EASY HOMEMADE TAPIOCA PUDDING

Easy Homemade Tapioca Pudding image

Homemade Tapioca Pudding is a simple, creamy, delicious, and timeless dessert. And easier to make than you might think!

Provided by Amy

Categories     Dessert

Time 55m

Number Of Ingredients 7

1 cup water
1/2 cup small pearl tapioca (not instant)
2 1/2 cups whole milk
1/4 teaspoon kosher salt
2 large eggs
1/2 cup granulated sugar
1 teaspoon vanilla extract

Steps:

  • Place the water and tapioca pearls in a 1 1/2 quart pot. Let stand for 30 minutes until the pearls are plump and have absorbed the water.
  • Turn on the heat to medium-high. Pour in the milk and salt; stir while bringing to a bare simmer.
  • Reduce the heat to very low, add in the sugar and cook, uncovered, stirring frequently (so the tapioca doesn't stick to the bottom of the pan), until the tapioca pearls have plumped and thickened, about 5 minutes.
  • In a separate bowl, beat the eggs. Slowly whisk in about 1/2 cup of the hot tapioca (this equalizes the temperature between the two mixtures to avoid curdling.)
  • Pour the egg mixture into the pot with the rest of the tapioca; increase heat to medium and stir for several minutes until you get a thick pudding consistency that coats the back of a wooden spoon. (Do not let mixture boil.)
  • Take off the heat and cool for 15 minutes.
  • Stir in the vanilla.
  • Serve either warm or cold and enjoy!

TAPIOCA PUDDING

Tapioca Pudding image

This homemade Tapioca Pudding recipe is a creamy, classic dessert that is easy to make and naturally gluten-free! It is the perfect dessert to make ahead and one that the whole family loves!

Provided by Lauren Allen

Categories     Dessert

Time 1h

Number Of Ingredients 7

1/2 cup small pearl tapioca* ((not instant tapioca))
3 1/2 cups milk
½ cup heavy cream
1/4 teaspoon kosher salt
2 large eggs
1/2 cup granulated sugar
1 teaspoon vanilla extract

Steps:

  • Add milk, cream, sugar and salt to a saucepan over medium heat. Bring to a simmer, then stir in tapioca and reduce heat to low. Cook, stirring often, until mixture has slightly thickened, and the tapioca pearls have plumped and softened, about 45 minutes.
  • Add the eggs to a bowl and whisk to combine.
  • Add a spoonful of hot tapioca mixture to the beaten eggs, stirring well as you pour it in. Repeat with another few spoonfuls of hot tapioca, stirring after each. (This helps temper the eggs and bring them to a warm temperature without "scrambling" them.)
  • Add tempered egg mixture to the saucepan with tapioca and stir well to combine. Cook for 2-5 more minutes, just until thickened (keep in mind it will continue to thicken as it cools). Remove from heat and stir in vanilla.
  • Transfer to a serving bowl and place a piece of plastic wrap directly on the surface of the pudding (to keep it from forming a rubbery skin on the surface). Allow it to cool before serving. Serve either warm or chilled.

TROPICAL THAI COCONUT-TAPIOCA PUDDING

Tropical Thai Coconut-Tapioca Pudding image

A delicious and healthy dessert, Thai coconut-tapioca pudding is easy to make. Better yet, it's also vegan and gluten-free.

Provided by Darlene Schmidt

Categories     Dessert

Time 3h

Yield 4

Number Of Ingredients 6

1/2 cup/4 ounces tapioca (seed or Asian pearl tapioca)
3 cups water (divided)
1/8 teaspoon salt
1 (13.5 ounces) can coconut milk (or "lite" coconut milk)
Garnish: table syrup (or maple syrup to serve)
Optional: 1 fresh mango (sliced)

Steps:

  • Gather the ingredients.
  • In a medium bowl, cover tapioca with 1 cup water.
  • Let soak for 15 to 20 minutes or until the granules expand slightly. Avoid over-soaking or the tapioca will not be able to hold its shape.
  • Pour off excess water.
  • In a pot with a lid, combine tapioca, salt, and the remaining 2 cups water. Bring to a boil over high heat.
  • Reduce the heat to medium-low and simmer for 10 to 15 minutes. Stir occasionally, adding a little more water if necessary to prevent tapioca from bubbling and "spitting."
  • When the tapioca turns soft and a little gooey, turn off the heat and place the lid on tight. Let it sit at least 10 minutes. The residual heat inside the tapioca will finish turning all of the seeds soft and translucent.
  • Remove the lid and allow the tapioca to cool on the stovetop.
  • Cover it again and refrigerate until it's cold; it will thicken and gel together.
  • To serve, scoop about 1/4 cup or more of the cold tapioca per person and place in serving glasses or bowls.
  • Pour 1/4 to 1/3 cup coconut milk over each portion and stir to mix. This pudding should be on the runny side and you will have to stir it well to distribute the tapioca.
  • Add a little syrup to each portion (about 1 tablespoon or to taste). Each person can add more according to their preferred sweetness.
  • Add slices of fresh mango or any tropical fresh fruit, if desired.

