CORN BALLS
Whenever I serve my Corn Balls, it's just about certain someone will ask for the recipe-I've gotten more requests for it than any other I've ever tried. I usually make them when we have company as a nice change-of-pace side dish. They're great with ham, steak or roast beef. My husband and I have two young children, 3 and not quite 1. I grew up on a dairy farm. Today, we live on a small farm where I tend to chickens.

Steps:
- In a small saucepan, cook onion and celery in butter until tender; set aside to cool. , In a large bowl, combine the croutons, corn, eggs, water, salt, pepper and onion mixture. Shape into eight to 10 balls. , Place in an ungreased shallow baking dish. Bake, uncovered, at 375° for 25-20 minutes.

Steps:
- Place croutons in a large bowl and set aside. In a skillet, saute celery and onion in 1/2 cup butter. Add the corn, water, poultry seasoning, salt and pepper; bring to a boil. Remove from the heat; cool for 5 minutes. Pour over croutons. Add egg yolks and mix gently. Shape 1/2 cupfuls into balls; flatten slightly. Place in a greased 15x10x1-in. baking pan. Melt remaining butter; drizzle over stuffing balls. Bake, uncovered, at 375° for 30 minutes or until lightly browned.

- Place popcorn in a large baking pan; keep warm in a 200° oven. , In a heavy saucepan, combine the sugar, corn syrup, water and salt. Cook over medium heat until a candy thermometer reads 235° (soft-ball stage). , Remove from the heat. Add the butter, vanilla and food coloring if desired; stir until butter is melted. Immediately pour over popcorn and stir until evenly coated. , When mixture is cool enough to handle, quickly shape into 3-in. balls, dipping hands in cold water to prevent sticking.

- Corn ... The one thing I like to do, but it is NOT necessary; is to pulse the corn a couple of times in a food processor - just until you get a coarse texture. DON'T go too far, just a couple of times. Again, it is not necessary; but, I prefer the texture.
- Saute ... Bring a non-stick pan up to medium high heat; and, add the oil. I prefer to use canola or vegetable oil in this recipe. Add the corn and saute 3-4 minutes. Then, add the green chilies, scallions, cumin, chili powder, salt, and pepper; and cook another 3-4 minutes.
- Cornbread Mix ... Add the flour and water (make sure it is warm) together; and, mix until it is completely combined. Pour over the corn mixture; stirring until everything is mixed through. The heat will start to thicken the mix; and, create a dough. Remove from the heat, and stir in the cheese. Make sure to taste; and re-season if necessary. If the dough seems a bit wet or sticky; simply add a bit more flour. Then, transfer the mix to a bowl; and, completely cool. I like to let it set a good hour.
- Balls and Baking ... This dough or batter will make around 12-15 balls; depending on the size. Using a tablespoon or scoop (dipped in warm water) - which will prevent the dough from sticking; make the corn bread balls. I like to dust my hands in flour; which prevents the dough from sticking. Transfer them to a baking sheet lined with parchment paper or foil topped with a baking rack (for easy clean up). The baking rack will allow the 'balls' to brown on all sides. I also like to spray the 'balls' with a non stick spray - this will allow them to get golden brown. Now, if you don't have a baking rack, DO NOT panic; simply spray the parchment paper or foil with a non stick spray first. It will also work just fine.
