Categories     Dessert

Number Of Ingredients 10

12 Cupcakes
4 oz. Chocolate Fondant (or, white fondant colored with brown gel food coloring)
Cornstarch for your fingers
8 tbsp Butter (1 stick) (softened)
2 cups Confectioner Sugar
2 tbsp Milk
1 tbsp Cocoa

12 Pink Candies
Black or pink decorating frosting (optional)

Steps:

  • Make sure you cupcakes are completely cool before starting the decorating process! Lay some wax paper on your working surface to keep everything organized.

  • Flatten each circle and shape them to resemble teddy bear ears. Lay the teddy bear ears on your wax paper as you make them.
  • Using an electric mixer, beat together butter, confectioner sugar, milk and cocoa starting on a low speed. Gradually increase to high speed until the ingredients mix and become smooth.
  • Using a frosting bag and Wilton tip #233, frost each cupcake. Cover the cupcake top entirely.
  • Place googly eyes, one pink candy and two ears on each cupcake. You can also add a smile with black or pink frosting, but they look cute without too!

TEDDY BEAR CUPCAKES

Teddy Bear Cupcakes image

These adorable teddy bear cupcakes are so much fun to make and eat! Made with a vanilla cupcake and rich, chocolate frosting, these cuties are a tasty treat.

Categories     Cupcake Recipes and Ideas

Time 38m

Number Of Ingredients 15

22 Reese's Peanut Butter Cups (regular-sized)
1 package candy eyes (44 eyes needed)
2 8 oz bags of chocolate wafers, will be divided
1 bag pink candy melts (22 melts needed)
22 brown M&Ms
1 circle cookie or fondant cutter
candy hearts (22 hearts needed)
decorating bag or a zip-top bag for piping chocolate
Vanilla Cupcakes (22 or double this recipe)
1 cup unsalted sweet cream butter, softened at room temperature
3 1/2 cups powdered confectioner's sugar
1/2 cup cocoa powder
2 teaspoons vanilla extract
3-5 tablespoons heavy whipping cream
disposable piping bag fitted with star tip

Steps:

  • First, make the teddy bear cupcake decorations. Place 44 chocolate wafers on a cutting board and set aside. Measure out 1 cup of wafers from the remaining.
  • Melt 1 cup of wafers in 30-second increments until smooth. Transfer to a piping bag.
  • Start with an unwrapped Reese's peanut butter cup and add a small bit of melted chocolate onto the lower center of the peanut butter cup. Place a pink wafer onto the chocolate, forming the muzzle of the bear.
  • Place two drops of melted chocolate above the pink wafer for the eyes. Add the candy eyes.
  • Pipe a small bit of chocolate onto the "M" side of an M&M and place it onto the center of the pink wafer.
  • Use the small cookie cutter to cut out a half-shaped moon from the bottom of all of the chocolate wafers. Pipe a line of melted chocolate onto the bottom curve of each wafer and place them onto the peanut butter cup for ears (just left and right of center).
  • Repeat for all teddy bear cupcakes needed. Allow each to dry for 10-minutes before placing onto the cupcakes or make the day before.
  • Next, make the vanilla cupcakes. You can use a store-bought mix, your own recipe, or our Lazy's Girl's Easy Vanilla Cupcake Recipe linked above (double the recipe). Let cool completely.
  • Now it's time to make the chocolate frosting. Using a stand mixer if you have it, beat together the butter, powdered sugar, cocoa, vanilla extract, and heavy whipping cream until stiff peaks form. Cupcake frosting should be stiff, so only add 3 tablespoons of cream to start. Transfer to the piping bag with star tip.
  • Finally, let's assemble our teddy bear cupcakes. Once the cupcakes are cool, frost them by building a large swirl with the star tip. Place a small mound of frosting in the center of the cupcake. Start piping at the edge of the cake, following the shape and lifting slightly as you go. Place one teddy bear decoration into the frosting and push down lightly. Add a heart to the frosting below the teddy bear.

