SHRIMP SANDWICHES WITH TARRAGON-CAPER MAYONNAISE



Shrimp Sandwiches with Tarragon-Caper Mayonnaise image

Yield Makes 6 servings

Number Of Ingredients 13

1/3 cup mayonnaise
2 tablespoons drained capers, finely chopped
1 1/2 tablespoons grated sweet onion (such as Vidalia or Maui)
1 tablespoon chopped fresh tarragon
1/4 teaspoon celery seeds
1/4 teaspoon (or more) hot pepper sauce
1/2 cup finely chopped celery heart with leaves
2 tablespoons (1/4 stick) butter, room temperature
12 small (3-inch round) soft sandwich rolls or 6 hot dog buns
1 pound cooked peeled deveined large shrimp, each cut horizontally in half
Tomato slices (optional)
Avocado slices (optional)
Thinly sliced butter lettuce (optional)

Steps:

  • Mix first 5 ingredients and 1/4 teaspoon hot sauce in medium bowl. Mix in celery. Season with salt and pepper and more hot sauce, if desired. DO AHEAD Mayonnaise can be made 6 hours ahead. Cover; chill.
  • Lightly butter cut sides of rolls. Heat griddle or large nonstick skillet over medium heat. Add rolls, buttered side down, to griddle and cook until golden, 1 to 2 minutes. Spread mayonnaise over bottom of each bun. Top with shrimp, tomato, avocado, and lettuce, if desired. Cover with top buns. Transfer to plates.

Spread this between a bun with cold salmon patties and a red onion (see my recipe #155183) it's better than any hamburger lol! Plan ahead this needs to chill for a minimum of 2 hours, overnight is even better! Double the recipe if desired.

1 cup mayonnaise
1/4 cup plain yogurt
1 pinch garlic powder (or to taste)
3 green onions, chopped
1 tablespoon small caper
1 tablespoon fresh lemon juice
1 teaspoon dried tarragon (or use 1 tablespoon finely chopped fresh tarragon)
2 teaspoons Dijon mustard
2 teaspoons prepared horseradish
salt and pepper

Steps:

  • In a bowl mix all ingredients.
  • cover and chill for a minimum of 2 hours before serving (better if chilled for 24 hours).

4 cups cooked and shredded chicken (I roasted 2.5 pounds of bone-in breasts)
1/2 cup good-quality mayonnaise (I prefer Duke's or homemade)
1/4 cup sour cream
1 tablespoon finely chopped fresh tarragon (or more to taste)
1/2 cup chopped red grapes
1/4 cup coarsely chopped pecans
Salt and pepper, to taste
Sliced whole wheat bread, for sandwiches

Steps:

  • In a medium bowl mix chicken, mayonnaise, sour cream, and tarragon until well combined. Season with salt and pepper, to taste. Fold in grapes and pecans. Chill for at least one hour. Check seasoning again and adjust, if desired. The chicken salad can be made at least 24 hours in advance. Scoop chicken salad onto a slice of bread. Top with another slice of bread. Cut off crusts, then cut sandwich into desired shape (rectangles, triangles, or rounds).

Pour over crabmeat mixture and toss to coat., Cook bacon according to package directions. On six bread slices, layer with lettuce, tomato, bacon and crab mixture. Top with remaining bread.,

1/4 to 1/3 cup mayonnaise
Salt and black pepper, to taste
Optional: no-salt herb blend , to taste
Optional: garlic powder, to taste
Optional: onion powder, to taste
Optional: cayenne pepper, to taste

Steps:

  • Gather the ingredients.
  • Mince cooked chicken finely and put in a medium bowl.
  • Add 1/4 cup mayonnaise and salt and pepper, to taste. Mix gently. Add extra mayonnaise, as needed, until spread reaches desired consistency.
  • If you like, flavor the spread with a no-salt herb blend, a little garlic or onion powder, or a dash of cayenne pepper.
  • Spread in between slices of bread and enjoy.
