This Chinese dish has taken a new dimension - it's made with coconut milk! Chicken is simmered with taro, shallots, ginger, and coconut milk. It's delicious with steamed rice.

1 tablespoon cornstarch, or more to taste
1 tablespoon water
1 ½ teaspoons light soy sauce
1 ½ teaspoons white sugar
1 teaspoon salt
2 skinless chicken thighs, cut into small chunks
oil for deep frying
1 taro, peeled and cut into small chunks
1 tablespoon vegetable oil
2 shallots, chopped
2 slices fresh ginger
water to cover
1 (14 ounce) can coconut milk
4 leaves basil
salt to taste
1 pinch white sugar, or to taste

Steps:

  • Mix cornstarch and water together in a large bowl until dissolved. Add soy sauce, 1 1/2 teaspoon sugar, and salt. Mix in chicken; cover with plastic wrap and let marinate in the refrigerator, about 15 minutes.
  • Heat oil in a large saucepan or deep-fat fryer. Fry taro until golden brown, 3 to 5 minutes. Drain on paper towels.
  • Heat remaining 1 tablespoon oil in a large skillet over high heat. Add shallots and ginger; cook and stir until fragrant, 2 to 3 minutes. Add chicken; cook and stir until no longer pink, 3 to 4 minutes.
  • Transfer chicken mixture to a large saucepan. Add fried taro. Pour in enough water to cover 3/4 of the mixture. Bring to a boil; reduce heat to medium, cover, and simmer until an instant-read thermometer inserted into the chicken reads at least 165 degrees F (74 degrees C), about 15 minutes. Stir in coconut milk and basil. Season with salt and sugar.

1½ cups Farmer's Pick 100% Juice Mango
3 cups pineapple chunks
1 cup heavy cream
¼ cup sour cream
2 tablespoons sugar
One (10.25-ounce) pound cake, trimmed and cut into 1-inch cubes
1 cup coconut flakes, toasted

Steps:

  • 1. In a medium saucepan, bring Farmer's Pick 100% Juice Mango and pineapple chunks to a boil. Boil until most of the liquid has evaporated, about 10 minutes. Cool to room temperature. 2. In a large bowl, whisk the cream until soft peaks form. Add the sour cream and sugar and whisk until medium peaks form. 3. Divide half of the cake cubes among 12 small jars. Top with half of the pineapple mixture, cream mixture, and coconut. Repeat the layering once and serve immediately. The trifles can be assembled and refrigerated overnight, then topped with the final coconut layer just before serving.

2 tablespoons canola oil
1 (3 to 3 1/2-pound) chicken, cut into 10 pieces
Kosher salt and freshly ground white pepper
4 slices bacon, cut into 1/2-inch pieces
1 tablespoon unsalted butter
1 pound pearl onions, peeled
1/2 cup dry white wine
2 tablespoons golden raisins, coarsely chopped
2 tablespoons dark brown sugar
2 tablespoons red wine vinegar
1 pint cherry tomatoes, halved

Steps:

  • Preheat the oven to 375 degrees F.
  • Brown the chicken: Heat a large skillet over medium heat and add the canola oil. Arrange the chicken in a single layer on a baking sheet and season with salt and white pepper. Turn the pieces over and season again. When the oil begins to smoke lightly, use a pair of metal tongs to carefully add the pieces, skin side down, to the skillet. Do not overcrowd the pan. Resist the temptation to move or turn the pieces, until they have browned on the first side, 5 to 8 minutes. Turn the chicken over and brown on the second side, 5 to 8 minutes. Transfer the chicken to a baking sheet and bake in the oven until cooked through, 15 to 18 minutes.
  • Cook the bacon: Add the bacon to the skillet you used to cook the chicken and cook until browned and crispy, 12 to 15 minutes. Transfer the bacon to a kitchen towel. Reserve the skillet.
  • While the chicken is cooking, make the sweet-and-sour sauce: In a medium saucepan, melt the butter over medium heat and add the onions and a pinch of salt. Cook, stirring from time to time with a wooden spoon, until they brown and become tender, 5 to 8 minutes. Add the white wine, 1/2 to 1 1/2 cups of water, the raisins, brown sugar, and red wine vinegar. Simmer, adding up to 1 more cup water if necessary, until the liquid reduces and the onions are cooked through, 12 to 15 minutes. Season with salt and white pepper.
  • Finish the dish: In the skillet you used to cook the bacon, pour off any excess grease and add the tomatoes. Simmer over medium heat until almost all the liquid is gone, 5 to 8 minutes. Pour the sweet-and-sour sauce into the skillet and then add the pieces of chicken and the juices. Bring to a simmer over medium heat and toss to coat the chicken with sauce. Taste for seasoning. Arrange the chicken in a single layer on a serving platter. Top with the bacon. Serve immediately.