VALENTINE TEDDY BEAR CUPCAKES

Valentine Teddy Bear Cupcakes image

So cute and so much chocolate! These Valentine Teddy Bear Cupcakes are a sweet treat that will delight your little sweethearts!

Provided by Stacey Rodriguez

Categories     Holiday Fun

Time 55m

Number Of Ingredients 22

2 cups sugar
1 3/4 cups flour
3/4 cup cocoa
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 eggs, room temp
1 cup whole milk, room temp
1/2 cup vegetable oil
2 teaspoon vanilla
1 cup boiling water
1 cup unsalted sweet cream butter, softened
3 cups + 1/2 cup powder sugar
1/2 cup cocoa
2 teaspoon vanilla
3-5 Tablespoons heavy whipping cream
Reese's peanut butter cups, unwrapped
Whoppers
Peanut butter or milk chocolate wafers, used for the ears and mouth
1/2 bag of white candy melts
1/2 bag of chocolate candy melts
Candy hearts

Steps:

  • Preheat oven to 350 degrees F.
  • Prepare muffin tins with cupcake liners.
  • Whisk the sugar, flour, cocoa, baking powder, baking soda and salt in a large mixing bowl.
  • In a separate bowl, combine the eggs, milk, oil and vanilla extract.
  • Using an electric mixer, add bowl of wet ingredients to the bowl of dry ingredients, beating on medium until the batter is smooth.
  • Gradually add the boiling water, milk and oil and blend together until the batter is smooth.
  • Using a medium scoop fill the paper lined cupcake tins with the prepared batter.
  • Bake for 20-25 minutes, or until an inserted toothpick comes out clean.
  • Allow to cool slightly before transferring to wire racks.
  • Beat together powdered sugar, butter and cocoa powder in a mixing bowl.
  • Add the vanilla and chocolate until well incorporated.
  • Add in the heavy whipping cream, and continue to mix until stiff peaks form.
  • Scoop the frosting into a decorating bag with a star tip.
  • Generously cover each cupcake with chocolate frosting. You'll want enough to place your Reese's cup bears into so that they are secure.
  • Pour each color of candy melts into their own plastic decorating bag and cut the tip so there is a small opening.
  • Take one peanut butter or chocolate wafer for each bear, then cut them in half. Use the black candy melt as glue, to affix the chocolate wafer halves to the top of your Reese's cups as "ears." Hold wafers in place until the chocolate sets.
  • Draw a large dot of the melted chocolate candy onto the back of a whole peanut butter or chocolate wafer and the place in the middle of the Reese's cup. This will be the nose.
  • Use your melted white chocolate to draw eyes on the bear's face. Allow to dry.
  • Use the melted dark chocolate to draw a pupil on each eye.
  • Carefully turn your Reese's cup bears sideways, and press the bottom into the chocolate frosting on top of your cupcake. Make sure the bear is securely in place before letting go.
  • Add two Whoppers on either side of the Reese's cups to be your bear's arms.
  • Finally, place a candy heart into the frosting between your Whoppers.

Number Of Ingredients 16

1 1/2 cups of all-purpose flour
2/3 cup of natural unsweetened cocoa
1 1/2 cups of sugar
1 tsp of baking powder
1/2 tsp of salt
2 pcs eggs
1/2 cup of vegetable oil
2 tsp of vanilla
1 1/4 tsp of baking soda
3/4 cup of milk
2/3 cup of hot water
2 cups of vegetable shortening
8 cups of powdered sugar
½ tsp of salt
2 tsp of clear vanilla extract
6 ounces of heavy cream

Steps:

