2 tablespoons unsalted butter
4 cloves garlic, chopped
1 ½ pounds large shrimp - peeled and deveined
½ cup tequila
½ cup chopped fresh cilantro
salt and pepper to taste

Steps:

  • Melt butter in a large skillet over medium heat. Saute garlic until light brown. Place shrimp in the pan, and cook for 3 minutes.
  • Pour in tequila, and season with cilantro, salt, and pepper. Cook for 2 more minutes.

1 lb fresh large shrimp, in shells, peeled, and deveined (could use frozen)
1/2 cup tequila
1/4 cup finely chopped onion
1/4 cup lime juice
2 tablespoons fresh parsley
2 tablespoons olive oil
1/2 cup dried tomatoe (not oil packed)
1 cup mayonnaise or 1 cup salad dressing
1 tablespoon snipped parsley
1 tablespoon milk
1 teaspoon bottled minced garlic
1/8 teaspoon salt
crushed ice (for serving)
lime wedge (for serving)

Steps:

  • Thaw shrimp, if froxen.
  • In a large saucepan, cook shrimp, uncovered in boiling, lightly salted water for 2-3 minutes or until shrimp turn opaque, then drain.
  • Rinse under cold water, and drain again.
  • Place shrimp in a heavy plastic bag set in a shallow dish.
  • FOR MARINADE:.
  • In a bowl, combine tequila, onion, lime juice, the 2 tablespoons parsley, and olive oil.
  • Pour marinade over shrimp, and seal bag.
  • Marinade for 2 hours, turning occasionally.
  • FOR MAYONNAISE MIXTURE:.
  • In a small bowl, cover dried tomatoes with boiling water, and let stand for 5 minutes.
  • Drain well.
  • Finely chop tomatoes.
  • In a small bowl, combine chopped tomatoes, mayonnaise, the 1 tablespoon parsley, milk, garlic, and salt.
  • Transfer to a serving bowl, cover and chill for 2 hours.
  • TO SERVE:.
  • Drain shrimp, and discard marinade.
  • Transfer to a serving bowl.
  • Place serving bowl in a larger serving bowl filled with crushed ice.
  • Serve with mayonnaise mixture, and lime wedges.

2 tablespoons extra virgin olive oil
2 tablespoons fresh lime juice
1 tablespoon minced garlic
1 tablespoon minced jalapeno pepper, with seeds
1 teaspoon ground coriander
1/2 teaspoon fresh ground black pepper
32 large shrimp, peeled and deveined
kosher salt
2 fresh limes, cut into wedges

Steps:

  • To make the marinade: whisk the marinade ingredients together in a small bowl.
  • Put the shrimp in a large zip-lock heavy-duty plastic bag; pour in the marinade.
  • Press the air out and seal bag; turn the bag to distribute the marinade; place in a bowl, and refrigerate 30-45 minutes.
  • Remove shrimp from bag and discard marinade.
  • Thread shrimp onto skewers; season with salt.
  • Grill over direct heat 2-4 minutes, until the shrimp are just opaque in the center and firm to touch, turning once halfway through grilling time.
  • Remove from grill and serve warm with lime wedges.

Steps:

  • For the marinade: Whisk together the first 7 ingredients.
  • Place shrimp in a large ziplock bag and add marinade, pressing out the air and tossing to coat.
  • Refrigerate 30-45 minutes.

1 (14 ounce) bag boil-in-bag long-grain rice (if no time constraints) or 2 cups jasmine rice (if no time constraints)
1/2 teaspoon salt, divided
1/4 teaspoon ground red pepper
1/4 teaspoon chili powder
1/8 teaspoon ground cumin
1/8 teaspoon black pepper
1 1/2 lbs peeled and deveined large shrimp
2 tablespoons vegetable oil, divided
2 teaspoons instant minced garlic
1/2 cup tequila
2 tablespoons minced fresh cilantro, divided
2 tablespoons fresh lime juice

Steps:

  • Cook rice according to package directions, omitting salt and fat.
  • While rice cooks, combine 1/4 tsp salt, the red pepper, chili powder, cumin and black pepper in a large zip-top plastic bag.
  • Add shrimp to bag.
  • Seal and shake to coat.
  • Heat 1 tbl oil in large skillet over medium-high heat.
  • Add shrimp to skillet, cook for 3 minutes, turning once.
  • Add garlic, saute for 1 minute.

  • Cook for a further minute.
  • Combine 1/4 tsp salt, 1 tbl oil and lime juice then pour over the cooked rice Serve shrimp over rice mixture.

1/4 cup silver or white tequila
1/4 cup lime juice (from about 3 limes)
1/4 cup fresh orange juice (from 1 orange)
Coarse salt and ground pepper
1 jalapeno, seeded and minced
Lime wedges (for serving)

Steps:

  • In a medium nonreactive bowl, stir together shrimp, tequila, lime juice, and orange juice; season with salt and pepper. Cover with plastic wrap and refrigerate 20 minutes.
  • Heat a grill or grill pan to medium-high. Clean and lightly oil hot grill. Grill shrimp until opaque throughout, 4 to 6 minutes, flipping once. Transfer to a platter and top with jalapeno. Serve shrimp with lime wedges.

1 1/2 pounds large shrimp in shell (21 to 25 per pound), peeled and deveined
1 teaspoon kosher salt
2 tablespoons unsalted butter
1/2 cup white or reposado tequila
3/4 cup crema or sour cream
1 scallion, thinly sliced
Accompaniment: rice

Steps:

  • Toss shrimp with kosher salt and 3/4 teaspoon coarsely ground pepper.
  • Heat butter in a 12-inch heavy skillet over medium-high heat until foam subsides, then sauté shrimp, turning, until pink and just cooked through, 3 to 5 minutes. Reduce heat and add tequila, then increase heat to medium-high. Tilt skillet over gas burner to ignite tequila (or ignite with a long match; use caution, as flames may shoot up high). Cook, shaking skillet gently once or twice, until flames subside. Remove from heat and stir in crema. Serve sprinkled with scallion.
