Tequila, 1-ounce per serving
Fresh lime juice, 1-ounce (about 2 tablespoons) per serving
Red part (Sangrita)* (See Cook's Note)
3/4 cups orange juice
3/4 cups regular or spicy tomato juice
1/4 cup fresh lime juice
1 medium jalapeno chile, stemmed, seeded and coarsely chopped
Pinch salt

Steps:

  • White part: Fill tequila shot glasses with tequila.
  • Green part: Fill tequila shot glasses with lime juice.
  • Red part: Put all of the ingredients for the sangrita in a blender and process until smooth. Fill tequila shot glasses with sangrita.
  • Each guest is served 1 shot of each part or color to sip.

There's only one way to improve on tequila shots: chase them with a short glass of spicy, citrusy sangrita. This recipe makes an entire pitcher of sangrita, enough for several shots, though you could also pair it with very cold Mexican beer.

2 cups freshly squeezed orange juice
3/4 cup freshly squeezed lime juice
1/4 cup grenadine syrup (use one with real pomegranate, like Employees Only or Fee Brothers)
2 teaspoons ancho chile powder
6 dashes Tabasco, or to taste
1/2 teaspoon salt
Reposado tequila (use about 1 1/2 ounces per shot)

Steps:

  • To make sangrita, mix all ingredients except tequila in a pitcher and chill well.
  • Shake tequila with ice; strain into shot glasses. Serve sangrita in small glasses to chase tequila shots.

Sangrita is a spicy-sweet chaser for tequila. Whenever tequila is served in Mexico, it will usually be served in small narrow glasses accompanied by sangrita in a similar glass.

2 ancho chilies, roasted, stems and seeds removed
2 tablespoons finely chopped onions
2 cups orange juice
1 small lime, juice of
salt

Steps:

  • Soak the chiles in hot water to cover for 20 minutes and then drain.
  • In a blender, puree the chiles with the onion, orange juice, lime juice and salt (to taste) until thoroughly blended.
  • If the mixture is too thick, add more lime and orange juice.

_Limas Congeladas Rellenas de Sangrita y Tequila_ Most _sangrita_ recipes include tomato as well as orange juice, hence the name ("little blood"). This spicy, salty juice mixture is a traditional chaser for straight tequila. If you don't have time to prepare the frozen lime cups, just pour the _sangrita_ and tequila into shot glasses. Pair the _sangrita_ with a _reposado_ tequila, which has been briefly aged to impart richer, more complex flavor and a smoother sip. (See "Wine & Spirits" for some great top-shelf tequilas.)

12 limes, ends trimmed, cut crosswise in half
2 1/4 cups fresh orange juice
5 tablespoons grenadine syrup
1 teaspoon (generous) salt
1 teaspoon cayenne pepper
Premium tequila

Steps:

  • Squeeze lime halves in citrus juicer to extract as much juice as possible. Transfer 3/4 cup lime juice to bowl; cover and chill. Reserve remaining juice for another use. Using scissors, cut out membranes from hollowed lime halves. Enclose lime cups in resealable plastic bag. Freeze until frozen, about 4 hours.
  • Mix orange juice, 3/4 cup lime juice, grenadine, salt, and cayenne in blender. Transfer mixture to pitcher. Cover sangrita and refrigerate until cold, about 2 hours. (Can be made 1 day ahead. Keep sangrita chilled. Keep lime cups frozen.)
  • Arrange frozen lime cups on serving tray. Pour sangrita into 12 lime cups; pour tequila into remaining 12 lime cups and serve immediately.

While in Mexico this past winter I was introduced to Sangrita ("little blood ), a spicy, non-alcoholic Mexican drink served as a chaser (co-sip) with tequila. The traditional method is to alternate sips of tequila with sangrita, but it is sometimes mixed with the tequila and served in a single glass. A tequila-and-sangrita serving is called a 'completo'. There are several recipes on RZ for Sangrita, but this is the way I was taught to make it. This is one of those concoctions that you mix to your taste, so add the spices a little at a time.")
