TEMPURA-STYLE CRISPY GREEN BEANS



Tempura-style crispy green beans image

If serving to people with low tolerance for heat, use less cayenne or omit it altogether. You might also want to go easy on the Sriracha in the dipping sauce.

100 grams green beans (trimmed)
1 small egg
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon cayenne
⅓ cup corn starch (or potato starch)
cooking oil (for frying)
1 tablespoon Japanese mayo
1 tablespoon Sriracha
¼ teaspoon lemon juice

Steps:

  • Place the green beans in a bowl, add the egg, salt, pepper and cayenne. Mix well.
  • Dump in the starch and mix.
  • Heat enough cooking oil in a wok or frying pan to reach a depth of at least two inches.
  • Drop the battered green beans one by one in the hot oil. Cook in batches until golden and crisp, about two to three minutes.
  • Drain the green beans tempura on a rack or a stack of paper towels.
  • Mix the ingredients for the sauce.
  • Serve the tempura-style crispy green beans with the dipping sauce on the side.

Steps:

  • Heat 1 1/2 inches peanut oil to 365 degrees F in a pot over medium-high heat. Whisk 1/2 cup each flour and cornstarch, 3/4 cup seltzer and 1/4 teaspoon kosher salt; toss with 1 pound green beans. Remove the beans from the batter and fry in batches, stirring, until golden, 2 minutes. Drain on paper towels. Serve with 1/4 cup soy sauce whisked with 2 tablespoons water, the juice of 1 lime and 1 minced scallion.

GREEN BEAN AND ASPARAGUS TEMPURA

Vegetable oil, for frying
1 1/4 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 cup club soda
1 tablespoon sesame or peanut oil
12 medium asparagus stalks, trimmed
12 green beans, trimmed
1/2 cup soy sauce

Steps:

  • In a large heavy-bottomed saucepan, pour in enough vegetable oil to fill the pan about 1/3 of the way. Heat over medium heat until a deep-frying thermometer, inserted in the oil, reaches 375 degrees F. (If you dont have a thermometer a cube of bread will brown in about 2 minutes.)
  • While the oil is heating, in a medium bowl, whisk together the flour, baking powder and baking soda. Add the club soda and sesame oil. Stir until just combined and still lumpy.
  • Dip the vegetables in the batter and fry, 3 or 4 at a time, until the batter is golden and crispy, about 60 to 70 seconds. Drain on paper towels.
  • Arrange the vegetables on a platter and serve the soy sauce alongside as a dipping sauce.

TEMPURA FRIED STRING BEANS

1 cup all-purpose flour
1 cup cornstarch
1 tablespoon baking powder
1 tablespoon sugar
Pinch salt
1 cup soda water
1 pound string beans, washed, dried and trimmed
1/2 cup cranberry sauce

Steps:

  • Preheat oil in deep-fryer to 375 degrees F.
  • In a large bowl add the flour, cornstarch, baking powder, sugar and salt and mix to combine. Whisk in the soda water and mix until a batter is formed. Dip the beans in the batter being sure to shake off the excess. Fry the beans in batches for 2 to 3 minutes until crispy and golden. Remove to a paper towel lined sheet tray to drain. Arrange the beans on a platter and serve with warm cranberry sauce.
  • Cook's Note: When frying the beans, make sure the fryer basket is submerged into the oil. Drop string beans into the basket in the oil to ensure the beans do not stick to the basket when cooking.

TEMPURA GREEN BEANS, YELLOW BEANS AND TOFU

A lime and soy dipping sauce accompanies this appetizer from A Pacific Cafe in Kapaa, on the Hawaiian Island of Kauai.

Number Of Ingredients 15

1 1/2 cups all purpose flour
1/2 cup cornstarch
2 teaspoons ground ginger
1 teaspoon salt
1/4 teaspoon ground black pepper
1 3/4 cups ice water
6 tablespoons low-sodium soy sauce
1/4 cup fresh lime juice
1 1/2 teaspoons wasabi paste*
1/2 teaspoon dried crushed red pepper
1 14-ounce package firm tofu
Vegetable oil (for frying)
24 yellow wax beans, trimmed
24 thin green beans, trimmed
*Wasabi (horseradish) paste is sold at Japanese markets and some supermarkets.

Steps:

  • Combine first 5 ingredients in blender. Add 1 3/4 cups water and blend until smooth. Transfer batter to shallow dish.
  • Whisk soy sauce, lime juice, wasabi and red pepper in small bowl to blend.
  • Cut tofu horizontally into 1/2-inch-wide slices. Cut each slice into 1/2-inch-wide logs. Arrange tofu in single layer on several layers of paper towels. Cover with paper towels. Let stand 1 hour.
  • Pour enough oil into heavy large Dutch oven to reach depth of 3 inches. Heat oil to 375°F. Working in batches, dip beans into batter, shake off excess and add to oil. Fry until golden, stirring often, about 3 minutes per batch. Using slotted spoon, transfer to paper towels; drain. Repeat with tofu and batter.
  • Serve beans and tofu with sauce.

SESAME TEMPURA GREEN BEANS WITH SOY DIPPING SAUCE

About 4 cups vegetable oil
2 tablespoons soy sauce
2 teaspoons fresh lime juice
1 teaspoon superfine granulated sugar
1 cup all-purpose flour
1/4 cup sesame seeds
1 cup beer (not dark)
3/4 pound green beans, trimmed

Steps:

  • Heat 2 inches oil in a 4-quart heavy pot over moderate heat until a deep-fat thermometer registers 365°F.
  • While oil is heating, make dipping sauce by stirring together soy sauce, lime juice, and sugar until sugar is dissolved. 3Whisk together flour and sesame seeds and whisk in beer until batter is smooth.
  • Toss about 10 beans in batter until coated. Add to oil 1 at a time (to keep separate) and fry, turning, until golden, about 1 1/2 minutes. Transfer with tongs to paper towels to drain and sprinkle with salt to taste. Coat and fry remaining beans in same manner.
  • Serve beans with dipping sauce.
