ZESTY GRILLED CHOPS
These pork chops make a quick company dish. Our family enjoys them on the grill, as the summer weather in our part of the country is hot and muggy. In the wintertime, they're wonderful prepared in the broiler. -Blanche Babinski, Minto, North Dakota

GRILLED STUFFED PORK CHOPS

Steps:
- With a sharp knife, slice pockets horizontally into your thick cut chops - go all the way to the bone, but don't make your opening too large - salt and pepper your chops inside and out - set aside.
- Heat a skillet over medium heat and toss in the bacon, stir and heat fairly slowly to render out the fat. When the bacon is done, remove from the pan and drain - remove remaining fat from your skillet
- In the same hot skillet, heat 1 Tbsp olive oil and saute onion, celery and apple over medium heat until the onion is transluscent. Add in the garlic and saute for a few more minutes.
- When onion and garlic are golden, add 1/2 stick butter (1/4 cup) and melt into the vegetables.
- Add the bacon into the skillet and mix in the processed fresh bread crumbs.
- Moisten with the remaining Tbsp. of Olive Oil
- Add chicken stock until your stuffing is very wet and can be pushed into a ball in your hands - dry stuffing means dry chops.
- Season with the 1/2 tsp salt and 1/2 tsp pepper and taste. Add more seasoning if needed
- Stuff each chop with 1/4 of the stuffing and use a toothpick to "sew" the pocket shut
- Let rest after stuffing for about 10 minutes, long enough to heat up the grill
- Grill on each side about 10 minutes - use a meat thermometer to determine "doneness" - pork should be to about 160 - but measure in the MEAT not in the stuffing.
- Enjoy!
EASY GRILLED PORK CHOPS
Steps:
- Begin by making the marinade. In a small bowl, whisk together the honey, oil, vinegar, cumin and red pepper flakes. Easy, right?
- Sprinkle both sides of the pork chops with salt and pepper and place in a re-sealable plastic bag with the marinade. Let rest on the counter for 1 hour. That's easy.
- Heat a grill or grill pan over medium heat. Remove the pork chops from the bag and lightly sprinkle with salt and pepper. Place on the grill and cook until the pork chop releases from the grill, about 4 minutes. Flip and cook on the other side for another 3 minutes. If using a grill pan, be sure to do in batches so you don't steam the chops. And don't worry if you have neither; you can do this in a pan. See, easy!

- Using a mortar and pestle, grind the saffron threads with a pinch of salt until powdered. Dissolve this in hot water and soak for 15 to 20 minutes.
- Preheat the charcoal grill about 30 minutes before grilling. We recommend using hardwood charcoal and not briquettes for perfect flavor. The grill is ready when the flame has subsided, coals glow uniformly and covered with some ash. Tip: A small fan or hair dryer may be useful. Check this tutorial for more about charcoal grilling.
- Meanwhile, thread the lamb chops on ½ inch wide metal skewers making sure to pass the skewer through the thick portion of the meat. You will need to rest the bones on a separate skewer while placing it on the grill.

- Mix all ingredients for the marinade together in a small container. Using a hand blender, pulse a few times to partially liquefy the marinade. If you don't have a hand blender, simply mince the onion, garlic and green onion as finely as you can.
- Place the pork chops and the marinade in a bowl, or a Ziploc bag and mix well, ensuring even coverage. Refrigerate overnight and up to 24 hours.
- About half an hour prior to grilling, take the pork chops of the fridge and give them a good mix. Let rest at room temperature.
- Preheat your grill to medium-high temperature. Depending on the thickness of the pork chops, grill for about 5-10 minutes, flipping frequently to avoid burning. Grilled pork chops are fully cooked once their internal temperature reaches 145F. Use an instant-read thermometer to get optimal results.

- Rub or brush the pork chops with olive oil and sprinkle generously with the spice mix, massaging it into the meat. You can allow the pork to sit on the counter while you heat up the grill or you can refrigerate them covered, overnight. When ready to cook allow the meat to come to room temperature for 20 minutes before grilling.
- For Gas Grill and Pellet Grill: Clean and oil the grill grate. Preheat an outdoor grill to medium-high heat to about 400°F. - 450° F. (or you can use an indoor grill pan). Turn off the burners on one side of the grill to create 2 zones, a zone of direct heat and a zone of indirect heat.
- For Charcoal Grill: Clean and oil the grates. Light a chimney with enough charcoal to cover half of the grill (I fill a charcoal chimney ¾ full). When all charcoal is lit and covered with gray ash, pour out the coals on one side of the grill, leaving the other side empty. This creates 2-zones, a zone of direct heat and a zone for indirect heat. Set the clean and oiled cooking grate in place, cover the grill, and allow to preheat for about 5 minutes.
