TENNESSEE TOFFEE
A really nice toffee that can melt in your mouth or you may also chew it. A great recipe for those might have dentures or partials.

Steps:
- Sprinkle half the pecans on a cookie sheet.
- In a 4-quart saucepan, melt butter, sugar, corn syrup and left over coffee. Stirring constantly, bringing mixture to 290 degrees.
- Remove from heat and add flavor.
- Pour over chopped pecans.
- Sprinkle chocolate chips over toffee mixture & wait for chips to melt.
- Spread melted chips over toffee.
- Sprinkle remaining chopped pecans over chocolate and press lightly to set pecans.
- Freeze for 30 minutes.
- Remove from freezer and rest for 10 minutes and break or cut into serving size.
- Recipe makes about 3 # of Tennessee Toffee.

Steps:
- Melt butter in skillet over medium heat.
- Stir in sugar until mixture is smooth, and keep stirring and cooking for about 10 minutes.
- Add the unblanched almonds to the sugar/butter mixture, and continue stirring and cooking for 10 more minutes.
- Pour candy mixture into an ungreased 13 x 9 inch pan.
- Melt chocolate in top of double broiler (Or you can melt using a microwave).
- Spread the melted chocolate evenly over toffee.
- Before the chocolate hardens, sprinkle with chopped almonds.
- Break into pieces when hardened.

- In a large bowl, whisk cream and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Stir in 1 cup chopped candy. Fold in 2 cups whipped topping. Transfer to crust., Spread remaining whipped topping over top and sprinkle with remaining candy. Cover and freeze for at least 4 hours or until firm.

Steps:
- 1. Preheat oven to 350.
- 2. Beat butter using a mixer at medium speed; gradually add sugars and beat until creamy. Add eggs, one at a time, beating well after each addition and scraping down the sides of the bowl.
- 3. Combine flour, baking powder, salt, cinnamon, and baking soda. Add to egg mixture alternately with milk, beginning and ending with dry ingredients. Stop mixer and add molasses. Restart mixer and slowly add whiskey. Mix until smooth, about 30 seconds. Batter will be thin.
- 4. Pour into greased 9-inch springform pan. Bake 35-40 minutes, until wooden pick inserted in the center comes out clean. Serve warm. Serves 8.