1 (3 pound) chicken
Salt, black pepper
1 teaspoon rosemary
5 tablespoons Slivowitz
Pinch cinnamon
Pinch mace
2 cups pineapple
1/2 cup pineapple juice
1/2 orange, zest grated
2 teaspoons juniper berries, crushed
2 teaspoons vinegar
1 tablespoon honey
2 teaspoons arrowroot
1/2 cup chicken stock

Steps:

  • Preheat oven to 350 degrees. Wash and thoroughly dry chicken. Cut wings off. Season inside of chicken with salt, pepper and rosemary. Sprinkle pineapple with cinnamon and mace, and then add 1 tablespoon Slivovitz. Allow to marinate a few minutes. Spoon pineapple inside chicken and pack tightly. Spoon a little juice into cavity. Tie chicken, passing the string around the legs and behind the parson's nose and then tie legs down tight onto the parson's nose. Place chicken into a small baking dish, standing in a pan of water.
  • Add the pineapple juice to the juices remaining from the marinated pineapple, together with the orange zest and remaining 4 tablespoons of Slivovitz. Season with salt and pepper and add the juniper berries, vinegar and honey. Place the mixture into a saucepan, bring to a boil and then lower the heat and simmer 2 minutes.
  • Paint the chicken with some of the basting mixture and then pour a little more of the mixture over the chicken. Plate into the oven for 1 hour, 10 minutes. Turn the bird over 20 minutes before the end of cooking. Baste chicken from time to time. Remove chicken to a dish and keep warm. Place the remaining basting sauce into the pan juices. Heat slowly and strain through a sieve and add any remaining pieces of pineapple. Add the chicken stock and then thicken with arrowroot.

1/2 coconut cream can water
1 teaspoon salt

Steps:

  • Arrange alternating layers of chicken, onions, spinach or taro leaves, and taro root in a casserole dish.
  • Mix coconut cream and water together with salt, and corn flour. Pour over the top of the chicken mixture.
  • Cover with tomatoes.
  • Cover casserole with foil or a lid and bake at 325* for 1 hour until until chicken and vegetables are done. Serve with lemon slices.

2 cups coconut milk
1 cup macadamia nuts, toasted and smashed
1 stalk lemon grass, split
2-inch piece ginger root
2-inch piece galangal root
Salt and freshly ground black pepper

Steps:

  • Boil the taro in water for 1 hour or until tender. In another saucepan, combine remaining ingredients over low heat. Cover and let steep while the taro cooks. Drain the taro and transfer to a mixing bowl. Pass the infused milk through a sieve to remove the solids and add to the bowl of taro. Mash the taro as you would potatoes. Season with salt and pepper, to taste.

1/2 cup cornstarch
1/3 cup boiling water
1 large taro, peeled, cut into 1/2-inch slices and steamed soft (about 20 to 25 minutes)
1/4 cup Virginia (Smithfield) ham, julienned
1/4 cup chopped scallions
1/4 cup duck fat or lard
Cornstarch, for coating
Salt and black pepper, to taste
4 large chicken breasts (with drumette attached), slightly pounded out
Canola oil, for cooking
1 red onion, 1/4-inch slices
1 medium carrot, 1/4-inch bias slices
4 cloves garlic, 1/16-inch slices
1 tablespoon minced ginger
2 serrano chiles, minced
1 small pineapple, 1/2-inch dice
1 large mango, 1/2-inch dice
2 oranges, zested and juiced
1 lemon, zested and juiced
Salt and black pepper

Steps:

  • Preheat fryer to 350 degrees F.
  • In a mixing bowl, pour the boiling water with the cornstarch and mix well with a wooden spoon. Add the taro and mash in well, but do not over mix to a smooth puree. Add the ham, scallions, lard and season. Check for seasoning. Season the chicken and place skin side down. Pat on a 1/2-inch layer of taro on the meat side. Coat both sides with cornstarch and fry until golden brown and the chicken is done, about 6 to 8 minutes. Season lightly and drain on paper towels. Cut each breast in half on the bias.
  • In a large saucepan coated lightly with oil on medium heat, saute the onions, carrot, garlic, ginger, and chiles. Stir and season. Cook until soft, about 5 minutes. Add the pineapple, mango and citrus juices/zest. Bring to a boil and simmer for a 20 percent reduction, about 15 minutes. Check for seasoning.
