The Best Breakfast Casserole is a thick and creamy egg base with shredded potatoes, chunks of ham and flavorful cheese blends that bakes up in no time. Make ahead or enjoy the morning of during the holidays!

24 ounces frozen shredded potatoes
salt and pepper
12 eggs
2 cup half and half
1 teaspoon season salt
1 1/2 cup cheddar cheese (grated)
1 1/2 cup pepper jack cheese (grated)
2 cup chopped ham (Or your preferred meat, sausage would also be great)

Steps:

  • Grease a 9x13 inch pan. Add the frozen and shredded potatoes to the bottom of the pan. Sprinkle with salt and pepper.
  • In a large bowl, whisk the eggs together. Then add half and half, season salt, cheddar cheese, pepper jack, and chopped ham.
  • Pour over the top of the frozen potatoes. Cover with foil and refrigerate for 2 hours or overnight.
  • Bake uncovered at 350 degrees for 90 minutes. Let rest for 10 minutes before serving.

This recipe is from Southern Living Magazine but tweaked a bit by me. It's great for an early-morning breakfast or brunch for a crowd, because you can do most of the work ahead of time and just throw it in the oven the morning you want to serve it.

1 lb pork sausage or 2 cups cubed cooked ham
6 cups cubed bread (French bread or a chewy, rustic white bread is good)
1/4 lb medium cheddar, shredded
1/4 lb swiss cheese, shredded
6 eggs
2 cups milk
1 teaspoon salt
1/8 teaspoon pepper
3/4 teaspoon dry mustard
1/4 teaspoon Worcestershire sauce

Steps:

  • Cook sausage in a skillet over medium heat, stirring until it crumbles and is no longer pink; drain well.
  • Place bread cubes in a lightly greased 9" X 13" baking pan.
  • Sprinkle bread evenly with cheese, and top with sausage (or ham).
  • Whisk together eggs, milk, salt, pepper, dry mustard and Worcestershire sauce and pour evenly over sausage mixture.
  • Cover and chill casserole for 8 hours (may be frozen at this point, and thawed before cooking).
  • Let stand at room temperature 30 minutes.
  • Bake at 350 degrees for 45-50 minutes, or until set.
  • Let stand 5 minutes before serving.

1 teaspoon salt
1 teaspoon ground black pepper
1 (16 ounce) package bulk pork breakfast sausage (such as Jimmy Dean®)
4 eggs, beaten
½ cup heavy whipping cream
1 cup shredded Gouda cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a casserole dish.
  • Rinse shredded potatoes in a colander with cold water; drain and squeeze potatoes to remove liquid.
  • Melt butter in a large skillet over medium heat; add potato. Season potato with salt and pepper; stir. Place a cover on the skillet and cook until potato is tender, about 3 minutes.
  • Heat a separate skillet over medium-high heat. Cook sausage in the skillet, breaking with a spatula into crumbles, until completely browned, 5 to 7 minutes. Stir potatoes into the sausage and remove skillet from heat. Spread the sausage and potato mixture into the prepared casserole dish.
  • Beat eggs and cream together in a bowl; add Gouda cheese and stir. Pour the egg mixture atop the sausage and potato mixture.
  • Bake in preheated oven until the egg is set, about 25 minutes.
