Smokey Tequila-Lime Marinade image

This awesome marinade for chicken, chicken wings or flank steak has a taste of Mexico with a hint of Texas. It's definitely a must for the grill!

1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon salt
½ teaspoon cayenne pepper
2 tablespoons liquid smoke flavoring
¼ cup lime juice
½ cup tequila
¼ cup vegetable oil
¼ cup chopped fresh cilantro

Steps:

  • Place the garlic powder, onion powder, salt, and cayenne pepper into a mixing bowl. Whisk in the liquid smoke, lime juice, tequila, vegetable oil, and cilantro until evenly blended.
  • To use the marinade, pour into a resealable plastic bag, and add 1 1/2 to 2 pounds of meat. Squeeze out the excess air, seal, and marinate in the refrigerator 4 to 6 hours before cooking as desired. Grilling over charcoal is best, but a gas grill will do fine as well.

1 tablespoon chili powder
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon coriander
1/4 teaspoon salt
1/8 teaspoon cayenne (more or less, depending on the amount of heat you like)
1/8 teaspoon sugar
Zest of 1 lime

Steps:

  • Combine all ingredients. This is enough for 1-1.5 lb meat, basically a 1 time use amount. Feel free to make a larger batch and keep it in the fridge. Because of the zest, it will not keep for more than about 10 days in the fridge.

Some might say that salmon and tequila don't mix, but we beg to differ. This tequila lime grilled salmon recipe is the perfect blend of sweet, smoky, and spicy.

1/2 cup chopped fresh cilantro
1/2 cup tequila
1/4 cup fresh lime juice
1/4 cup triple sec
1/4 cup extra virgin olive oil
2 teaspoons minced garlic
2 teaspoons freshly ground black pepper
1 teaspoon salt
4 (6 ounce size) salmon steaks or fillets

Steps:

  • Combine the cilantro, tequila, lime juice, triple sec, olive oil, garlic, pepper, and salt in a zip-top plastic bag or shallow dish. Add the salmon to the tequila marinade and turn to coat it in the liquid. Seal the bag or cover the dish and refrigerate for 1 hour, turning the salmon after 30 minutes. Preheat and grease the grill. Remove the salmon from the marinade. Place on the hot grill and cook for 8 minutes per inch of thickness (measure at the thickest part). Turn the fish once during the cooking time. Remove from the grill and serve immediately.

1 pound of chicken wings, cut into segments, tips removed and discarded
1 tablespoon salt
1 tablespoon freshly cracked black pepper
1/2 cup lime juice
1/4 cup tequila
1 tablespoon agave syrup, sometimes called nectar
1 teaspoon lime zest
1 teaspoon ground cumin
1 teaspoon adobo sauce
1/2 tablespoon freshly cracked pepper
1/2 teaspoon salt

Steps:

  • For the wings at home:
  • Preheat the oven to 350 degrees F.
  • Season the wings with salt and pepper. Arrange the chicken wings on a baking sheet in a single layer. Put in the preheated oven and cook for 45 minutes.
  • Remove the wings from the oven to a bowl and allow to cool. Cover and refrigerate until ready to finish at the event on the barbecue.
  • For the Tequila Lime sauce at home:
  • Combine all of the ingredients in a resealable gallon-size plastic bag and combine well.
  • For the wings tailgaiting:
  • Preheat a grill to 350 degrees F, prepared for indirect heat. Add all the wings and cook for 10 to 15 minutes to reheat and get some grill marks, turning after 7 minutes. Remove the wings from the grill to a serving bowl. Add the sauce and toss to combine

This marinade has a little kick to it. It's best if used to marinate overnight. I slow cook chicken in a crock pot in marinate for 8 hours and then add to red chili. I won a chili cook off using this recipe.

1/2 cup tequila
1/4 cup fresh lime juice
1 lime, zest of
1 fresh ripe jalapeno chile, minced (the red one)
2 stalks green onions, minced
1/4 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1 teaspoon sugar
1/2 teaspoon salt
1/3 cup corn oil

Steps:

  • Mix all the ingredients together.
  • Let the mixture sit, preferably overnight, but at least for 2 to 3 hours.
  • Shake the mixture well, then reserve 1/2 cup to use as a baste.
  • Marinate white meats such as chicken or pork for up to 2 hours. Fish and shellfish should marinate for 45 minutes. Shake the food often while it marinates.
  • When grilling marinated food, use reserved marinade as a baste during the second half of cooking.
  • Discard used marinade when you start cooking.

1 Jalapeno Pepper, minced finely
1 Lime (zest and juice)
1 tsp Cumin
1 tsp Kosher Salt
2 Tbsp White Tequila (I like Hornitos)

Steps:

  • Combine oil, garlic, honey, jalapeno, lime zest and juice, cumin, salt and tequila.
  • Pour marinade over meat, refrigerate and allow to marinate for at least 30 minutes. (Can be left in marinade for up to 3 hours.) Turn meat several times to coat completely while marinating.
  • Grill, saute or bake chops until cooked through, 145 degrees F with an instant read thermometer.
