GREEK TURKEY BURGERS



Greek Turkey Burgers image

These Greek Turkey Burgers, mixed with Kalamata olives, feta, and spinach,combine all my favorite Greek flavors and can be served with or without the bun.

Number Of Ingredients 9

1 ½ pounds 93% lean ground turkey
1 tablespoon minced garlic
1 teaspoon ground cumin
2 teaspoons dried oregano
1/3 cup Kalamata olives (finely chopped)
3 ounces crumbled feta cheese
1 cup finely chopped and packed fresh spinach
Pinch each of sea salt and black pepper
Olive oil spray

Steps:

  • Preheat the oven to 420°F.
  • Add all the ingredients to a large bowl and mix together thoroughly.
  • Scoop out a large fistful of meat, roll it into a ball, then flatten it to form a patty around 1 ½ inches thick. Repeat with the remaining meat to make 5 large patties of equal size.
  • Once the patties are formed, use your thumb to make a shallow indentation in the middle of each patty to prevent them from forming a dome as they cook.
  • Set a large oven-safe nonstick skillet over medium-high heat and spray lightly with olive oil. When the skillet is hot, add the patties.
  • Cook on one side for 3 to 4 minutes, until the edges are brown and seared, then flip the patties over.
  • Cook for an additional minute, then place the entire skillet in the oven to cook until the internal temperature is 165°F, 9 to 11 minutes.
  • You can also bake them on a baking sheet lined with parchment paper or aluminum foil for 8 to 10 minutes.
  • Enjoy these as a burger with a toasted whole wheat bun, butter lettuce, cucumber slices, thin red onion slices (optional), sliced tomato, and a little Greek yogurt instead of mayo. Or pair a patty with salad, rice, quinoa, or even roasted vegetables!

4 hamburger buns or kaiser rolls
1 TBSP olive oil
1 lb lean ground turkey (dark meat preferred, OR between 80-90% lean.)
1 tsp kosher salt
1/4 tsp cracked black pepper
1 tsp onion powder
2 garlic cloves, minced
1/2 cup red onion, finely chopped
1/4 cup drained kalamata olives, roughly chopped
1/4 cup crumbled feta cheese
1 TBSP drained capers, finely chopped
2 TBSP freshly chopped parsley
1 TBSP Worcestershire sauce
1 egg
1/4 cup panko bread crumbs
1/2 tsp dried thyme or Italian herb mix
Tomato slices
Leafy greens
Cucumbers
Roasted red peppers
Red onion
4 Hamburger buns or kaiser rolls
Tzatziki
Olive tapenade
Pesto + mayo

Steps:

  • Line a paper plate or baking sheet with parchment paper; set aside.
  • Place the ground turkey in a large bowl. Add all of the ingredients from the kosher salt through to the dried herbs. With clean hands, get in there and mix the ingredients until well combined.
  • Shape four even patties with your hands. Ensure they're solid and well-formed, then set onto the parchment-covered surface. Wash your hands and place the patties in the fridge for at least 30 minutes, if not a few hours. This will help the patties become more sturdy and stay together when cooking.

½ cup light Greek dressing

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Combine turkey, bread crumbs, spinach, Greek dressing, feta cheese, onion, egg, salt, and black pepper together in a bowl; form into patties.
  • Cook turkey burgers on preheated grill until no longer pink in the center and the juices run clear, 5 to 10 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 cup frozen chopped spinach, thawed
1 pound 93% lean ground turkey
½ cup crumbled feta cheese
½ teaspoon garlic powder
½ teaspoon dried oregano

4 small hamburger buns, preferably whole-wheat, split
4 tablespoons tzatziki
12 slices cucumber
8 thick rings red onion (about 1/4-inch)

Steps:

  • Preheat grill to medium-high. Squeeze excess moisture from spinach. Combine the spinach with turkey, feta, garlic powder, oregano, salt and pepper in a medium bowl; mix well. Form into four 4-inch patties. Oil the grill rack (see Tip). Grill the patties until cooked through and no longer pink in the center, 4 to 6 minutes per side. 1 1/2 pounds ground turkey
1 large egg yolk
3/4 teaspoon dried oregano
1/2 teaspoon kosher salt
A few grinds black pepper
1 red onion
4 pitas with pockets
2 tablespoons olive oil
One 16-ounce package store-bought tzatziki
1/2 head Boston lettuce
1/2 medium seedless cucumber, chopped
One 4-ounce package crumbled feta (about 3/4 cup)
Potato chips, for serving

Steps:

  • Preheat the oven to 250 degrees F.
  • Place the turkey, egg yolk, oregano, salt and pepper in a large bowl. Grate half the red onion and add it to the bowl. Mix with your hands, then form into four 1/2-inch-thick patties. Place on a sheet pan or plate lined with parchment paper.
  • Put the pitas on a baking sheet and place in the oven to warm.
  • Heat the olive oil in a large cast-iron or other nonstick skillet over medium-high heat. When the oil is hot, add the patties and cook until they are brown on the outside and no longer pink in the center, approximately 5 minutes on each side.
  • Remove the pitas from the oven and cut the tops off. Slice the remaining 1/2 red onion. Spread some tzatziki inside each pita. Fill each with lettuce, a patty, some chopped cucumber, red onion and feta, then serve with chips on the side.

8 ounces Greek yogurt
1/4 English cucumber, peeled and grated
2 teaspoons chopped dill
2 tablespoons lemon juice
2 tablespoons olive oil
kosher salt
ground black pepper

Steps:

  • To make the Tzatziki:.
  • In a medium bowl, stir to combine all ingredients. Add 1-2 tablespoons water to thin sauce if needed.
  • For the burgers:.
  • Equipment: Nonstick skillet and mixing bowls.
  • In a large bowl, mix to combine ground turkey, olives, parsley, dried oregano, garlic, 1/2 cup crumbled feta cheese, salt and pepper. Divide into 4 portions and shape into burger patties.
  • Warm olive oil in a large nonstick skillet over medium heat, then fry turkey patties until cooked through, about 4 minutes per side.
  • To assemble turkey burgers, layer lettuce, tomato slices, onion slices onto open pita and top with burger. Garnish with remaining crumbled feta cheese and a dollop of tzatziki.
