3 tablespoons canola oil
2 tablespoons minced onion
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon garlic powder
½ teaspoon ground black pepper
1 ½ pounds elk steak

Steps:

  • Whisk canola oil, onion, lemon juice, Worcestershire sauce, soy sauce, garlic powder, and pepper in a bowl until marinade is well mixed. Place elk steak in a large resealable plastic bag and pour marinade over meat. Coat meat with marinade, squeeze out excess air, and seal bag. Marinate in the refrigerator for at least 4 hours, turning occasionally.
  • Preheat grill for medium heat and lightly oil the grate. Drain elk steak and discard marinade.
  • Cook steaks on the preheated grill until they are beginning to firm and are hot and slightly pink in the center, 5 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

Very tasty and tender elk--as long as it is not overcooked. The sauce is very simple and does not take away the elk flavor.

4 tablespoons brown sugar
4 tablespoons margarine or 4 tablespoons butter
4 tablespoons catsup
4 medium elk steaks

Steps:

  • Mix brown sugar and margarine (butter) in small microwave cooking dish.
  • Heat slowly until well mixed together (stir every minute).
  • After the brown sugar is well mixed, let cool for a couple minutes and add the catsup to the brown sugar and margarine (butter).
  • Place elk steaks on broiler pan; cot the top side of elk steaks.
  • Be sure to preheat the broiler oven and then place in closed oven for about 4-5 minutes, depending on how you like the steak (rare, medium-rare, medium, medium-well, or well). I think it is better to cook them for shorter period for tenderness.
  • After one side is cooked to satisfaction, turn and coat other side and repeat.
  • Then eat and enjoy.

2 lbs. elk steak
¼ cup olive oil
1½ tbsp lime juice
1 tbsp orange juice
1 tbsp Worcestershire
1½ tsp soy sauce
1 tsp hickory liquid smoke
1½ tsp sea salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked chipotle pepper
1 tsp dried rosemary
2 tbsp butter ((optional))

Steps:

  • Whisk all the wet marinade ingredients into a bowl, then add the spices and whisk to combine.
  • Add the steaks and the marinade to a large Ziploc bag and seal. Massage the marinade into the steaks and marinate for 4+ hours.
  • Heat a cast-iron skillet and make sure it's nice and oiled (or add 1 to 2 tablespoons of butter). Cook steak over medium-high heat for 2 to 3 minutes. Flip to the other side and cook for 2 to 3 minutes more, for medium-rare. Don't overcook it or it will dry out.
  • Allow the steaks to rest for a few minutes before serving.

1 ribeye steak, 2 inch (5 cm) thick, preferably USDA Prime
salt, to taste
pepper, to taste
3 tablespoons canola oil
3 tablespoons butter
3 cloves garlic, peeled and smashed
2 sprigs fresh rosemary
3 sprigs fresh thyme

Steps:

  • Preheat oven to 200°F (95°C).
  • Generously season all sides of the steak with salt and pepper.
  • Transfer to a wire rack on top of a baking sheet, then bake for about 45 minutes to an hour until the internal temperature reads about 125°F (51° C) for medium-rare. Adjust the bake time based on if you like your steak more rare or more well-done (you monster).
  • Heat the canola oil in a pan over high heat until smoking. Do not use olive oil, as its smoke point is significantly lower than that of canola oil and will smoke before reaching the desired cooking temperature.
  • Sear the steak for 30 seconds on the first side, then flip.
  • Add the butter, garlic, rosemary, and thyme and swirl around the pan.
  • Transfer the garlic and herbs on top of the steak and baste the steak with the butter using a large spoon.
  • Baste for about 30 seconds, then flip and baste the other side for about 15 seconds.
  • Turn the steak on its side and cook to render off any excess fat.
  • Rest the steak on a cutting board or wire rack for about 10 minutes. Slicing the steak before the resting period has finished will result in a lot of the juices leaking out, which may not be desirable.
  • Slice the steak into ½ -inch (1 cm) strips, then fan out the slices and serve.
  • Enjoy!

My husband brought home a freezers worth of elk meat from a hunt in Montana. I am a firm believer in eating whatever is brought home from a hunt. I really love elk meat! It has a mild flavor and is a good source of lean protein. If marinated, even the "tougher" cuts come out great. I recommend cooking to medium/medium rare for ideal tenderness, but I have had it cooked well done and it is still tasty. My husband remembers the smell of the field dressing the elk in full rut, so I came up with the recipe to "help" him enjoy elk as much as I do.

2 elk steaks
1/4-1/2 cup Italian dressing
1 -2 teaspoon McCormick's Montreal Brand steak seasoning

Steps:

  • Using a fork or other tenderizing tool, puncture both sides of the elk steaks.
  • Place elk steaks in a pan or dish.
  • Sprinkle Italian dressing over the steaks. Turn to coat the opposite side of the steaks. (I use Good Seasons Italian Dressing that I make using red wine vinegar.)
  • Sprinkle McCormick's Brand Montreal steak seasoning to coat one side of the steaks. (You could sprinkle seasoning over both sides, but if you use too much seasoning, you'll overpower the taste of the meat.).
  • Cover the steaks with foil and place in the fridge.
  • *Marinate at least an hour, overnight if possible.
  • Grill steaks over medium heat approximately 5-6 minutes on each side depending on the thickness of the steaks and the desired doneness.
  • Serve with mushrooms. Enjoy!
  • *Prep time does not include marinating time.

Here's what you need: pizza dough, bunapi mushroom bunch, medium oyster mushrooms, olive oil, beef flat iron steak, Grill Mates® Montreal Steak Seasoning, shredded mozzarella cheese, shredded parmesan cheese, McCormick® Dried Parsley

1 lb pizza dough
1 bunapi mushroom bunch, roots trimmed
3 medium oyster mushrooms
½ cup olive oil, divided
¼ lb beef flat iron steak
1 ½ tablespoons Grill Mates® Montreal Steak Seasoning, plus more for garnish
1 cup shredded mozzarella cheese
⅓ cup shredded parmesan cheese
½ teaspoon McCormick® Dried Parsley

Steps:

  • Preheat the grill to 350°F (180°C).
  • Roll the pizza dough out to ½ inch (1.24 cm) thick in your desired shape and place on a baking sheet. Brush ¼ cup (60 ml) olive oil over both sides of the dough.
  • Break apart the bunapi and oyster mushrooms into thick chunks. Transfer to a small bowl and toss with 2 tablespoons of olive oil and ½ tablespoon Grill Mates® Montreal Steak Seasoning.
  • Slice the flat iron steak into ½-inch-thick strips. Transfer to a medium bowl and toss with 1½ tablespoons of olive oil and the remaining 1 tablespoon Grill Mates® Montreal Steak Seasoning.
  • Arrange the steak strips on one side of the grill. Cook until light pink in the center, 3-4 minutes per side. Arrange the mushrooms on the other side of the grill and cook until lightly browned around the edges and tender, about 2 minutes per side. Transfer the steak and mushrooms to a cutting board. Break apart some of the mushrooms and chop the steak strips into smaller, bite-size pieces.
  • Place the oiled pizza dough directly on the grill grates. Close the lid and grill for about 4 minutes, until the bottom is light browned and cooked through. Flip the pizza dough and sprinkle with the mozzarella and Parmesan cheeses. Scatter the mushrooms and steak on top of the cheese. Sprinkle with more Grill Mates® Montreal Steak Seasoning. Close the lid and cook for another 5 minutes, until the cheese is melted and the pizza dough is cooked through.
  • Remove the flatbread from the grill and top with the McCormick® Dried Parsley and remaining ½ tablespoon olive oil. Serve immediately.
