LOBSTER ROLL

- For the lobster sauce: In a medium saucepan over medium-high heat, reduce the white wine and tarragon vinegar with the peppercorns, shallots, bay leaf, tarragon and thyme until the mixture is nearly dry, about 10 minutes. Add the half-and-half and reduce by two-thirds, about 5 minutes.
- Decrease the heat to low and whisk in the butter, chunk by chunk, stirring vigorously until each piece is nearly melted. Remove the lobster sauce from the heat and season it with lemon juice and salt. Strain the lobster sauce through a fine mesh chinois. Hold the lobster sauce warm in a saucepan over very low heat until the lobster meat is ready.
- For the lobsters: Bring a large pot of salted water to the boil. Prepare a bath of icy water. Kill the lobsters by placing them on their backs on a cutting board and inserting a knife tip into their heads between the antennae. Drop the lobsters in the boiling water for 20 seconds and immediately shock them in the ice bath to stop the cooking. Extract the tail, claw and knuckle meat from the lobsters. The meat will still be translucent and raw. Remove the mud line from the tails and dice the tail meat into bite-size chunks.
- Add the lobster meat to the lobster sauce. Very slowly warm the meat until it is just barely cooked through. Be sure to agitate the pan frequently to prevent the lobster sauce from breaking. If it does start to break, sprinkle it with a few drops of cold water and take it off the heat for a moment.
- For the lobster rolls: In a saute pan, toast the sides of the buns with butter until crispy and golden. Spoon the cooked lobster meat into the prepared buns. Add as much lobster sauce as desired. Drizzle the lobster rolls with Mayo Mustard, drizzle with yogurt and sprinkle liberally with chives. Serve with lemon wedges.
- Combine the dried mustard with 1 1/2 teaspoons water and lemon juice. Whisk in the mayo, Dijon, hot sauce and salt to taste.
LOBSTER ROLLS
Some people like only mayonnaise or melted butter on their lobster rolls, but we love the added flavor that fresh herbs provide.

- Stir together lobster and mayonnaise. Stir in chives and tarragon (if desired), and lemon juice; season with salt and pepper. Refrigerate, covered, while preparing rolls, or up to 2 hours.
- Heat a large heavy skillet or griddle over medium heat until hot. Lightly brush outside of buns with butter; transfer to skillet. Cook, turning once, until golden brown, about 1 1/2 minutes per side.
- Spoon about 1/2 cup lobster mixture into each bun. Serve immediately.
TARRAGON LOBSTER ROLL
Nilou Motamed, Epicurious Editor-in-Chief, swears by this herb-infused lobster roll recipe inspired by her father-in-law Michael DePorte. When available, Nilou prefers soft-shell lobsters, or shedders, for their easy-to-crack shells (no tools required!) and sweet, tender meat. If you choose soft-shell lobsters, reduce the cooking time by 2 to 3 minutes. She also prefers filtered seawater as a cooking liquid, so if your fishmonger has it available, give it a try! Boiling lobsters in well-salted water is the next best thing.

- Bring a large pot of water to a boil and season generously with salt. Add lobsters head first to water and cook, covered, until shells are bright red and an antennae or leg pulls off easily, 8 to 10 minutes. Crack one open where the tail meets the body of the lobster. The flesh should be firm, white, and opaque. If it is still translucent, then the lobster needs more time to finish cooking. Drain lobsters head down in a colander to release excess liquid.
- When cool enough to handle, crack lobster shells and remove meat from tails, claws, and knuckles. Tear the meat by hand into 1-inch pieces and place in a large bowl.
- In a small bowl, combine the mayonnaise, lemon, celery, tarragon, cayenne, pepper, and 1/4 teaspoon salt. Pour over lobster meat and gently stir until lobster is well coated. Taste and adjust seasoning, adding more mayonnaise if desired. Chill lobster mixture for 15 to 30 minutes.
- Spread cut sides of buns with butter. Heat a large skillet over medium heat and toast buns, buttered side down, until golden brown, about 2 minutes per bun. Fill each bun with lobster mixture and sprinkle with an extra dash cayenne, if desired. Serve immediately.

- Rinse the lobster meat and pick through for any loose shells. Drain throughly so the mayo sauce doesn't get watery. Chop or tear into large chunks and set aside.
- In a large bowl, mix the celery, mayonnaise, chives, lemon juice, lemon zest, kosher salt and ground black pepper. Taste for seasoning.

LOBSTER SALAD ROLLS WITH TARRAGON AND LEMON

- Cut a deep V into the middle of each hoagie rolls and remove the bread. Slice the outer edges off of each hoagie so you have a flat area exposed to brush with butter.
- Heat a medium skillet to a medium heat. Add 3 tablespoons of butter and 2 tablespoons of garlic. Add lobster tails shell-side down. Cook in the garlic butter until the tails are bright pink. As they cook, spoon the garlic butter over the flesh of the lobster. Turn the tails over so they are flesh-side down, shell-side up. Cook another 2-3 minutes until the lobster meat is firm and white.
