Here's what you need: eggs, butter, spinach, tomato, mushroom, cheese, nira chive

3 eggs
1 tablespoon butter
spinach, cooked, optional
tomato, chopped, optional
mushroom, sliced and sautéed, optional
cheese, optional
nira chive, chopped, optional

Steps:

  • In a medium bowl, beat the eggs.
  • Melt the butter in a medium frying pan over medium heat.
  • Pour in the beaten eggs. Stir and shake the pan, moving the eggs around until a few curds form. Reduce the heat to low, then flatten the eggs until the still-runny egg covers the entire bottom of the pan. Add any fillings that you would like.
  • Let the omelette cook until the eggs are fully set, 1-2 minutes, then gently roll the omelette and transfer to a plate. The surface should be smooth with no color.
  • Sprinkle with chives, if desired.
  • Enjoy!

This tasty pasta omelette will allow you to use up leftover pasta and will reward you with a delicious dish. You just have to try this recipe!

leftover pasta (eg spaghetti)
5 eggs (beaten)
100g milk
salt & pepper
lots of grated parmesan
extra virgin olive oil
chopped cooked ham (optional)
clove of garlic
any herbs such as thyme, coriander

Steps:

  • 1. Chop the ham into small pieces if using.
  • 2. Beat the eggs in a bowl & add the chopped ham and then the milk & herbs. Add some salt and pepper and mix together.
  • 3. In a frying pan heat the clove of garlic in some olive oil until it becomes lighter in colour, then remove it.
  • 4. Add the leftover pasta to the frying pan and let it fry for a couple of minutes before touching it.
  • 5. Cover the spaghetti evenly with the egg mixture. Leave to cook for a few minutes and then add the grated parmesan, cover with a lid.
  • 6. Leave to cook on a fairly low heat for about 15-20 minutes. Turn the omelette and cook without the lid for another 5 minutes or so.

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook for about 5 minutes or half of the cooking time instructed on the package. Drain in a colander and immediately place under cold running water to cool thoroughly.
  • Meanwhile, in a large bowl, add the eggs and Parmigiano and season with a little salt and a few grinding of pepper. Whisk well to combine. Add the spaghetti to the bowl and toss to coat thoroughly.
  • In a 12-inch non-stick skillet over medium heat, heat the olive oil. Pour in half of the spaghetti mixture and spread it out evenly. Cook, shaking the pan occasionally, until the underside turns lightly golden brown and sets, about 5 to 7 minutes.
  • Arrange the mozzarella and tomato slices over the spaghetti and scatter the basil over the top. Give the remaining spaghetti mixture a quick stir, then pour it over the top and spread it out evenly to cover.
