Easy one-dish meal. This was a nice change. We have chicken and beef so often. My mom used to make this all the time when I was a kid. I just never think to make it. I guess you could also classify it as a great comfort food.

1 (10 3/4 ounce) can condensed cream of mushroom soup or 1 (10 3/4 ounce) can 98% fat-free cream of mushroom soup
1/2 cup milk
2 tablespoons chopped pimiento (optional)
1 cup frozen peas and carrot
2 (6 ounce) cans canned tuna, drained and flaked
2 cups hot cooked egg noodles or 2 cups noodles, of choice
2 tablespoons dry breadcrumbs
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • Mix soup, milk, pimiento, peas/carrots, tuna and noodles in 1 1/2-quart casserole.
  • Bake at 400°F for 20 minute or until hot; stir.
  • Mix bread crumbs with butter and sprinkle on top. Bake 5 minute.

3 cups egg noodles
1 tablespoon butter
1/2 onion diced
2 stalks celery diced
1/2 cup frozen peas and carrots
10.5 oz condensed mushroom soup
1/3 cup milk
1 cup cheddar cheese
Topping
1/2 cup panko bread crumbs
1 tablespoon butter melted
1 cup cheddar cheese
1 tablespoon fresh parsley (chopped (optional))

Steps:

  • Preheat oven to 425°. Combine topping ingredients and set aside.
  • Boil noodles al dente according to package directions. Drain and rinse under cold water.
  • In a large bowl combine noodles, onions celery, peas, soup, milk, cheese, and tuna. Mix well.
  • Spread into a 2qt casserole dish and top with the topping.
  • Bake 20-30 minutes uncovered.

1 nonstick cooking spray, for greasing
3 tablespoons unsalted butter
1 small yellow onion, diced
6 cloves garlic, minced
3 tablespoons all purpose flour
2 teaspoons italian seasoning
2 teaspoons kosher salt
2 cups chicken broth
1 cup whole milk
2 cups peas, canned, drained
1 cup carrot, drained
4 cans tuna, packed in water, drained
12 oz egg noodles, cooked according to package instructions and drained
3 cups shredded cheddar cheese, divided
1 cup butter crackers, crumbled
¼ cup grated parmesan cheese
1 tablespoon olive oil

Steps:

  • Preheat the oven to 400°F (200°C). Lightly grease a 9 x 13-inch (22 x 33cm) baking dish with nonstick spray.
  • Melt the butter in a large saucepan over medium heat. Add the onion and sauté until softened and very fragrant, about 5 minutes. Stir in the garlic, flour, Italian seasoning, and salt and cook for another minute, until thickened.
  • Slowly pour in the chicken broth and milk and stir to combine. Bring to a simmer, stirring constantly. Once the mixture has thickened, 10-12 minutes, stir in the peas, carrots, and tuna.
  • Spread the cooked egg noodles in the prepared baking dish.
  • Pour the sauce over pasta in the pan and stir to combine. Add 2 cups of cheddar cheese and stir to incorporate. Spread the casserole in an even layer, then sprinkle the remaining cup of cheese on top.

12 oz dry egg noodles
1 tablespoon extra virgin olive oil
1/2 cup chopped onion
8 oz fresh mushrooms, sliced
2 (10.75 oz each) cans condensed cream of mushroom soup
2 (5 oz each) cans tuna fish, drained
2 cups shredded cheddar cheese, divided
1 cup frozen green peas
1/2 cup sour cream
1 cup crushed potato chips

Steps:

  • Bring a large pot of water to a boil and salt generously. Cook the pasta until it is al dente, about 8-10 minutes.
  • While the noodles are cooking, preheat the oven to 425ºF. Spray a 9×13-inch casserole dish with nonstick cooking spray.
  • Place a large skillet over medium-high heat and heat the olive oil. Add the onion and the mushrooms and cook until the mushrooms are soft and the onion is translucent. Season with salt and pepper.
  • In a large bowl, combine the condensed soup, tuna fish, 1 cup of the cheese, the peas, the sour cream, and the cooked mushrooms and onions. Stir to combine.
  • When the noodles are done, drain, then add to filling mixture. Stir gently to combine.
  • Pour the mixture into the prepared casserole dish.
  • Cover the casserole with foil and bake for 15 minutes.
  • Remove from the oven and top with the remaining 1 cup of cheese and the crushed potato chips. Return to the oven and cook uncovered for an additional 10 minutes, or until the cheese is melted.

This is a tuna noodle casserole recipe that is a favorite for my family. I just kind of threw it all together one evening and we loved the combination. It is really creamy and makes a nice sized batch. This goes great with garlic cheddar biscuits or buttered bread. Great comfort food!

1 lb rotini pasta
2 (12 ounce) cans tuna, drained
2 (10 3/4 ounce) cans cream of mushroom soup
1 (8 ounce) package cream cheese, softened
1/2 cup milk
1 (14 1/2 ounce) can peas and carrots, drained (I prefer DelMonte because they are diced)
1 (8 ounce) bag shredded cheddar cheese
mustard, to taste

Steps:

  • Preheat oven to 350 degrees and cook rotini according to package directions while oven is preheating.
  • While the rotini is cooking, whisk together the softened cream cheese, cream of mushroom soup, tuna, milk,, and enough mustard to color it slightly. The mustard really adds a great flavor!
  • Add the cheddar cheese and peas and carrots, reserving some cheddar for the top if you prefer.
  • Mix cream mixture and rotini and place in a 13x9 inches baking dish and cook for 30 minutes.

7 ounces dried egg noodles ((3 - 3 1/2 cups cooked))
1/4 cup butter
1/4 cup flour
3/4 teaspoon oregano
3/4 teaspoon basil
dash of thyme
1/4 teaspoon salt
3 1/2 cups milk ((I use 2%))
1/2 cup freshly grated parmesan cheese
1 cup frozen peas*
2 cans tuna ((2 x 6 1/2 ounce / 2 x 184 grams, drained and flaked))
1/3 cup bread crumbs
2 tablespoons butter melted

Steps:

  • Pre-heat oven to 350° (180° celsius). Lightly grease a 10 x 8 x 2 inch (27 x 21 x 6 centimeter) baking dish.
  • In a small bowl with a fork combine melted butter and bread crumbs, set aside.
  • In a large pot of boiling salted water cook the egg noodles al dente and drain.
  • In a small pot of boiling water cook the peas till just tender.
  • In a medium pot over low to medium heat melt 1/4 cup butter, whisk in flour, basil, oregano, thyme and salt. Slowly whisk in the milk and stir constantly until sauce thickens**
  • Remove from heat and add the parmesan cheese stir to combine.
  • Fold in the drained noodles, peas and tuna.
  • Pour into the baking dish and sprinkle with topping. Bake 20 minutes, let sit 5 minutes and serve. Enjoy!
