GERMAN FRESH FRUIT TORTE



German Fresh Fruit Torte image

Here is a traditional German fruit torte recipe with cream and sponge cake. Serve this cake at coffee time for Kaffee und Kuchen.

1 purchased cake base (such as "Bavarian" Sponge Cake)
2 teaspoons liqueur (your choice or sugar syrup)
1 package of 4 servings, vanilla pudding mix (or 2 cups prepared vanilla pudding)
1 3/4 cups milk (for vanilla pudding mix)
2 cups strawberries (or kiwi, berries, or other fruits)
1 cup apple juice
1 package gelatin (1/4 ounces)
1 to 2 tablespoons sugar (or to taste)

Steps:

  • Sprinkle or brush cake base lightly with fruit schnapps , liqueur, or sugar syrup to moisten but not douse.
  • Prepare pudding according to directions for pie filling. Look at the following recipes if you would like to make vanilla pudding from scratch or if you would like to make pastry cream . If it is cooked, then cool until thickened. If it is instant, let it set a few minutes. Spoon into purchased sponge cake base and chill (Note: the German sponge cakes have a lip to hold in the pudding and fruit. They are baked in a special mold).
  • Wash and prepare fresh fruit. Cut strawberries in half, peel and slice kiwi, etc. Arrange fruit decoratively on top of the pudding. You can also overlap sliced fruit if you wish. Place cake back in the refrigerator while you make the glaze.
  • In Germany, you can buy tortenguss or cake glaze, which you simply mix with water. You can also order it online. If you don't have access to this product, it is easy to make a glaze which helps hold the fruit on the cake and seals in the fruit, so that it stays fresher, longer. It can be made with agar ​or gelatin, and sometimes cornstarch.
  • To make the glaze shown here, sprinkle the package of gelatin over cold apple juice and let it swell for five minutes. Add 3/4 cup hot apple juice (plus one or two tablespoons sugar, as desired), stirring constantly until gelatin is dissolved. You may need to heat this mixture slightly but do not bring it to a boil or the gelatin loses the ability to gel. Place this mixture in the refrigerator until it starts to thicken.
  • Pour, spoon, or brush the glaze over the cake. Refrigerate the cake for at least one hour and make sure the glaze has set before serving.

1/2 cup confectioners' sugar
1 1/2 cups all-purpose flour
3/4 cup unsalted butter, softened and sliced
1 (8 ounce) package cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
fresh strawberries, kiwi slices, blueberries, raspberries
1 (6 ounce) can frozen limeade concentrate, thawed
1 tablespoon cornstarch
1 tablespoon fresh lime juice
1/4 cup granulated sugar
whipped cream, for garnish (I make my own)

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crust: In a food processor, combine the confectioners' sugar, flour, and butter, and process until the mixture forms a ball. With your fingers, press the dough into a 12-inch tart pan with a removable bottom, taking care to push the crust into the indentations in the sides. Pat until the crust is even. Bake for 10 to 12 minutes, until very lightly browned. Set aside to cool.( you may do this as individuals as well).
  • For the filling and topping: Beat the cream cheese, sugar, and vanilla together until smooth. Spread over the cooled crust. Cut the strawberries into 1/4-inch slices and arrange around the edge of the crust. For the next circle, use kiwi slices. Add another circle of strawberries, filling in any spaces with blueberries. Cluster the raspberries in the center of the tart.
  • For the glaze: Combine the limeade, cornstarch, lime juice, and sugar in a small saucepan and cook over medium heat until clear and thick, about 2 minutes. Let cool. With a pastry brush, glaze the entire tart. You will not use all of the glaze.
  • Keep the tart in the refrigerator. Remove about 15 minutes before serving. Slice into 8 wedges and serve with a dollop of whipped cream if desired.

1/2 cup cubed fresh pineapple
1/2 cup sliced peeled kiwifruit

1 teaspoon chopped seeded jalapeno pepper, optional
2 whole wheat tortillas (8 inches), room temperature
Butter-flavored cooking spray

Steps:

  • Mix 2 teaspoons sugar and cinnamon. In another bowl, toss fruit with remaining sugar and, if desired, jalapeno., Coat both sides of tortillas with cooking spray. In a large skillet, cook tortillas until golden brown, 45-60 seconds per side., Remove from pan and dust immediately with sugar mixture. Top with fruit mixture; fold to serve.

