OLD FASHIONED TAPIOCA PUDDING

I bought of tub of Tapioca pudding at Trader Joes and found out that my husband really really loves tapioca pudding. (really, I hardly got any) Since I don't have a TJ's near me, I went searching for a really good tapioca recipe, one that didn't use quick cooking tapioca. This one is delicious! We serve ours cold topped with a little fresh whipped cream. I found the tapioca pearls in the bulk section of my health foods store. Note that the tapioca pearls must soak overnight before you can prepare the pudding.

1/2 cup pearl tapioca
1 1/2 cups milk
1 1/2 cups heavy cream
1 fresh vanilla bean
1/2 cup sugar
1 pinch salt
2 egg yolks

Steps:

  • Soak the pearls in water overnight, covered well with water. Drain the water off.
  • Heat the milk, cream, vanilla bean (split and scraped), and tapioca to a slow simmer in a heavy pot and cook for 1 hour, stirring often.
  • Add the sugar and salt. Bring to a simmer being careful not to let the tapioca stick to the bottom of the pan.
  • Put the yolks into a bowl and stir in some of the tapioca mixture to temper the eggs.
  • Then add yolks to the pan while stirring. Pour into a bowl and cool.
  • You can it it warm (as I hear it is often served in the colder months) We like ours after it has chilled several hours in the fridge at any time of year.

3 cups whole milk
½ cup quick-cooking tapioca
½ cup white sugar
¼ teaspoon salt
2 eggs, beaten
½ teaspoon vanilla extract

Steps:

  • Stir together the milk, tapioca, sugar, and salt in a medium saucepan. Bring the mixture to a boil over medium heat, stirring constantly. Reduce heat to low; cook and stir 5 minutes longer.
  • Whisk 1 cup of the hot milk mixture into the beaten eggs, 2 tablespoons at a time until incorporated. Stir the egg mixture back into the tapioca until well mixed. Bring the pudding to a gentle simmer over medium-low heat; cook and stir 2 minutes longer until the pudding becomes thick enough to evenly coat the back of a metal spoon. Remove from the heat and stir in the vanilla. The pudding may be served hot or poured into serving dishes and refrigerated several hours until cold.

1 cup heavy cream
1 tablespoon nonfat dry milk powder
1/8 teaspoons kosher salt
1/3 cup small pearl tapioca (not instant or quick-cooking)

1 large egg yolk, beaten to blend
Freshly grated nutmeg (for serving)

Steps:

  • Whisk milk, cream, milk powder, and salt in a medium saucepan; add tapioca and let sit 30 minutes to hydrate. Add sugar to tapioca mixture and bring to a simmer over medium heat.
  • Reduce heat to medium-low and cook, stirring often, until the consistency of a thick soup, 10-12 minutes. Whisk in egg yolk and cook, stirring occasionally, 2 minutes (it will thicken slightly). Let cool, stirring occasionally, 10 minutes.
  • Divide among small glasses. Chill pudding until cold (it will thicken), at least 2 hours. Serve topped with nutmeg.
  • Do ahead: Pudding can be made 3 days ahead. Cover and keep chilled.

2 cups cold water
2 1/2 cups whole milk
1/2 cup heavy cream
1 egg yolk
1/3 cup sugar
1 lemon, zested

Steps:

  • Place tapioca in a medium mixing bowl along with the water, cover, and let stand overnight.
  • Drain water from tapioca. Place the tapioca into a slow cooker along with the milk, heavy cream, and salt. Cook on high for 2 hours, stirring occasionally.
  • In a small bowl, whisk together the egg yolk and sugar. Temper small amounts of the tapioca into the egg mixture until you have added at least 1 cup. Then add this back into the remaining tapioca in the slow cooker. Add the lemon zest and stir to combine. Cook for an additional 15 minutes, stirring at least once. Transfer the pudding to a bowl and cover the surface with plastic wrap. Allow to cool at room temperature for 1 hour and then place in the refrigerator until thoroughly chilled.

5 cups milk
1/4 teaspoon salt
2 large eggs, separated
1 cup granulated sugar

  • Bring milk to a boil in a double boiler over simmering water.
  • Add salt and tapioca to milk.
  • Stirring constantly, cook tapioca in double boiler for 1 hour or until tapioca is clear and milk is thickened.
  • Beat egg whites with 1/2 cup sugar until firm peaks, set aside.
  • Beat yolks with remaining 1/2 cup sugar.
  • Temper yolks with some of the hot custard.

