BANANA PUDDING
Banana pudding is a Southern dessert favorite. It's no wonder. This luscious banana dessert is so easy to make and hits just the right note every time you serve it.

Steps:
- Combine 1/2 cup sugar, flour and salt in the top of a double boiler. Mix well. Sir in 1 egg, 3 yolks and milk. Mix well. Place over boiling water. Cook, stirring constantly, until smooth and thickened.
- Remove the mixture from the heat and stir in the vanilla. Spread 1/4 cup of the pudding in a 1 3/4 quart casserole. Arrange 12 wafers over the pudding. Top with 1/3 of the banana slices and 1/3 of the remaining pudding. Repeat the layers twice.
- Beat 3 egg whites (at room temperature), at the high speed of an electric mixer, for 1 minute. Gradually add 1/4 cup sugar, 1 tablespoon at a time. Beat until stiff peaks form and the sugar dissolves (2-4 minutes). Spread the meringue over the pudding, sealing to the edge of the casserole.
- Bake at 350°F for 12-15 minutes or until golden brown.

Steps:
- Place the bananas, egg yolks, sugar, cornstarch, vanilla and milk into a blender and blitz until smooth.
- Transfer mixture to a saucepan and cook over medium heat until thick stir constantly for about 8-10 minutes.
- Pour mixture into a heat safe bowl, cover and chill for at least 4 hours
- To serve, scoop a few spoonfuls of pudding into a serving glass. Add one layer of vanilla wafers, then whipped cream. Repeat.
- Serve or allow to sit in the fridge for up to 4 hours.

EASY AND DELICIOUS BANANA PUDDING
My mom used to make this for us as kids. I use cool whip on the top, but it can also be done with a meringue. Just prepare it in an oven proof baking dish and spread your favorite meringue reicpe over the top and bake until slightly golden on top. MMM mmmmm!

Steps:
- 1. Line the bottom of a clear glass bowl with 15 vanilla wafers, or enough to cover the bottom.
- 2. Peel and slice 2 ripe bananas and layer slices over vanilla wafers.
- 3. Prepare pudding according to package directions. Cool for five minutes.
- 4. Pour half of pudding over bananas and vanilla wafers; Repeat layers with remaining bananas, wafers and pudding.
- 5. Chill in refrigerator for 2-4 hours.
- 6. Spread whipped topping over the top of pudding. Serve chilled.

Steps:
- In a large bowl whisk together the milk and sweetened condensed milk then sprinkle in the instant pudding and mix until completely incorporated with no lumps remaining. You can do this by hand or with an electric mixer. Refrigerate for 5 minutes or until set.
- Add 3 cups of whipped cream with two tablespoons of sugar and 2 teaspoons of vanilla to a bowl then mix on high until stiff peaks from.
- Remove pudding from the refrigerator then fold the whipped cream into it.
- Add a layer of cookies to the bottom of your trifle dish or a larger bowl. Place a quarter of the pudding mixture over then smooth using a spatula. Add another layer of cookies then place a row of cookies facing the horizontal edge of your dish. Add a layer of banana slices on top then add another quarter of the pudding mixture and smooth.
- Continue layering with cookies, bananas and pudding until complete. Alternate a row of banana slices with the cookies you're pressing against the wall of the trifle dish. Chill for three hours.
- For the topping whip cup of cup of cream with a tablespoon of sugar and a teaspoon of vanilla to stiff peaks. Pile on top and crumble the remaining cookies over then serve.
