EASY GRILLED PORK CHOPS



Easy grilled pork chops image

Juicy grilled pork chops with the best, easy marinade is the perfect recipe to throw on the grill. Great served with simple sides for a delicious dinner.

4 thick cut bone-in pork chops
¼ cup olive oil
¼ cup lemon juice
1 tsp smoked paprika
1 garlic clove (thinly sliced )
2 tsp dried herbs of your choice ((I used oregano, rosemary and parsley) )
1 tsp salt
½ tsp pepper

Steps:

  • Whisk together olive oil, lemon juice, garlic, spices and herbs.
  • Place the pork chops in a suitable marinating dish or a large Ziploc bag. Pour over the marinade and make sure the pork chops are all covered in the the marinade. Cover and allow to marinate for at least 30 minutes but up to 24 hours in the fridge.
  • Preheat an outdoor grill for at least 5 minutes on the highest setting. Add the pork chops then cook for 2-3 minutes per side, rotating, and turning to make sure the chops are evenly browned. If the fat cap is very big, stand the chops on the fat side and allow to cook and the fat to render for a few minutes.
  • Take the chops off the heat when their internal temperature reaches 145ºF / 62ºC, cover with foil and allow to rest for at least 5 minutes.
  • Serve with lemon wedges.

2 tablespoons brown sugar
2 tablespoons Dijon mustard
3 garlic cloves, minced

Steps:

  • In a small saucepan, mix bourbon, brown sugar, mustard and garlic; bring to a boil. GRILLED STUFFED PORK CHOPS

4 thick cut pork chops
3 slices thick-cut bacon (cut into lardon)
1/4 C Onion (minced)
1/4 C Apple (i used gala, minced)
1/4 C Celery (chopped)
1 clove garlic (minced)
2 C Sourdough or Italian bread
1/2 C Chicken Stock - add more if your stuffing is dry
1/4 C Butter
2 Tbsp Olive Oil
1/2 tsp Salt
1/2 tsp pepper

Steps:

  • With a sharp knife, slice pockets horizontally into your thick cut chops - go all the way to the bone, but don't make your opening too large - salt and pepper your chops inside and out - set aside.
  • Heat a skillet over medium heat and toss in the bacon, stir and heat fairly slowly to render out the fat. When the bacon is done, remove from the pan and drain - remove remaining fat from your skillet
  • In the same hot skillet, heat 1 Tbsp olive oil and saute onion, celery and apple over medium heat until the onion is transluscent. Add in the garlic and saute for a few more minutes.
  • When onion and garlic are golden, add 1/2 stick butter (1/4 cup) and melt into the vegetables.
  • Add the bacon into the skillet and mix in the processed fresh bread crumbs.
  • Moisten with the remaining Tbsp. of Olive Oil
  • Add chicken stock until your stuffing is very wet and can be pushed into a ball in your hands - dry stuffing means dry chops.
  • Season with the 1/2 tsp salt and 1/2 tsp pepper and taste. Add more seasoning if needed
  • Stuff each chop with 1/4 of the stuffing and use a toothpick to "sew" the pocket shut
  • Let rest after stuffing for about 10 minutes, long enough to heat up the grill
  • Grill on each side about 10 minutes - use a meat thermometer to determine "doneness" - pork should be to about 160 - but measure in the MEAT not in the stuffing.
  • Enjoy!

1/4 cup honey
2 tablespoons vegetable oil
1 tablespoon apple cider vinegar
1 teaspoon ground cumin
1/2 teaspoon red pepper flakes
Eight 1/2-inch bone-in pork chops (about 3 ounces each)
Salt and freshly ground black pepper

Steps:

  • Begin by making the marinade. In a small bowl, whisk together the honey, oil, vinegar, cumin and red pepper flakes. Easy, right?
  • Sprinkle both sides of the pork chops with salt and pepper and place in a re-sealable plastic bag with the marinade. Let rest on the counter for 1 hour. That's easy.
  • Heat a grill or grill pan over medium heat. Remove the pork chops from the bag and lightly sprinkle with salt and pepper. Place on the grill and cook until the pork chop releases from the grill, about 4 minutes. Flip and cook on the other side for another 3 minutes. If using a grill pan, be sure to do in batches so you don't steam the chops. And don't worry if you have neither; you can do this in a pan. See, easy!

5 clove garlic
4 Tbsp olive oil
1/4 tsp cayenne pepper - optional
2 1/2 Tbsp brown sugar

  • In a medium sauce pan over medium heat, combine all ingredients for the bbq sauce. Bring to a boil, reduce to low and simmer for 5 minutes, stirring throughout. Reduce from heat and set aside.
  • Preheat grill to medium and oil the grates.
  • Season pork chops generously with salt and pepper on both sides.
  • Place pork chops on the grill, cook for 2-3 minutes, then turn over and brush bbq sauce all over the tops and sides of the pork chops. Cook another 5-7 minutes, then turn and brush bbq sauce all over the tops and sides again.
  • Cook 5-7 minutes longer until internal temperature reaches 140 degrees F or there is no longer any pink in the center. Allow to rest on a plate or cutting board - covered - for at least 5 minutes before serving - this is KEY to keeping the pork chops nice and juicy.

1/4 cup brown sugar
2 tablespoons paprika
2.5 teaspoons kosher salt

  • Rub or brush the pork chops with olive oil and sprinkle generously with the spice mix, massaging it into the meat. You can allow the pork to sit on the counter while you heat up the grill or you can refrigerate them covered, overnight. When ready to cook allow the meat to come to room temperature for 20 minutes before grilling.
  • For Gas Grill and Pellet Grill: Clean and oil the grill grate. Preheat an outdoor grill to medium-high heat to about 400°F. - 450° F. (or you can use an indoor grill pan). Turn off the burners on one side of the grill to create 2 zones, a zone of direct heat and a zone of indirect heat.
  • For Charcoal Grill: Clean and oil the grates. Light a chimney with enough charcoal to cover half of the grill (I fill a charcoal chimney ¾ full). When all charcoal is lit and covered with gray ash, pour out the coals on one side of the grill, leaving the other side empty. This creates 2-zones, a zone of direct heat and a zone for indirect heat. Set the clean and oiled cooking grate in place, cover the grill, and allow to preheat for about 5 minutes.
