BANANA MARGARITAS
An unusual twist to a classic drink! Watch out, these will sneak up on you!

Steps:
- Sugar the rims of 4 large margarita glasses. To do so, pour sugar onto a small plate, moisten the rims of the glasses on a damp towel and press them into the sugar.
- In a blender, combine tequila, limeade, triple sec and ice. Blend until smooth. Add bananas and blend again until smooth. Pour into glasses and serve.

SLOW BURN

Steps:
- Combine the tequila, lemongrass-kumquat syrup, Floc de Gascone liqueur, lychee puree and habanero bitters in a cocktail shaker, then add ice and shake. Strain into the glass and garnish with the fresh kumquat.
- Combine the sugar, lemongrass and kumquats in a small saucepan over medium heat with 1 cup of water. Bring to a boil, then remove from the heat and let cool. Pour everything into a blender and blend on high for about a minute, then pass through a fine sieve and bottle.
GRILLED MANGOES WITH HERBS

- Preheat a grill.
- Grill mango slices over medium-high heat until just warmed through and slices begin to show grill marks, about 3 minutes per side. Turn mangoes once during cooking and cover with fresh verbena to let the heat of the grill warm the herbs.
- Toss the mango slices and herbs together gently. Serve immediately.
THE KALE
Many cocktails at Malibu Farm were inspired by veggies. As the name suggests, kale is the base of this margarita.

Steps:
- Dip the top 2 inches of a mason jar in water and roll in black salt to coat.
- Combine the tequila, green juice, lime juice and agave in a shaker with ice; shake well. Strain into the prepared jar; add ice. Garnish with a kale leaf.
MANGOES FOSTER WITH CREME FRAICHE
Steps:
- Heat the grill to high.
- Place a medium saucepan on the grates of the grill, add the butter, and brown sugar, and cook, stirring occasionally, until the sugar has melted and the mixture thickens slightly, about 5 minutes.
- While the sauce is cooking, remove the mangoes from the peel and cut into diamond shapes. Place the diamonds onto serving plates.
- Remove the pan with the sauce from the heat and add the bourbon. Using a long lit match, ignite the bourbon and allow the flames to subside. Stir in the cinnamon, salt and pecans. Top mangoes with the sauce and with a large dollop of creme fraiche, if using.
TEQUILA BANDITO MANGOES AND BANANAS FOSTER
Steps:
- Scoop the ice cream into chilled bowls and set aside in the refrigerator. In a large saute pan, over medium-high heat, stir the butter and sugar to form a smooth syrup. Add the mango and baste for 1 minute. Add the bananas and baste for another minute. Carefully pour in the tequila and let warm for a few seconds. If it does not burst into flames spontaneously, ignite with a match. Gently swirl the pan and baste the bananas until the flames die out. Add the cream and cook for 1 more minute. Add the lime juice and give everything a final swirl together. Place the fruit around each ice cream scoop and spoon sauce over the top. Serve at once.
PALOMARFA
Steps:
- For the lavender simple syrup: Add the sugar, 1 cup water and the lavender to a saucepan and bring to a simmer over medium heat. Simmer until the sugar is dissolved; remove from the heat. Let the mixture sit overnight and infuse, and then strain into a jar. Store in the refrigerator for up to 1 week and try not to drink it alone.
- For the cocktail: In a tall glass filled with ice, add the tequila, grapefruit juice, lime juice, 1/2 ounce lavender simple syrup and salt and stir. Top with the light beer, stir lightly and garnish with a sprig of lavender.
