EASY ROTISSERIE CHICKEN RECIPE



Easy Rotisserie Chicken Recipe image

Made in the oven or rotisserie oven this results in perfectly juicy, moist, and crispy chicken!

1 small fryer chicken (about 3.5lbs)
1 tablespoon olive oil
1/2 teaspoon paprika
1/4 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
salt & pepper to taste

Steps:

  • Combine all seasonings in a small bowl and mix well.
  • To prepare chicken, dab dry with paper towels.
  • Rub the outside of the chicken with olive oil and season generously with the spice mixture.
  • Gently fold the wings behind the chicken. Using kitchen twine, tie the legs together.

1 large roasting chicken (butterflied)
1 Tbsp olive oil
1 tsp kosher salt (or sea salt)
1 tsp garlic powder
1 tsp onion powder
1 tsp sweet paprika
1/2 tsp ground rosemary
1/4 tsp cayenne pepper

Steps:

  • Rub the chicken with oil then sprinkle with the seasoning all over and pat down to make them stick. Set the chicken aside while you are preparing the rotisserie.
  • Preheat the grill to about 300F at the spit level. Add some cherry wood chunks or chips for smoke.
  • Place the chicken on the rotisserie spit and secure with forks. Place the spit on the grill. Start the motor and close the lid. Roast for about 60-75 minutes or until the chicken is cooked through.

Though not a traditional Indian dish, since there is no sauce, the spices used on these roasted vegetables may remind you of Indian flavors. Your favorite recipe for tikka masala would be nice to serve with this, along with some white rice and naan. Dial back the heat, if you like, or bring it, with an extra dash or two of cayenne--your choice!

1 medium red onion, cut into 8 wedges
3 carrots, peeled and chopped into 1-inch pieces
3 parsnips, peeled and cut into 1-inch chunks
3 medium beets, peeled and cut into 1/2-inch cubes
1 medium sweet potatoes, peeled and cut into 1-inch pieces
4 tablespoons extra-virgin olive oil
1 teaspoon ground ginger
1 teaspoon ground coriander
1 teaspoon ground cumin
½ teaspoon ground turmeric
¼ teaspoon garlic powder
¼ teaspoon cayenne pepper, or to taste
1 pinch salt and freshly ground black pepper to taste
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Combine red onion, carrots, parsnips, beets, and sweet potato in a large bowl. Toss vegetables with olive oil.
  • Combine ginger, coriander, cumin, turmeric, garlic, cayenne, salt, and pepper in a small bowl. Sprinkle spice mix over the vegetables and toss to coat evenly. Spread vegetables out evenly on the prepared baking sheet.
  • Roast on the center rack of the preheated oven until beet pieces can easily be pierced with a fork, about 40 minutes.
  • Garnish with fresh cilantro. Serve warm or at room temperature.

My hubby came up with this recipe based on a desire to have a rotisserie chicken in our Showtime Rotisserie but was a little tired of the same 'ol rub that we traditionally use. We are both HUGE fans of Indian Cuisine and therefore this fabulous recipe came to be! Hope you enjoy it as much as we do! We have not experimented with roasting the chicken in the oven, but I assure you, if you can let the skin crisp up the same way that it does in a rotisserie..you won't be disappointed!

3 -4 lbs whole chickens
1/2 cup kosher salt
1 tablespoon garam masala
1 tablespoon ground cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1 teaspoon ground black pepper
2 tablespoons olive oil

Steps:

  • 1.Soak thawed chicken for two hours in a mixture of 1/2 cup Kosher salt and enough water to cover.
  • 2.Remove bird, rinse with cold water and dry thoroughly.
  • 3.Mix together the garam masala, ground cumin, cayenne pepper, 1/2 tsp salt, and black pepper, set aside.
  • 4.Rub entire bird with the olive oil and seasoning mixture.
  • 5.Let bird marinade for approximately 30 minutes prior to cooking.
  • 6.Place in rotisserie (as your rotisserie directions state) and cook for approximately 1 hour and 20 minutes or until bird is done.
  • 7.Serve with jasmine rice and Enjoy!
