RAMEN BROCCOLI SLAW

This broccoli slaw in delicious - given to me by a friend so I don't know where it originated. It's better freshly made and not refrigerated. You can buy broccoli slaw in the prepackaged lettuce area of most supermarkets.

1 (12 ounce) package broccoli coleslaw mix
2 bunches green onion tops, chopped
2 (3 ounce) packages chicken-flavored ramen noodles
1 cup slivered almonds
1 cup sunflower seeds
1 cup oil (I used olive)
1/2 cup white vinegar
1/2 cup sugar

Steps:

  • Mix slaw, chopped onions, noodles only from Ramen noodles (crush them with your hands), almonds and sunflower seeds together in bowl.
  • Make dressing w/oil, vinegar, sugar, and add the 2 packets of flavoring from the Ramen noodles.
  • Add dressing to your taste- I used about half.
  • Note: Instead of white vinegar and sugar, I used 1/2 cup of flavored rice vinegar.

Steps:

  • Whisk 1/2 cup vegetable oil, 1/3 cup rice vinegar, 3 tablespoons sugar, 2 tablespoons soy sauce and 2 teaspoons toasted sesame oil in a large bowl. Break two 3-ounce packages ramen noodles into bite-size pieces (discard the seasoning packets). Add the uncooked ramen to the vinaigrette along with one 16-ounce bag broccoli slaw mix, 1 cup julienned snow peas, 3/4 cup toasted slivered almonds and 4 chopped scallions. Season with salt and pepper and toss. Let sit 1 to 2 hours before serving.

2 - 12 ounce packages broccoli slaw mix
2 packages Oriental-flavored Ramen noodles, crushed into small pieces
1 cup slivered almonds
1 cup sunflower seeds
3 green onions, chopped
Dressing:
1 cup canola oil
6 tablespoons red wine vinegar
4 tablespoons granulated sugar
2 packages Oriental seasoning mix (from the Ramen noodles)

Steps:

  • Mix the broccoli slaw, crushed noodles, almonds, sunflower seeds, and green onions together in a large bowl.
  • In another small bowl, add the canola oil, red wine vinegar, sugar, and Oriental seasoning packets from the Ramen noodles. Whisk together until the sugar is completely dissolved, then pour over the slaw mixture. Toss until evenly coated and cover the bowl with plastic wrap. Refrigerate for 1-2 hours before serving to allow the flavors to combine and the noodles to soften slightly. Stir the coleslaw occasionally to evenly distribute the dressing.

½ cup sunflower seeds
½ cup slivered almonds
1 (3 ounce) package Oriental-flavored ramen noodles, broken into small pieces
½ cup canola oil
¼ cup white sugar
¼ cup white wine vinegar
4 green onions, chopped

Steps:

  • Combine broccoli coleslaw mix, sunflower seeds, almonds, and ramen noodles together in a bowl. Whisk canola oil, sugar, ramen noodle seasoning packet, and vinegar together in a separate bowl; pour over slaw mixture. Fold in green onions. Chill in refrigerator for 1 1/2 hours before serving.

chopped for garnish green onions
1/4 cup sunflower seeds
1/4 cup slivered almonds
3/4 cup butter
2 (3 oz) bags (other flavors will work, too) ramen noodle soup in Oriental
2 (12 oz) bags broccoli cole slaw mix
3/4 cup canola oil
1/4 cup or white sugar brown sugar
1/4 cup apple cider vinegar
1 ramen noodle seasoning packet

Steps:

  • Put the ramen noodles in a bag and crush them with a rolling pin while melting butter in a large skillet over low/medium heat. Add the crushed noodles and slivered almonds to the skillet and saute, stirring occasionally (keep temperature at low/medium heat) until golden brown.
  • Dressing Mix:
  • Meanwhile, whisk together the canola oil, sugar, apple cider vinegar, and ramen noodle seasoning packet in a small bowl. Place the shredded broccoli into bowl and toss with the noodles, almonds, and sunflower seeds. Pour dressing over salad and toss to coat. Garnish with chopped green onions.

Friends and I have differing opinions on this one.....I like it best when it's first made and the noodles are crunchy, some seem to like it best after a day or two in the fridge when they are softer....it's really good either way!

12 ounces broccoli florets (chopped small-med size)
1 (12 ounce) bag broccoli coleslaw mix (bagged in produce section of grocery store)
1/4 cup sunflower seeds (kernels)
2 (3 ounce) packages ramen noodles (any flavor, I use the 'oriental' flavor, reserve 1 seasoning packet for dressing)
3 tablespoons butter
2 tablespoons olive oil
1/4 cup sliced almonds
3/4 cup vegetable oil (I use Canola)
1/4 cup brown sugar
1/4 cup apple cider vinegar
1/4 cup green onion, chopped (to garnish)

Steps:

  • Heat butter and olive oil in large saute pan.
  • Crush Ramen Noodles and add to pan along with almonds.
  • Saute for approx 5-7 minutes or until noodles and almonds are lightly browned. Set aside.
  • In very large salad bowl, combine broccoli, broccoli slaw and sunflowers.
  • Add toasted noodle/almond mixture and toss.
  • Make dressing by whisking together in a small bowl: vegetable oil, brown sugar, apple cider vinegar and the Ramen noodle seasoning packet.
  • Pour dressing over salad and toss.
  • Top with chopped green onions.
  • Serve immediately for crisp noodle slaw, or refrigerate for one day for softer noodle slaw.

  • Break or crush the ramen noodles into smaller pieces. In a skillet or frying pan using medium heat dry roast the broken ramen until its crunchy and has changed its color (lightly toasted) about 3 minutes more or less. This step is optional but it adds depth of flavor.
  • Mix 1 seasoning packet from the ramen noodles with the oil, cider vinegar and sugar in a separate container. (One seasoning packet is enough but you can add more if you like). Set aside.
  • Combine the coleslaw mix, green onions, almonds and sunflower seeds in a salad bowl. Add about half of the toasted ramen to the mix.
  • Pour the dressing and toss everything to coat. Add the remaining Ramen noodles and scatter them on top. Garnish with extra green onions, if desired. Leave for about 10 minutes to allow ramen and coleslaw to absorb the dressing.