  • Preheat your oven to 350 degrees Fahrenheit.
  • After that, grease the bottom of your pans( 6", 5" and cupcake pan) using vegetable shortening. Then, put a parchment paper. And lightly dust each pan with cocoa powder. Afterward, set aside.
  • Then, using a large mixing bowl, sift the dry ingredients together and whisk to combine. Afterward, add the eggs, milk, oil, and vanilla. After that, beat using an electric mixer for 2 minutes until everything combines well. Do not forget to scrape the bowl's sides using a rubber spatula. And then, add the hot water and mix again until all the ingredients incorporate completely.
  • Afterward, pour the chocolate cake batter into the prepared pans and bake it for 28 to 30 minutes. Expect that the cake batter will be very fluid; do not panic.
  • Then, cool the cakes once they cook for about 5 minutes in the pan. Next, transfer them to the wire racks to cool completely.
  • Before anything else, cream the vegetable shortening until it becomes light and fluffy. Then gradually add the powdered sugar and continue creaming until the mixture blends well.
  • Afterward, add the salt, vanilla, and whipping cream. Then, blend at low speed until moistened. After that, add the additional whipping cream if necessary (up to 2 ounces). Make sure to beat the mixture at high speed until frosting is fluffy.
  • First and foremost, prepare your cooled cakes. With that, one 6-inch layer, one 5-inch cake layer, and six cupcakes.
  • After that, take your buttercream frosting and make another batch. Then, add 1/3 of a cup of unsweetened cocoa to the powdered sugar to make a chocolate frosting.
  • Afterward, color a small amount from the batch of buttercream with pink icing color for the teddy bear's cheeks. Also, include another small amount with blue for the bowtie. And then save a little of the buttercream for the teddy bear's eyes.
  • Then, use the remaining buttercream and add a small amount of chocolate buttercream. Do this to make a light brown color to make the frosting for the belly, nose, paws, and ears.
  • To create the bear shape, use a sharp knife to remove a small curved portion from the 6-inch cake layer. With that, save the curved cake scraps for later.
  • Afterward, attach the 5" and 6" cake layers to form the head and body. Then, place them on a large rectangular cake board. Because of that, you can use a baking sheet if the cake board is unavailable.
  • After that, frost an area for the cheeks using pink buttercream. Also, ensure to frost the bear's belly area with light brown buttercream. Keep in mind to even out the frosting with an offset spatula. Then, cover a large area so you can make the belly and cheeks. With this, you can choose any size you want when piping the furry frosting later.
  • Then, using a round cutter, cut the curved sections from two cupcakes. Use them as ears for the teddy bear's head. Afterward, save the scraps for later.
  • Using the same round cutter, gently press and mark where you want the cheeks to be.
  • Spread a thin layer of chocolate frosting using an offset spatula on the naked parts of the cake. Also, frost two cupcakes.
  • Afterward, use the lighter brown frosting for the cupcake ears. Next, frost the remaining cupcakes for the legs. After that, add more frosting to create a flat and smooth top.
  • To make the bear's snout, pipe a circular mound of light brown frosting into a wax paper sheet. And use an offset spatula. Do this to smoothen it out. Then, put the frosting mound in the freezer to make it firm. Because of this, you can smoothen it out more using the offset spatula once it firms up.
  • Then, position the firm frosting mound in the bear's head. And gently tuck two pieces of chocolate buttons underneath to create the eyes.
  • Afterward, place the dark chocolate frosting in a piping bag with an open star tip. Make sure to do this to create the teddy bear's fur. Ensure to use the round cutter's impression as a guideline for creating perfectly shaped cheeks.
  • After that, pipe some frosting near the bear's neck and place two frosted chocolate cupcakes to create the arms. Then, gradually add a small amount of frosting to the bottom of each cake. Do this so that the cakes will not move around and keep the bear's shape.
  • Then, carve away some of the cake if you want the legs to face upward. Next, attach the frosted cupcakes to the cake to create the legs. Then, you can use a straw through the cupcakes into the cake to secure it even more.
  • Afterward, pipe frosting around the bear's body. However, make sure not to include the light brown patches for the ears, belly, and bottom paws.
  • For each paw, place a big chocolate button and three small chocolate buttons facing side down into the frosting.
  • Then, cut one large chocolate button almost in half. After that, position it as a nose, and put a tiny amount of frosting.
  • Afterward, pipe tiny dots on the chocolate button eyes of the reserved buttercream.
  • Color the remaining chocolate frosting with a darker brown and draw or pipe a smile on the bear's face.
  • Using the cake scraps, create a bowtie and paste it using some frosting. Finally, cover the bowtie with blue buttercream.
