Steps:
- Roll out the pastry on a lightly floured surface until big enough to line a 23cm fluted tart case, about 3cm deep. Line the tin with the pastry and fold the overhang over the sides. Chill for 30 mins.
- Heat oven to 200C/180C fan/gas 6. Line the tart with greaseproof paper and baking beans. Bake blind for 20 mins. Remove the beans and paper and bake for 10 mins more until the pastry is pale golden and sandy.
- Meanwhile, mix the golden syrup, breadcrumbs, lemon zest and juice, ground ginger and eggs together. Once the pastry is ready, lower the oven to 160C/140C fan/gas 3. Using a small serrated knife, carefully trim the edges, then tip in the treacle mixture and bake for 55 mins-1 hr until the filling is golden and crisp, and feels set to the touch.
- When the tart comes out of the oven, arrange the ginger slices over the top. Drizzle with some syrup from the ginger jar, then lift from the tin to a serving plate and serve warm with vanilla ice cream or custard.

GINGER HIBISCUS TEA
Ginger Hibiscus Tea is a great drink to have during chemo treatment. It combines hibiscus and ginger, a truly heavenly blend. The result is a glorious, naturally ruby red tea rich in vitamin C, beta-carotene and antioxidant flavonoids. Try it poured over ice for a refreshingly different summer drink. Dried hibiscus flowers have a wonderful tart taste that pleasantly neutralizes any bad taste in the mouth from chemo drugs plus hibiscus has the added benefit of lowering high blood pressure. Ginger brings spiciness as it cools the body and aids the digestion. So good.

Steps:
- Put the dried hibiscus flowers and ginger, into a measuring cup or pot big enough to hold 8 cups. Cover with the boiling water, and steep for 5 minutes or until you have the desired strength. The longer you leave it to steep, the stronger and more intense the flavor will be.
- Strain the tea into a jug or carafe through a fine sieve. It will be a gorgeous dark red. Stir in the agave or honey to taste. Serve hot or poured over ice.

HONEY-LEMON GINGER TEA
I visited a coffee shop in Hartford on a cold winter day and ordered their honey lemon ginger tea. It was tart, sweet, full of flavor, and warmed me from head to toe. The proprietor was nice enough to give me a rough description of her recipe. After a few tries at home, I came up with this close version.

TART ROSE AND GINGER TEA
All fresh and natural ingredients! I dry rose petals to use when my bush isn't in blossom, but fresh petals are always preferable. I make this tea to help reduce inflammation and pain I have from endometriosis, and it really helps me a lot!

TONICS AND TEAS FROM MY PANTRY
There is a lot going on in this lovely infusion, with the tart lemon and pungent ginger. Turmeric contributes beautiful color, along with its nutritional benefits - it has been shown to have powerful anti-inflammatory and antioxidant attributes -- and the tiny pinch of cayenne packs a small punch. If you feel a sore throat coming on I highly recommend this tea.

- Slice the fresh ginger into quarter-inch thick slices. Lay them on a cutting board and hit each slice with the back of a knife from one end to the other. Turn and do the same in the other direction. Flip and repeat on the other side then place into a 3-quart sauce pan.
- Slice the lemon and remove seeds then slice each half in half. I did not use the whole lemon, the amount you use is up to you. Add to the pan along with the monk fruit sweetener and water and bring to a boil.