2 2/3 cups (640 ml) coconut milk (or substitute some of it with whole milk or coconut cream)
1/3 cup (60 g/2 oz) granulated sugar
¼ teaspoon salt
½ teaspoon pure vanilla extract
Sliced fresh fruit such as mango (, melon, pineapple, lychee)
Coconut chips (, optional)

Steps:

  • Place tapioca and coconut milk in a medium saucepan and let soak for 30 minutes.
  • Add sugar and salt to the tapioca mixture, and heat over medium heat until it reaches a simmer. Reduce heat to low and let simmer very gently for 15 minutes until tapioca pearls are transparent and the mixture has thickened. Be sure to stir frequently so that the tapioca doesn't stick to the bottom. Once done, remove from heat and stir in vanilla.
  • Pour into cups and place in the refrigerator until completely chilled, at least 3 hours. The pudding will thicken after refrigeration.
  • Serve with sliced fresh fruit/fruit puree and coconut chips if desired.
  • Tapioca is best the same day it's made, but will keep for up to 3 days in the fridge.

Steps:

  • Place the water and tapioca pearls in a 1 1/2 quart pot. Let stand for 30 minutes until the pearls are plump and have absorbed the water.
  • Turn on the heat to medium-high. Pour in the milk and salt; stir while bringing to a bare simmer.
  • Reduce the heat to very low, add in the sugar and cook, uncovered, stirring frequently (so the tapioca doesn't stick to the bottom of the pan), until the tapioca pearls have plumped and thickened, about 5 minutes.
  • In a separate bowl, beat the eggs. Slowly whisk in about 1/2 cup of the hot tapioca (this equalizes the temperature between the two mixtures to avoid curdling.)
  • Pour the egg mixture into the pot with the rest of the tapioca; increase heat to medium and stir for several minutes until you get a thick pudding consistency that coats the back of a wooden spoon. (Do not let mixture boil.)
  • Take off the heat and cool for 15 minutes.
  • Stir in the vanilla.
  • Serve either warm or cold and enjoy!

3 cups organic milk, divided
1/3 cup small pearl tapioca
2 extra-large egg yolks, lightly beaten
1/4 teaspoon fine-grain sea salt
1/3 cup sugar
1 vanilla bean, split along the length (or 1 teaspoon vanilla extract)

Steps:

  • Pour 3/4 cup of the milk into a medium-sized, thick-bottomed pot. Add the tapioca and soak for 60 minutes. Whisk in the egg yolks, salt, sugar, and the remaining milk. Scrape the vanilla bean along its length with a knife and add that bean "paste" along with the bean itself to the pot (if you are using vanilla extract in place of the vanilla bean stir it in at the very end, after the pudding is completely cooked).
  • Over medium heat slowly bring the mixture just barely to a boil, stirring all along - this should take about 15 minutes. Reduce the heat and let the mixture fall to a simmer - you keep it here until the tapioca is fully cooked, another 20 minutes or so. Keep in mind this time can be significantly longer (or shorter). The tapioca will tell you when it is ready if you watch carefully. The tapioca beads will swell up and become almost entirely translucent. The custardy part of pudding will thicken dramatically as well - keep tasting and assessing at this stage. It is even more critical to keep stirring at this point avoid dreaded scorching.
  • Remove from heat and let cool a bit. This tapioca tastes its best when served warm, but is still delicious cold as well.

Steps:

  • Gather the ingredients.
  • In a medium bowl, cover tapioca with 1 cup water.
  • Let soak for 15 to 20 minutes or until the granules expand slightly. Avoid over-soaking or the tapioca will not be able to hold its shape.
  • Pour off excess water.
  • In a pot with a lid, combine tapioca, salt, and the remaining 2 cups water. Bring to a boil over high heat.
  • Reduce the heat to medium-low and simmer for 10 to 15 minutes. Stir occasionally, adding a little more water if necessary to prevent tapioca from bubbling and "spitting."

  • Cover it again and refrigerate until it's cold; it will thicken and gel together.
  • To serve, scoop about 1/4 cup or more of the cold tapioca per person and place in serving glasses or bowls.
  • Pour 1/4 to 1/3 cup coconut milk over each portion and stir to mix. This pudding should be on the runny side and you will have to stir it well to distribute the tapioca.
  • Add a little syrup to each portion (about 1 tablespoon or to taste). Each person can add more according to their preferred sweetness.
  • Add slices of fresh mango or any tropical fresh fruit, if desired.

  • Cook the tapioca in the milk and salt on medium heat until simmering. Then lower the heat to a minimum and start adding sugar gradually and intermittently until the tapioca pearls have increased in size.

