flop test. I pick up a spear with my tongs, and wiggle it up and down. If the spear doesn’t bend, it’s not done yet. If it’s soft and floppy, I move on to the bite test – I bite into the spear, making sure it doesn’t have any resistance. If it’s cooked through, I’m done.
- Move the grilled asparagus back into the baking dish and toss to coat it with teriyaki sauce one more time. Serve it immediately, or let the asparagus rest while you finish the rest of dinner.