TAPIOCA PUDDING

Tapioca Pudding image

The ultimate tapioca - a creamy, classic, delicious, vanilla-spiked tapioca pudding recipe. Guided by the tapioca enthusiasts in my family.

Provided by Heidi Swanson

Categories     Dessert     Sweets

Time 1h40m

Number Of Ingredients 6

3 cups organic milk, divided
1/3 cup small pearl tapioca
2 extra-large egg yolks, lightly beaten
1/4 teaspoon fine-grain sea salt
1/3 cup sugar
1 vanilla bean, split along the length (or 1 teaspoon vanilla extract)

Steps:

  • Pour 3/4 cup of the milk into a medium-sized, thick-bottomed pot. Add the tapioca and soak for 60 minutes. Whisk in the egg yolks, salt, sugar, and the remaining milk. Scrape the vanilla bean along its length with a knife and add that bean "paste" along with the bean itself to the pot (if you are using vanilla extract in place of the vanilla bean stir it in at the very end, after the pudding is completely cooked).
  • Over medium heat slowly bring the mixture just barely to a boil, stirring all along - this should take about 15 minutes. Reduce the heat and let the mixture fall to a simmer - you keep it here until the tapioca is fully cooked, another 20 minutes or so. Keep in mind this time can be significantly longer (or shorter). The tapioca will tell you when it is ready if you watch carefully. The tapioca beads will swell up and become almost entirely translucent. The custardy part of pudding will thicken dramatically as well - keep tasting and assessing at this stage. It is even more critical to keep stirring at this point avoid dreaded scorching.
  • Remove from heat and let cool a bit. This tapioca tastes its best when served warm, but is still delicious cold as well.

  • Add water and brown sugar to a pot and bring to a boil. Stir to dissolve all of the sugar. Turn off the heat after you have added the 1/2 cup in step 2 to the tapioca mix.
  • In a glass bowl, add one cup of tapioca starch to a bowl. Remove almost a 1/2 cup of the hot sugar/water mixture and add it to the tapioca starch (turn heat off). The remaining water will be used to boil the tapioca balls. Stir the mix until a ball forms and begin kneading. If the dough is too sticky (dough will be slightly tacky), add more tapioca flour. If it's too dry, add more sugar/water or tapioca flour if it's too wet.
  • Optional - add a very thin layer of tapioca flour onto Silpat or parchment paper. Option 1 - Pull off small portions of dough and roll it into approximately 1.5 cm balls and place on Silpat or parchment paper. Option 2 - Roll into mini logs and cut into 1/2" pieces and then roll into balls. Make the tapioca balls approximately 1.5 cm.
  • Once all the balls are completed, bring the sugar water back to a boil on medium high. Add the tapioca balls to the boiling sugar water. Cover the pot and lower the heat to medium-low. Cook times will vary between 15 - 20 minutes, depending on how chewy or soft you want the tapioca balls.

  • Heat up the water and sugar over medium heat. Stir until all the sugar has dissolved. Then turn off the heat.
  • In a large saucepan, boil enough water to cover your boba. Then add the tapioca pearls to the boiling water (carefully, so you don't splash yourself). Stir well, so they don’t stick to the bottom of the or each other.
  • For a traditional boba, then a black tea base is the norm. However, you can also use a variety of herbal teas, flavoured milks and even juices/smoothies as your drink base. If making a tea then simply steep the tea bags/tea leaves in warm milk (alternatively, make a tea as you would typically in the water, adding milk to dilute) and leave this to chill in the fridge until you want to use it. For my recipe, I decided to use Bantha Milk AKA 'Blue Milk', as my base. This drink is a sweet butterfly pea flower and lavender coconut milk (inspired by the Star Wars blue milk) and the combination of flavours with the pearls is delicious.
  • To make the tapioca peals with brown sugar syrup, warm up the brown sugar over medium heat for a couple of minutes. The sugar only needs to be warmed up, not completely melted.
