1 medium red apple
Lemon juice
6 cups torn fresh spinach
6 cups torn red leaf lettuce
1 small red onion, sliced and separated into rings
1 can (11 ounces) mandarin oranges, drained
1/3 cup sunflower kernels, toasted
6 bacon strips, cooked and crumbled
DRESSING:
1/2 cup vegetable oil
1/4 to 1/3 cup sugar
2 tablespoons plus 1-1/2 teaspoons cider vinegar
2 tablespoons plus 1-1/2 teaspoons honey
1/2 teaspoon celery salt
1/2 teaspoon onion salt
1/2 teaspoon paprika
1/2 teaspoon ground mustard
1/2 teaspoon lemon juice

Steps:

  • Thinly slice apple; brush with lemon juice. In a large salad bowl, toss the spinach, lettuce, onion, oranges and apple slices. Sprinkle with sunflower kernels and bacon., In a microwave-safe bowl, whisk the dressing ingredients. Microwave, uncovered, on high for 45 seconds. Stir and drizzle over salad.

1 (10 ounce) bag baby spinach leaves
4 hard-cooked eggs, peeled and sliced
1 cup sliced mushrooms
4 strips crisply cooked bacon, crumbled
10 ounces Swiss cheese, shredded
½ cup toasted sliced almonds
1 tablespoon olive oil
1 large shallot, minced
1 teaspoon garlic, minced
⅓ cup white wine vinegar
⅓ cup Dijon mustard
⅓ cup honey
2 strips crisply cooked bacon, crumbled
salt and pepper to taste

Steps:

  • Place spinach into a large serving bowl, top with hard-cooked eggs, mushrooms, 4 crumbled strips of bacon, Swiss cheese, and almonds.
  • Heat olive oil in a small skillet over medium heat. Stir in shallots and garlic, and cook until softened and translucent, about 2 minutes. Whisk in the vinegar, Dijon mustard, honey, and 2 crumbled strips of bacon; season to taste with salt and pepper, then cook until hot.
  • Pour hot dressing over spinach and toss to coat.

1/4 cup vinegar, white wine
2 tablespoons honey
3 tablespoons oil, salad
1 teaspoon poppy seed
1/2 teaspoon dry mustard
8 cups fresh spinach, torn
1 medium mangoes or 2 medium pears, cored, peeled and cubed
1 1/2 cups grapes, seedless, halved

Steps:

  • In a screw top jar combine vinegar, oil, honey, poppy seed, and dry mustard Cover; shake well to mix.
  • Combine spinach, papaya or pears, and grapes.
  • Shake dressing again and pour over salad.
  • Toss to coat.

This is an awesome spinach salad, with the best Honey-Mustard dressing ever! Make the dressing first and refrgerate to blend flavors. I have had this recipe on a sheet of paper for years and years, the paper is tattered, yet I have no idea where it came from. Presumably there is a Taylor's Landing somewhere, that deserves the credit. Yummy! (The prep times does not include the dressing-chilling time or time to boil the egg). The dressing makes 1 pint.

1 large tortilla, shell for salad bowl
lettuce leaf (desired amount)
1 bunch spinach, washed well, drained and torn into bite-sized pieces
1 ounce monterey jack cheese, grated
1 ounce slivered almonds
4 slices tomatoes
2 ounces bacon bits
1 hard-cooked egg, peeled and chopped
2 ounces fresh shrimp
1/2 cup honey
1/2 cup tarragon vinegar
1 1/4 teaspoons salt
1 1/4 teaspoons dry mustard
3/4 teaspoon curry powder
1 tablespoon onion, minced
1 cup a little less oil

Steps:

  • Make Honey-Mustard dressing first, like this:.
  • In medium mixing bowl, blend together honey, vinegar, salt, mustard, curry powder and onion; slowly beat in oil. Refrigerate.
  • For the salad:.
  • Line tortilla shell with lettuce leaves. Fill lines shell with spinach, cheese, almonds, tomato, bacon bits, egg and shrimp. Top with dressing.

Add in the vinegar (careful, it may spatter depending on how hot the bacon fat still is), sugar, and honey mustard. Turn the heat to low and stir until all ingredients have dissolved, then remove and add salt and pepper to taste.
  • Place the spinach in a large bowl. Crumble the bacon, then add to the salad, along with goat cheese crumbles, almonds, caramelized onions, and anything else you might like — I added some diced hard-boiled eggs and tomatoes. Toss lightly with the dressing and serve.
