Here's what you need: limes, shrimp, kosher salt, jalapeñoes, small red onion, cherry tomato, fresh cilantro leaf, tortilla chip

10 limes
1 lb shrimp, peeled, deveined, and diced
2 teaspoons kosher salt
2 jalapeñoes, seeded and minced
1 small red onion, diced
2 cups cherry tomato, chopped
fresh cilantro leaf, for garnish, optional
tortilla chip, for serving

Steps:

  • Halve the limes, then juice using a citrus press or a pair of kitchen tongs. You should have about 1 cup (240 ML) total.
  • In a medium bowl, combine the shrimp, lime juice, salt, jalapeños, onion, and tomatoes. Mix well.
  • Cover and refrigerate for about 4 hours, until the shrimp is opaque and firm.
  • Serve the ceviche chilled. Garnish with cilantro, if desired, and serve with tortilla chips.
  • Enjoy!

1 Bag (16 Ounces of Raw, deveined shrimp)
1/2 Red Onion (diced)
1 Cucumber (diced)
3 Tomatoes (diced)
1 Jalapeño (diced)
1/2 bunch of cilantro (finely chopped)
1 1/4 Cup of Real Lime Juice
Juice from one lemon
1/4 cup of Worcestershire sauce
Salt and Pepper to Taste
Frank's RedHot Buffalo Sauce or other hot sauce (quantity depends on how spicy you want it)
1 Avocado
Tostadas

Steps:

  • Combine all of the shrimp with 1 cup of lime juice in a large bowl. Cover and let rest in the refrigerator for at least one hour until the shrimp are mostly pink.
  • In a separate bowl, combine the onion, cucumber, tomatoes, jalapeño, and cilantro.
  • Add the shrimp and mix well.
  • Add the Worcestershire sauce, and season with salt and pepper and additional lime and lemon juice.
  • Mix well and serve on the tostadas adding hot sauce to taste and avocados.

1 1/2 cups fresh lime juice (from 10 limes)
1/2 cup fresh orange juice (from 1 orange)
1 1/4 pounds red snapper fillet, skin removed, flesh cut into 1/2-inch dice
1 medium ripe mango, peeled, pitted, flesh cut into 1/2-inch pieces
1/4 small pineapple, peeled, cored, flesh cut into 1/2-inch pieces
1 cup grape or cherry tomatoes, quartered
1 small habanero chile or other hot chile, seeded and minced
1/4 small red onion, finely diced
1/4 cup roughly chopped fresh cilantro
2 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
Tortilla chips, for serving

Steps:

  • Pour lime juice and orange juice through a sieve set over a large glass bowl. Add red snapper fillet and gently stir to combine (fish should be completely covered by juice). Cover with plastic wrap and refrigerate until fish is opaque throughout, about 4 hours. Drain fish well; discard marinade. Return fish to bowl.
  • Add mango, pineapple, tomatoes, chile, red onion, cilantro, and olive oil. Season to taste with salt and pepper and more lime juice, if desired. Serve with tortilla chips.

1 1/2 lbs large raw shrimp
10 limes
1 1/2 regular size orange habaneros
1/2 of a purple onion
1 medium size cucumber
ice
3 teaspoons sea salt

Steps:

  • Peel and devein Shrimp with a Shrimp Deveiner or small kitchen knife. A quick and easy way to clean your shrimp is to clean them under a running faucet or underwater in a bowl.
  • In a pot add water, about half ways. Add one teaspoon of salt to the water.
  • Add Shrimp to boiling water. You want to cook the shrimp for no more than 45 seconds or when they start to turn slightly pink.
  • Remove them immediately and add them to a bowl of ice water. The goal is to stop them from overcooking.
  • Once they are cool, cut the shrimp in thirds or halves depending on the size of the shrimp. Usually in three parts.
  • Add them to a bowl with one teaspoon of salt.
  • The Veggies.
  • Peel a medium size cucumber and dice into cubes or thin slices.
  • Peel and cut the red onion into thin slices. Combine both veggies into a bowl and add one teaspoon of salt.
  • queeze the juice of 10 limes with a lemon squeezer and add the habaneros to a high-speed blender. If you don't have a high-speed blender like a Vitamix or Blentec remove the seeds from the habaneros. Blend for about a minute at high speeds.
  • Add the blended habaneros with the lime juice in the bowl of shrimp, enough to cover them.
  • Allow the shrimp to cook in lime juice for a minimum of 2 hours in the refrigerator or overnight, before combining the veggies with the shrimp. Drain any excess lime juice and combine all the ingredients together, tossing them gently.
  • Garnish with avocado slices and serve with tostadas or saltine crackers.

2 pounds shrimp (frozen or raw, peeled with tail off)
1 red onion (diced)
5 Persian cucumbers (diced)
2 avocados (diced (firm is better than soft so that they don't get mashed in the dish))
1 pound cherry or plum tomatoes (cut in half)
1 cup frozen corn ((if you can find fire-roasted frozen corn, that's really great in this recipe too))
1 bunch cilantro (chopped)
1 cup fresh squeezed lime juice
4 tablespoons extra virgin olive oil
4 teaspoons sea salt
1/4 cup ketchup ((I prefer the taste of Kensington's organic ketchup))
few dashes favorite hot sauce ((I prefer Tapatio). Add as much as you prefer.)

Steps:

  • Boil a pot of water. Add 2 teaspoons sea salt to the boiling water.
  • Add the shrimp for a few minutes or until just cooked. Look for the tails to curl up, which indicates they are cooked. Remove cooked shrimp to a clean plate.
  • When cool enough to handle, dice shrimp into chunks and add to the largest glass bowl you own. Add half of the lime juice and toss together.
  • Add in onion, cucumbers, avocados, tomatoes, frozen corn, and cilantro.
  • Add the rest of the lime juice to a small mixing bowl and mix in olive oil, 2 teaspoons of sea salt, ketchup, and as much or as little hot sauce as you like.
  • Add this mixture to the bowl of shrimp and veggies and give it a good toss.
  • Serve shrimp ceviche with tortilla chips or tostadas.
