3/4 cup chopped peeled fresh peaches
1 small sweet red pepper, chopped
1 jalapeno pepper, seeded and chopped
2 tablespoons finely chopped red onion
2 tablespoons minced fresh cilantro
1 tablespoon lime juice
1 garlic clove, minced
1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons olive oil
1 tablespoon brown sugar
1 tablespoon Caribbean jerk seasoning
1 teaspoon dried thyme
1 teaspoon dried rosemary, crushed
1/2 teaspoon seasoned salt
1 pork tenderloin (1 pound)

Steps:

  • In a small bowl, combine the first nine ingredients; set aside. In another small bowl, combine the oil, brown sugar, jerk seasoning, thyme, rosemary and seasoned salt. Rub over pork., Grill, covered, over medium heat for 9-11 minutes on each side or until a thermometer reads 145°. Let stand for 5 minutes before slicing. Serve with salsa.

Grilled Pork Tenderloin with Peach Salsa image

One bite of Grilled Pork Tenderloin with Peach Salsa and your taste buds will be doing backflips and it's equally good at a backyard BBQ or fancy dinner party.

2 lbs pork tenderloins (about 2-3total)
2 Tbsp chili powder
2 Tbsp garlic powder
1 Tbsp brown sugar
2 tsp kosher salt
1 tsp pepper
1 1/2 cups peach preserves or jam
1/2 cup barbecue sauce (I like Sweet Baby Ray's)
1 tsp grated ginger
1/2 tsp garlic powder
2 small limes juiced
4-5 peaches (unpeeled and chopped)
1/2 cup red onion (minced)
1/2 red bell pepper (chopped)
1/2 cup fresh cilantro chopped (you can substitute parsley))
3 Tbsp fresh lime juice
2 jalapeno peppers (remove seeds and membranes and mince)
1/2 tsp kosher salt
1/4 tsp ground black pepper

Steps:

  • Combine the chili powder, garlic powder, sugar, salt, and pepper in a small bowl and rub the spice mixture all over the pork tenderloins. Cover and refrigerate for 2-24 hours.
  • Place the peaches, onion, bell pepper, cilantro, lime juice, jalapenos, salt, and pepper in a large bowl and mix well.
  • Cover and refrigerate for up to 24 hours.
  • Melt the jam in a small saucepan and add the barbecue sauce. Remove the pan from the heat and add the ginger, garlic powder, and lime juice. Place half of the glaze in a small bowl to serve with the pork later.
  • Preheat the grill to medium-high heat or 400 degrees. Brush the grill with vegetable oil to keep the pork from sticking.
  • Place the pork tenderloins on the grill and turn every 5 minutes or so. When the meat thermometer reads 135 degrees and you have approximately 4 minutes of grilling time left, coat the pork tenderloins liberally with the glaze. Cook for 2 minutes and turn and brush the glaze on the other side. Cook for an additional 2 minutes.
  • The tenderloins will take a total of 15-20 minutes to reach an internal temperature of 140 degrees at the thickest part. This will, of course, depend on the size of the tenderloins and how hot your grill is.
  • When the tenderloins reach 140 degrees remove them from the grill, tent with foil and let them rest for about 5 minutes to come up to 145 degrees.
  • To serve, slice the pork tenderloins and top with a large spoonful of the peach salsa.

1 pound pork tenderloin, cubed
salt and pepper to taste
¼ cup cornmeal
1 tablespoon olive oil
¼ cup beer
1 cup prepared salsa
1 (15 ounce) can sliced canned peaches, drained
½ (15 ounce) can black beans; drain and reserve liquid
1 tablespoon chopped fresh cilantro

Steps:

  • Season cubed pork with salt and pepper to taste. Place meat in a large plastic bag with the cornmeal. Shake well to coat the meat.
  • Heat the oil in a large skillet over medium high heat. Place the coated meat in the skillet and saute for 5 to 10 minutes, or until browned. Reduce heat to medium.
  • Pour in the beer, salsa, peaches and beans with 2 tablespoons reserved liquid. Stir well and simmer for 15 to 20 minutes. Stir in the cilantro.

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place tenderloin on hot grill and cook covered for 9 to 11 minutes. Turn and grill until tenderloin is slightly pink in the center, 9 to 11 minutes more. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Remove from heat, cover, and let sit for 5 minutes before slicing. Serve with peach salsa.

1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
2 cups peaches (fresh or frozen)
1 tablespoon lime juice
2 tablespoons honey
1 tablespoon cilantro
1 -2 jalapeno pepper, seeded, minced

Steps:

  • Place pork in a greased 11" X 7" X 2" baking dish and rub meat with the oil.
  • Sprinkle with oregano and cumin.
  • Bake, uncovered, at 400 degrees for 25 minutes or until a meat thermometer reaches 160 degrees.
  • Let meat stand 10 minutes before slicing.

This is a tender and tasty way to prepare pork tenderloin. I've made it with the salsa in the summer(yummy!) and I've made it without the salsa when peaches were not in season. Prep time does not include the 6+ hours to marinate.

1/2 cup soy sauce
1 tablespoon sesame oil
2 teaspoons teriyaki sauce
1 teaspoon ground ginger
2 garlic cloves, minced
1 lb pork tenderloin
1/4 cup honey
2 tablespoons brown sugar
4 1/2 tablespoons sesame seeds
peach-avocado salsa

Steps:

  • Combine first 5 ingredients.
  • Place the tenderloin in a zip-loc bag and add the mixture.
  • Chill for at least 6 hours.
  • Remove pork from the marinade and discard the marinade.
  • Stir the honey and brown sugar together.
  • Brush the pork with the honey mixture and sprinkle with the sesame seeds.
  • Place on a lightly greased rack in a roasting pan (I buy a throw away pan because the honey can make cleaning up a real chore-much easier to pitch the pan than cleaning it).
  • Bake at 400 degree oven for 25-30 minute.
  • or until meat thermometer in thickest part reaches 160 degrees.
  • Cut pork into slices and serve with peach-avocado salsa.
  • Peach-avocado salsa: 1 cup peeled, diced fresh peaches- I use 2 peaches.
  • 1 large tomato, diced.
  • 1/2 cup diced avocado, 1 TBsp minced red onion, 1 TBsp lime juice, 1 tsp olive oil, 1/4 tsp salt, 1/4 tsp ground red pepper. Combine salsa ingredients in a large bowl.
  • Cover and chill until ready to serve.
