QUICK CHERRY SALSA
This quick and easy cherry salsa is a simple mixture of cherry jam and a can of diced tomatoes with chilies, that can be customized with more add-in's for extra flavor.

- Combine the jam and the can of diced tomatoes with chilies in a mixing bowl. Then stir in the tomato paste for some extra thickening.
- You can also add in some diced onions or minced garlic for extra flavor.
- I like the amount of heat with just the diced chilies in the can of tomatoes but if you like things spicier, a pinch or two of red pepper flakes can be added as well.
- Keep the finished salsa in the refrigerator. This recipes makes about 2 cups and will last in the refrigerator for a couple of weeks.
SOUR CHERRY SALSA

Steps:
- If using fresh cherries, coarsely chop, then stir together with sugar in a small bowl until sugar is dissolved, about 5 minutes. If using frozen cherries, thaw in a small bowl, reserving any juices in bowl, then coarsely chop and stir together with sugar in same bowl. Stir in onion, jalapeño, lime juice, cilantro, and salt and let stand at room temperature 30 minutes for flavors to develop.
CHERRY SALSA
Steps:
- Mix all ingredients in a medium mixing bowl until well combined. Serve with your favorite chips.
TART CHERRY SALSA
Yield One cup

Steps:
- Let cherries thaw; drain, reserving one tablespoon cherry juice. Chop cherries and combine with onion, jalapeño, garlic and cilantro in a medium saucepan; mix well. Combine reserved cherry juice and cornstarch in a small bowl; mix until smooth. Stir into cherry mixture. Cook, stirring constantly, over medium heat until mixture is thickened; cool. Keep refrigerated. Tip: Tuck small jars of salsa (and the recipe) inside the pockets of a flowery vintage apron...what a sweet gift!
