3 pounds chicken wings, split at the joint, tips removed
Kosher salt and freshly ground pepper
1 teaspoon grated lime zest
1/2 cup fresh lime juice
1/4 cup tequila
1 tablespoon agave syrup (sometimes called agave nectar)
1 teaspoon ground cumin
1 teaspoon adobo sauce
Kosher salt and freshly ground pepper
Chopped fresh cilantro, for garnish (optional)

Steps:

  • Prepare the wings: Preheat the oven to 350 degrees F. Season the wings with salt and pepper and arrange on a baking sheet in a single layer. Cook until just brown and crisp, about 45 minutes.
  • Make the sauce: Combine the lime zest and juice, tequila, agave syrup, cumin, adobo sauce, 1/2 teaspoon salt and 1/2 tablespoon pepper in a bowl. Pour over the warm wings and let marinate at least 30 minutes.
  • Preheat a grill to high. Grill the wings until marked, 10 to 15 minutes, turning as needed. Transfer the marinade to a saucepan and cook until slightly thick, about 8 minutes (you can do this on the grill as well). Drizzle the wings with the sauce and top with cilantro, if desired.

1 lbs of Wingettes
1/4 cup of tequila
2 tbsp agave nectar
1 tbsp ancho chili powder
1 tbsp chili flakes
1 tbsp cumin
2 fresh limes (juiced)
Salt & Pepper (Season to preference)

Steps:

  • In a plastic bag, mix tequila, agave nectar, ancho chili powder, chili flakes, cummin, salt, pepper and lime juice. Add wings to bag and mix thoroughly. Place in refrigerator for 4-6 hours.
  • Using some Cowboy Hardwood Lump Charcoal, light fire and let burn for 15-20 minutes. Add 3-4 pieces of apple wood to the top of the fire every 30 minutes for added flavor.
  • When grills reach medium heat, rake coals to one side of grilling area and place wings on opposite side.
  • Grill wings for 20-25 minutes flipping around the 10-12 minute mark. Wings are ready when internal temperature is at 165F. Serve & enjoy!

1 lb(s) chicken wings, cut into segments, tips removed and discarded
1 Tbsp salt
1 Tbsp freshly cracked black pepper
½ cup lime juice
¼ cup tequila
1 Tbsp agave syrup, sometimes called nectar
1 tsp lime zest
1 tsp ground cumin
1 tsp adobo sauce
½ Tbsp freshly cracked pepper
½ tsp salt

Steps:

  • For the wings at home: Preheat the oven to 350ºF.
  • Season the wings with salt and pepper. Arrange the chicken wings on a baking sheet in a single layer. Put in the preheated oven and cook for 45 minutes.
  • Remove the wings from the oven to a bowl and allow to cool. Cover and refrigerate until ready to finish at the event on the barbecue.
  • For the wings tailgaiting: Preheat a grill to 350ºF, prepared for indirect heat. Add all the wings and cook for 10 to 15 minutes to reheat and get some grill marks, turning after 7 minutes. Remove the wings from the grill to a serving bowl.
  • For the Tequila Lime sauce at home: Combine all of the ingredients in a resealable gallon-size plastic bag and combine well.
  • For the Tequila Lime sauce tailgaiting: Add the sauce and toss to combine
