TENDER SOUR CREAM SWEET DOUGH
This dough is extremely versatile. You can use it the same day or refrigerate for up to 3 days.It is rich, sweet, tender and easy to work with. I get compliments on it no matter what I use it for - cinnamon buns, filled braids, yeasted coffee cakes, whatever you can imagine. I sometimes use maple extract or orange extract instead of vanilla to match the filling.

Steps:
- Dissolve 1 tbsp sugar in the warm water in a small bowl. Sprinkle the yeast over the water. Do not stir. Cover and let stand for 5 minutes. Stir briefly with a fork, cover and let stand for 2 to 3 minutes or until bubbly.
- In the bowl of an electric mixer fitted with the paddle attachment, mix the 3 cups of flour, remaining 3 tablespoons of sugar, and the salt. Add the slightly firm butter and continue to mix until meal-size crumbs form, about 2 to 4 minutes depending upon the temperature of the butter.
- Mix together the eggs, sour cream, and vanilla in a separate bowl. Add the sour cream mixture to the flour along with the dissolved yeast, and mix on low until a rough dough is formed. Dough will be soft and sticky. You may need to add a little flour to make it handle-able but add as little as possible or else the dough will become tough.
- Lightly butter a medium bowl. Turn the dough into the prepared bowl, smoothing the top with lightly floured hands. Brush the top lightly with a small amount of softened butter. Cover and let rise for 45-60 minutes at room temperature. ***For later use: cover with plastic wrap and refrigerate for up to 3 days. When ready to use, let it come to room temperature and finish rising.

- Soften yeast in sour cream.
- Add eggs, shortening, salt and vanilla.
- Stir in flour.
- Knead and chill two hours.
- Mix together cinnamon and sugar.
- Roll dough into a rectangle.
- Sprinkle with 1/3 of sugar mixture.
- and fold into thirds.
- Roll dough into rectangle, spinkle with remaining sugar mixture and fold again.
- Cut folded dough into 1/4 inch slices.
- Roll in granulated sugar, twist and press ends down on baking sheet.
- Let rise 1/2 hour and bake at 375 for 12 to 15 minutes.

- In a bowl, combine 2 cups flour, sugar, yeast and salt. In a saucepan, heat milk, butter and water to 120°-130°. Add to dry ingredients; beat just until moistened. Add egg and remaining flour; beat until smooth. Shape into a ball. Do not knead. Cover and let rest for 10 minutes. Use for Braided Coffee Cake or Coffee Cake Ring.

CAN DO QUICK SWEET DOUGH
My Grandma raised 6 kids, and has oodles of Grandchildren and Great-Grandchildren. She loved to bake -- most of her recipes were from memory. Before she passed away, I was able to watch her make this dough and wrote the measurements down. It is a favorite of all the family, so I wanted to share it with everyone. Good for cinnamon rolls, or dinner rolls

Steps:
- Dissolve yeast in the warm water in a large mixing bowl. Add buttermilk, eggs, 2 1/2 cups flour, butter, sugar, baking powder and salt.
- Blend 30 seconds on low speed, scraping sides and bottom of the bowl.
- Beat 2 minutes on medium speed. Stir in remaining 3 cups of flour. Dough should be soft and slightly sticky.
- Knead for about 5 minutes on a lightly floured board. Shape as desired. Let rise in a warm place until double. (about 1 hour -- depending on temperature) Dough is ready to bake if slight dent remains when touched. Bake at 375 degrees. I don't have a bake time, but 20 minutes is about standard. It is best to keep a close eye.

Knead in more flour only if needed. Generously butter a large bowl. Shape the dough into a taut ball. Place it in the bowl, turn to coat it with butter, and then turn it smooth side up. Cover tightly with plastic wrap. Let stand in a warm place until the dough doubles in volume, about 45 minutes.
- Working carefully to preserve the dough’s light and puffy texture, turn the dough out onto a lightly floured work surface. (Do not knead the dough.)
