This recipe is wonderful served with a sliced baguette or plain crackers. It can also be mixed together with cream cheese and/or sour cream for a great vegetable dip, or tossed with pasta, potatoes or rice. Whenever I make this appetizer, I always get lots of requests for the recipe!

2 cups pimiento-stuffed green olives
½ cup pitted black olives
1 (6 ounce) jar marinated artichoke hearts, undrained
2 hot banana peppers, seeded and cut into pieces
1 red bell pepper, seeded and coarsely chopped
2 cloves garlic, minced
2 tablespoons capers, drained and chopped
½ teaspoon dried basil
1 tablespoon lemon juice
¼ cup olive oil

Steps:

  • In a food processor or blender, chop green olives, black olives, and artichoke hearts in batches until just spreadable; pour into a mixing bowl. Puree banana peppers and red bell pepper until just spreadable; mix into olive mixture.
  • Stir in garlic, capers, basil, lemon juice, and olive oil until well blended. Tapenade will keep in refrigerator for up to 1 week.

CUMIN BREAD ROLLS (A B M)

From the November 1997 issue of Bon Appetit. I take a shortcut and use the dough cycle on an automatic bread machine which saves time. Whole wheat flour can be substituted for part of the white flour. Try this with chili, stew-any hearty soup!

Number Of Ingredients 11

1 cup warm milk
1/4 cup water
1/4 cup sugar
3 tablespoons butter, at room temperature
1 teaspoon salt
2 large eggs
3 3/4 cups flour
1 1/2 teaspoons active dry yeast
1/3 cup butter, melted
1 large egg, beaten
2 tablespoons cumin seeds, lightly toasted

Steps:

  • Place first 8 ingredients in bread pan in order given as indicated by your bread machine manual.
  • Set bread machine for DOUGH cycle.
  • Toast the cumin seeds for about 5 minutes in a clean, dry skillet then set aside to cool.
  • Once dough is ready, place in an lightly oiled heat-proof bowl and set in warm location. Let rise for about 45 minutes or until double in size.
  • Transfer dough to lightly floured board and knead it about 10 times. Butter muffin tins.
  • Melt 3 tablespoons of butter in a small bowl. Punch down dough and divide in half. Cut each half into 12 equal pieces. Dip each dough piece in the melted butter.
  • Now pull and stretch the dough ball into a 6"-8" long rope. (It won't be perfectly shaped, and that's okay.) Tie the "rope" into a simple knot and tuck the ends under. Repeat until all rolls are shaped.
  • Place the rolls in buttered muffin tin. Brush rolls with egg glaze. Sprinkle each roll with the toasted cumin seeds. Let rise at room temperature for 30 minutes.
  • Bake until light brown, about 14-15 minutes.
  • Remove from muffin tin and serve with a smile.

2 teaspoons yeast
2 1/2 cups all-purpose flour
1 teaspoon sugar
1 teaspoon salt
1 teaspoon olive oil
3/4 cup plus 3 tablespoons water
2 tablespoons olive oil
salt
fresh ground black pepper
1 1/2 cups tomato sauce (or more if you're an extra-sauce fan) or 1 1/2 cups pizza sauce (or more if you're an extra-sauce fan)
1 -1 1/2 cup mozzarella cheese, grated

Steps:

  • DOUGH:.
  • Place dough ingredients in the machine in the order recommended by its manufacturer.
  • Program for Dough, Basic Dough, or Manual, and press Start.
  • TO FINISH THE PIZZA:.
  • When dough cycle completes, transfer the dough to a floured work surface and let rest for 5 minutes.
  • Preheat oven to 400°F.
  • Lightly dust a heavy baking sheet with cornmeal and set it aside.
  • Roll out the dough to an 11-inch circle.
  • Transfer the dough onto the baking sheet.
  • Brush the olive oil over the surface of the dough and then shake on salt and pepper.
  • Leaving a 1-inch border, spread the sauce over the surface of the dough and top the sauce with the mozzarella.
  • Bake the pizza for 20 minutes until the crust is a nice golden brown.

This is a delicious and healthy bread based on a recipe that came in the Recipe Booklet accompanying my Christmas present: the Cuisinart Convection Bread Maker! I cannot guarantee that this will work in a non-convection bread machine. This is for the large 2 pounder; the medium 1.5 pounder ingredients are in parens. Make sure that all ingredients are at room temperature, unless noted otherwise.

Based on a recipe from BH&G's book, Bread Machine Bounty. This is very simple to throw into your bread machine with delicious results. The default measurements are for the 1 pound loaf; I've listed the measurements for a 1 1/2 pound loaf in parentheses. When I make this, I make the 1 1/2 pound loaf and have had to add an additional 2 tablespoons of milk during the kneading cycle. I also use buttermilk when I have it on hand.

BASIC BREAD MACHINE BREAD (A B M)

This is a very reliable standard bread machine recipe for a 1 lb loaf. Too many people I know have bread machines but don't use them because they don't know how to do anything but use a mix! This will make a nice soft loaf as is, and it's also a great jumping off point for experimentation. Try varying the types of flour, fat, and sugar. Or try adding things like spices, nuts, mustards, or cheeses. My goal with this recipe is to get people comfortable enough with baking in their bread machines that they'll experiment. (If your machine only makes a 2 lb loaf, simply double all the ingredients.)

2/3 cup lukewarm water
1 teaspoon salt
1 tablespoon butter or 1 tablespoon oil
1 tablespoon sugar or 1 tablespoon honey

2 tablespoons nonfat dry milk powder (optional)
1 teaspoon yeast

Steps:

  • Add the ingredients to your bread pan in the order listed.
  • Set your machine to 1 lb / white bread.
  • Alternatively, set your machine for the dough cycle. When it's finished, take the dough out, shape it into a round loaf, cover, and let rise until doubled. Bake in a preheated 375 degree oven for 30-40 minutes.
  • In both cases, cool on a wire rack before slicing.
