Here's what you need: eggs, salt, pepper, unsalted butter

4 eggs
salt, to taste
pepper, to taste
1 tablespoon unsalted butter

Steps:

  • In a bowl, whisk the eggs. Add salt and pepper to taste. Whisk to combine.
  • Add the butter to a nonstick skillet over medium heat. Once the butter has melted and begins to bubble, turn the heat to low, and add the eggs.
  • Using a spatula, gently push the eggs back and forth across the pan until they are cooked to your liking.
  • Enjoy!

2 slices white bread
1/3 cup shredded cheddar cheese
1 green onion, chopped
2 slices Canadian bacon, finely chopped
1/4 teaspoon garlic powder
1/4 teaspoon minced fresh basil
2 eggs, lightly beaten
2 tablespoons butter
2 tablespoons plus 2 teaspoons hollandaise sauce mix
1/2 cup water
Minced fresh parsley

Steps:

  • Coat two 8-oz. ramekins or custard cups with cooking spray; line each with a slice of bread. Layer with cheese, onion, Canadian bacon, garlic powder and basil. Pour eggs into cups. , Place on a baking sheet. Bake at 350° for 20-25 minutes or until a thermometer reads 160°., In a small saucepan, melt butter. Whisk in sauce mix; gradually stir in water. Bring to a boil; cook and stir for 1 minute or until thickened. Gently remove bread cups to serving plates; serve with hollandaise sauce and parsley.

1 cup frozen cubed hash brown potatoes, thawed
1/4 cup chopped onion
2 tablespoons butter
1 cup fresh or frozen broccoli florets
1/2 cup julienned fully cooked ham
4 eggs
1 tablespoon milk
1/4 to 1/2 teaspoon lemon-pepper seasoning
1/4 teaspoon dill weed, optional

Steps:

  • In a skillet, cook the potatoes and onion in butter over medium heat until lightly browned, about 10 minutes. Add broccoli; cook until tender. Stir in ham. , In a bowl, beat eggs, milk, lemon-pepper and dill if desired. Pour over potato mixture; cook for 3-5 minutes or until eggs are completely set, stirring occasionally.

3 extra large eggs
2 teaspoons soy sauce
1 teaspoon oyster sauce
½ teaspoon sesame oil
3 tablespoons vegetable oil
6 slices fresh ginger
1 large clove garlic, smashed
1 cup fresh bean sprouts
½ cup chopped roast pork loin
½ cup chopped cooked chicken breast
¼ cup chopped mushrooms
¼ cup chopped green onions

Steps:

  • Whisk eggs, soy sauce, oyster sauce, and sesame oil together in a glass measuring cup. Add enough water to make 1 cup; whisk until blended.
  • Heat vegetable oil in an 11-inch nonstick omelet pan over medium-high heat. Cook and stir ginger and garlic until browned, 1 to 2 minutes. Discard ginger and garlic.
  • Cook and stir bean sprouts, pork loin, chicken breast, mushrooms, and green onions in the same skillet until heated through, about 2 minutes. Transfer to a bowl.
  • Reheat skillet over medium-high heat. Pour in 1/2 cup egg mixture, tilting skillet to coat the bottom. Cook for 30 seconds. Spread half of the bean sprout mixture over one side of the egg layer. Reduce heat to low; cook until eggs are set, 3 to 5 minutes. Fold over omelet and slide onto a plate.
  • Repeat with remaining 1/2 cup egg mixture and bean sprout mixture to make second omelet.