1/2 cup small tapioca pearls
2 cups water
1 cup whole milk (may use little more if needed)
1/2 cup chilled milk
1/4 cup chilled heavy cream
3/4 cup sugar (adjust to taste)
1 teaspoon vanilla extract (or use 1/2 teaspoon cardamom powder)
1/2 teaspoon sweet almond extract (optional)
1/2 teaspoon cinnamon powder (optional (may use little more if needed))

Steps:

  • Wash the tapioca pearls very well in water and transfer the rinsed tapioca pearls to a good quality medium sized saucepan.
  • (If you have a thick bottomed non stick pan, that will be perfect since it helps reduce the tapioca pearls from sticking to the bottom of the pan while cooking).
  • Add the water also to the saucepan and let the tapioca pearls soak in the water for about 30 minutes.
  • Once the soaking is done, switch on the stove and bring the mixture to a boil.
  • As the water stars boiling, reduce the heat to medium heat, cover with lid, simmer and cook the tapioca pearls until they are cooked and transparent. You need to open the pan in between and stir this frequently to avoid the tapioca pearls sticking to the bottom of the pan.
  • The cooking time for tapioca pearls can vary based on the brand and also the size of the pearls, but since we use small tapioca pearls in this recipe, the cooking is done much faster than larger sized tapioca pearls.
  • It took about 10 to 12 minutes for me to cook the tapioca pearls, but make sure to stir often and keep watching since the cooking time may slightly vary.
  • If the tapioca pearls are not completley cooked, you may continue cooking for few more minutes (however, keep in mind that if you cook them for a very long time, the pearls can disintegrate into the water making it a starchy mixture which is not recommended).
  • Once the tapioca pearls are completely cooked (they are transparent and not opaque at the centre or chewy anymore), add the 1 cup of milk and mix well.
  • Also add the sugar, stir well and simmer for another couple of minutes.
  • Add the vanilla extract and almon extract (if using), also add cinnamon powder if you like and stir everything well.
  • Switch off the stove and transfer the saucepan to a cool place so the tapioca pearls won't overcook.
  • If you overly cook the tapioca pearls, the pudding can get too thick & starchy in texture which is recommended.
  • Finally add the chilled milk & heavy cream, stir well to combine and let the pudding cool down to roomperature.
  • Once it is cooled to room temperature, chill the pudding in refrigerator, & serve chilled for best results!
  • The pudding turns slightly more thicker in texture as it cools down. You may add little more chilled milk, if needed, to adjust the pudding consistency based on your preference.
  • Also, you may add more cinnamon powder, sliced nuts like almonds, pistachios etc, or sliced fresh fruits like bananas, cherries, strawberries etc for garnishing just before serving if you wish!

  • To cook pudding in Instant Pot: Add 2 cups of water and 2 cups of milk in Instant Pot. Add tapioca pearls, sugar, salt and close lid of pot. Seal the vent.   • Whisk milk, cream, and salt in a medium saucepan. Add tapioca and let sit for 30 minutes to hydrate.
  • Add sugar to tapioca mixture and bring to a simmer over medium heat. Reduce heat to medium-low and continue to cook 10-12 minutes until the consistency of thick soup, stirring often to prevent tapioca from sticking to the bottom.
  • Allow to cool, stirring occasionally, 10 minutes. Portion into small glasses or ramekins. Cover with plastic wrap and chill in the fridge until cold -- at least 2 hours. It will continue to thicken as it cools.

  • Whisk milk, cream, sugar, and salt together in a medium saucepan over medium heat. Cook, stirring occasionally, until the liquid barely comes to a simmer.
  • Stir in the tapioca pearls and immediately reduce the heat all the way to the lowest setting. Continue to cook and stir for 45 to 60 minutes until the tapioca pearls are translucent and soft and the mixture has begun to thicken. Please note that different types and brands of tapioca may require shorter cooking times.
  • Whisk the eggs in a medium bowl. Add 1/2 cup of the hot tapioca mixture, stirring well. Add another 1/2 cup of the hot liquid, stirring again, before combining the tempered egg mixture back into the saucepan with the tapioca and milk mixture.
  • Continue to cook 1 to 10 minutes, until thickened to your liking. Remove from heat and stir in the vanilla extract. Cool for at least 20 minutes before pouring into individual serving cups. Serve warm or cover with plastic wrap directly in contact with the top of the tapioca to prevent it from forming a skin and chill to serve cold.
