TARRAGON LEMONADE



Tarragon Lemonade image

Tarragon brightens the flavor of this from-scratch lemonade; add gin to easily turn it into a summery cocktail.

Yield Makes 6 cups

Number Of Ingredients 5

1 cup sugar
6 sprigs tarragon, plus more for garnish
2 cups fresh-squeezed lemon juice, about 10-12 lemons
Ice
12 ounces gin, optional

Steps:

  • Combine the sugar with 1 cup water and 6 sprigs tarragon in a small saucepan. Bring to a boil, stirring until sugar is dissolved. Remove from heat and let cool to room temperature.
  • In a large pitcher, combine lemon juice, tarragon-sugar syrup, and 3 cups of cold water. Fill pitcher with ice until ready to serve.
  • To serve, fill glasses with ice. Pour a shot of gin over the ice, if using. Fill with lemonade and garnish with a tarragon sprig.

A lime-tarragon marinade for juicy flavorful chicken pieces - moist and delicious. I like to marinate the pieces and cook them on the grill for a nice summer meal.

½ cup olive oil
½ cup fresh lime juice
2 tablespoons chopped onion
2 teaspoons dried tarragon
1 teaspoon salt
½ teaspoon hot sauce
salt and pepper to taste
2 pounds bone-in chicken thighs

Steps:

  • Place olive oil, lime juice, onion, tarragon, salt, and hot sauce into a large, resealable plastic bag; shake to mix. Add chicken thighs, coat with marinade, squeeze out air, and refrigerate for at least 4 hours.
  • Preheat an outdoor grill for medium heat and lightly oil grate. Remove chicken from marinade, and shake off excess. Discard remaining marinade. Season with salt and pepper.
  • Grill chicken for about 30 minutes, or until no longer pink in the center. Chicken thighs don't dry out easily, so don't be afraid to cook them a bit longer if needed.

2 tablespoons butter
1 small onion, finely chopped
1 1/2 cups rice
1/2 teaspoon salt
1/2 teaspoon black pepper
3 cups chicken stock, warmed
1/4 cup parsley, chopped
2 tablespoons tarragon, chopped

Steps:

  • Melt butter in saucepan and cook onion over medium heat until golden. Stir in rice and cook for 1-2 minutes.
  • Season with salt and pepper. Stir in chicken stock and bring to a boil. Cover and turn heat down to low. Simmer gently for 15 minutes.
  • Keep rice covered and remove from heat after it has been simmering for the 15 minutes. Let sit for 5 minutes. Fluff rice with a fork and stir in parsley and tarragon. Serve.

4 chicken breasts, boneless, skinless

Steps:

  • Mix together all ingredients and add to zip lock bag; add chicken.
  • Turn once in awhile to coat chicken.
  • Marinade for 1-3 hours.
  • Remove chicken from marinade and discard marinade.
  • Grill or bake chicken until done (approx 12 min on grill or 25 min in oven @ 350F).