Steps:

  • Combine water, yeast, and sweetening . Add milk powder. Let sponge rise 30 to 40 minutes. Add WW flour (7 - 8 Cups), a cup at a time. Beat 100 times with spoon. Mixes in air and knead dough. Set bowl in warm place 85 to 100 F and let it rise for an hour. This rising lets the yeast get started without the salt. Gluten is formed too. Fold in salt, oil, another 6 to 8 cup flour. Don't stir or cut Knead the dough Let it rise another hour. Punch it down Let it rise 40 to 50 minutes. Shape into loaves Let it rise another 15 to 25 minutes. Slit top and bake 350℉ (180℃) for 50 -70 minutes.

1 cup unbleached white flour
1 cup whole-wheat flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter or margarine
2 eggs
1/2 cup milk

Steps:

  • Preheat the oven to 450 degrees. Combine flours, baking powder and salt. Cut butter or margarine into dry ingredients with a pastry cutter or two knives, or rub gently between hands until pea-size pieces are formed.
  • Make a well in the center and add the eggs and milk. Beat the eggs and milk with a fork until smooth. Continue stirring with the fork, gradually incorporating flour until it is all moistened.
  • On a floured board, knead the dough just enough to bring it together. Roll the dough into a rectangle 1/2-inch thick. Fold in thirds. Turn the dough a quarter-turn and repeat, rolling and folding. Repeat once more. (The rolling and folding make a flakier biscuit.)
  • Roll out the dough again to a 1/2-inch thickness. Cut into rounds with a floured cutter or glass. Place on an ungreased cookie sheet and bake at 450 degrees for 8 to 10 minutes, until the bottoms are lightly browned and the tops slightly golden. Do not overbake.

This is a great recipe my husband loves to make - it's a whole meal in it self and very simple to put together. Serve with salsa, sour cream, or guacamole if desired.

1 pound chorizo sausage, casings removed and crumbled
1 cup chopped onion
2 cloves garlic, finely chopped
1 (4 ounce) can chopped green chile peppers, drained
8 (10 inch) flour tortillas
2 cups shredded Pepper Jack cheese, divided
1 (16 ounce) can refried beans, divided
1 (7 ounce) jar roasted red peppers, drained

Steps:

  • In a large skillet or frying pan, cook chorizo, onion and garlic over medium heat. Cook, stirring occasionally, until sausage is done. Drain off grease, stir in chilies and set aside.
  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 10 inch pie plate.
  • Place 2 tortillas in pie plate. Spread half of the sausage mixture over tortillas. Sprinkle with half of the cheese. Place 2 tortillas on top of cheese. Spread with beans. Place 2 tortillas on beans and place peppers on tortillas. Place 2 tortillas on top of peppers. Spread with remaining sausage mixture. Sprinkle with remaining cheese.
  • Cover and bake in preheated oven for 40 minutes. Uncover and bake 15 minutes more, or until cheese is melted and center is hot. Cool 10 minutes before cutting.

Another dessert adapted from my old Tassajara Cookbook. I especially like to make this with berries of various types, but can also be made with apples, peaches, pears or whatever.

1/2 teaspoon mace
1 teaspoon vanilla extract
1/2 cup shortening
1 cup white sugar
1 cup sifted white flour
1/2 cup cornstarch
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/4 cup milk
2 large beaten eggs
2 tablespoons honey or 2 tablespoons sugar
1 cup sour cream
1 teaspoon vanilla extract
fruit, in season chopped or sliced

Steps:

  • Blend mace and vanilla with shortening.
  • Cream in sugar.
  • Sift together flour through baking powder.
  • Beat eggs and milk together.
  • Add dry and milk mixtures to shortening.
  • Grease and flour a 9-inch round cake pan or 8-inch square baking pan.
  • Add batter.
  • Bake at 350°F approximately 45 minutes until center is dry when tested with a toothpick.
  • Cool in pan 20 minutes.
  • Turn onto wire rack.
  • Turn right side up.
  • Mix honey or sugar with sour cream and vanilla.
  • Mix in fruit pieces.
  • Use as topping on torte.

  • Pre-heat your oven to 350 degrees. Lightly coat the bottom and sides of a 9-inch springform pan with non-stick cooking spray. Set aside.
  • In the bowl of your stand mixer with the paddle attachment, beat together 1 cup of the sugar with the butter until light and fluffy, about 2-3 minutes. Add in the eggs one at a time, beating after each addition and scraping down the sides of the bowl as necessary. Add the flour, baking powder and salt and beat until the ingredients are just combined and no more dry spots remains.
