QUICK AND EASY TUNA PASTA



Quick and Easy Tuna Pasta image

This quick and easy pasta with tuna is ready in less than 15 minutes and is also great as a tuna salad.

2 tins of tuna in brine (or oil)
1 tbsp olive oil
1 small onion, finely chopped
300g Dried Pasta (I like using Farfalle or Penne, but really you can use whatever you prefer)
3 tbsp Hellmann's Mayonnaise
1/2 small tin of sweet corn
Salt and pepper
Chopped fresh coriander

Steps:

  • I like to use a wok to make this dish, just because you can use it easily to serve up by bringing it to the table and everybody can help themselves. You will also need a colander.
  • Start by boiling a pan of water and start cooking the pasta. I always add a drop of olive oil to the pasta when I am boiling it. Then chop the onion and fry it in the olive oil in the wok until soft, then add the sweet corn (after draining the water from the tin) and fry for about 1 minute. Turn off the heat on the wok.
  • Then drain the tuna in the colander over the sink to get rid of the brine/oil. Make sure the tuna is broken up and the liquid drained.
  • When the pasta is cooked pour it over the tuna in the colander (make sure the colander is over the sink ???? ) to drain the pasta from the water. Then add the hot pasta/tuna to the wok and put the wok on very low heat while you mix everything together.
  • Finally, remove from the heat, add the Mayonnaise to taste, and season with salt and pepper to suit. You could make it look fancy by adding some chopped coriander (but we don't normally bother!).

1 (5 ounce) can tuna, drained
1 (15 ounce) can peas, drained
½ (16 ounce) jar Alfredo-style pasta sauce
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and set aside.
  • In a large saucepan over medium heat, combine tuna, peas, Alfredo sauce, garlic powder, oregano, and basil; mix well.
  • Cook until heated through and add cooked pasta; mix well. Adjust seasoning as needed; serve.

1 hard-boiled large egg, chopped

1 tbsp olive oil
2 garlic cloves (, minced)
1 small onion (, finely diced)
800g / 28 oz crushed tomato ((Note 1))
1 tbsp tomato paste (optional, thickens sauce slightly)
3/4 cup (185ml) water ((Note 2))
1 tbsp Italian mixed herbs (, or other dried herbs of choice)
1 tsp salt
1/2 tsp black pepper
425g / 15 oz can chunk tuna ((preferably in oil), drained (Note 3))
200g / 7 oz spiral pasta ((or other pasta of choice))
1 1/2 cups (150g) shredded mozzarella cheese ((Note 4))
Olive Oil (, for drizzling)

Steps:

  • Preheat oven to 180C/350F.
  • Cook pasta per packet directions, minus 1 minute. Drain, rinse under tap water to stop it sticking together, set aside.
  • Meanwhile, make the sauce. Heat an ovenproof skillet over medium high heat. Add garlic and onion, cook for 3 minutes until golden.
  • Add tomato, water, herbs, salt and pepper and tomato paste if using. Stir, bring to simmer, lower heat to medium and simmer energetically for 5 minutes (stir every now and then) until it thickens.
  • Adjust salt to taste. Also add a touch of sugar if it tastes a bit sour (depends on quality of tomato).
  • Turn the stove off, add pasta, stir in.
  • Add tuna and GENTLY stir it in - don't break up the tuna so it disintegrates into mush. Leave some chunks on the surface (nice when it is golden).
  • Drizzle with oil, top with cheese then bake for 20 minutes until golden and you get those nice crusty bits you see in the photos.
  • Stand for 3 minutes then serve!

This is one I came up with one night that ended up being very good and I make it over and over on those nights when I don't have a lot of time and I don't want to make just another box of macaroni.

1 (5 ounce) can albacore tuna (in water)
1 (7 1/4 ounce) box Kraft macaroni and cheese
1/4 cup milk
1 -2 tablespoon butter
1/2 cup mushroom (diced)
1/4 onion (diced)
1 (14 1/2 ounce) can diced tomatoes
1 teaspoon parsley
1/2 teaspoon basil
1 dash paprika
crushed red pepper flakes (to taste)

Steps:

  • Boil water for macaroni and begin cooking as directed on package (usually approximately 8 minutes.).
  • Heat butter in small sauce pan.
  • Add mushrooms, onion, parsley, basil, paprika, and red pepper to pan. Let cook for about 3 minutes (until onions are transparent).
  • Add a dash of the liquid from the tuna to the pan. Drain the rest and add tuna to pan.
  • Stir in about 2/3 of the can of tomatoes, the rest can either be mixed in or served on top.
  • Lower heat and let simmer for a couple minutes.
  • When the noodles are cooked, drain and return to pan.
  • Mix the milk, cheese powder, and tuna mixture to the noodles.
  • Serve with a scoop of tomatoes on top. (optional).

This dish is super easy. It is also a very hearty delicious bowl of comfort food. The guys in my house loved it. I loved this recipe but I used cream of mushroom soup and added the cheese into the casserole. I also melted butter and added bread crumbs to the top before baking, then sprinkle top lightly with dill seasoning. The resulting casserole was very creamy and flavorful.
