TUNA PATTIES
Simple dinner idea. We serve this with a veggie (usually broccoli or spinach) and either mac & cheese or fried potatoes. You can use cracker crumbs instead of breadcrumbs. It's just to soak up some moisture. The patties can be made earlier and set in the fridge. I've never frozen them, so you'll need to do your own experimentation for that! You can cook these in a George Foreman grill, or in a skillet or frying pan. We like them fried!

Steps:
- Mix all ingredients.
- Use more or less breadcrumbs, as needed, to soak up the moisture from the tuna and egg until it is the consistency of a "patty" (I'm sorry I can not explain this better!).
- Make into patties 1/2 inch thick.
- Sprinkle both sides of patties with pepper, and pat it inches.
- Warm up oil and butter in a pan over medium heat, enough so it's hot enough to cook but not burn. You know how your own burners work.
- Fry until golden brown, and flip to cook the other side.
EASY TUNA PATTIES
These patties are great dipped in ketchup, mustard, or hot sauce. They are also great as a sandwich.

- Beat eggs and lemon juice in a bowl; stir in Parmesan cheese and bread crumbs to make a paste. Fold in tuna and onion until well-mixed. Season with black pepper. Shape tuna mixture into eight 1-inch-thick patties.
- Heat vegetable oil in a skillet over medium heat; fry patties until golden brown, about 5 minutes per side.

COMFORTING TUNA PATTIES

- In a small saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Remove from heat. Transfer to a small bowl; cool., Stir in tuna, 1/3 cup bread crumbs, green onion, lemon juice, salt and pepper. Refrigerate, covered, at least 30 minutes., Place remaining 1/2 cup bread crumbs in a shallow bowl. Drop 1/3 cup tuna mixture into crumbs. Gently coat and shape into a 1/2-in.-thick patty. Repeat. In a large skillet, heat oil over medium heat. Add tuna patties in batches; cook until golden brown, 2-3 minutes on each side. Drain on paper towels., Freeze option: Freeze cooled tuna patties in freezer containers, separating layers with waxed paper. To use, reheat tuna patties on a baking sheet in a preheated 325° oven until heated through.

Steps:
- Spread 1/4 cup of the bread crumbs in an even layer on a sheet of waxed paper, reserve.
- With kitchen scissors, snip enough chives or green part of scallion to measure 2 tablespoons.
- In a medium bowl, stir together the mayonnaise, egg yolk, chives, pickle relish, and cayenne pepper until combined.
- Flake the tuna into a bowl.
- Add the remaining 1/4 cup bread crumbs and stir until well combined.
- Drop 1/4 of the tuna mixture onto the crumbs on the waxed paper and form into an oval patty (about 3 inches).
- Coat both sides in crumbs.
- Repeat with the remaining tuna mixture and crumbs.
- Heat the olive or vegetable oil in a large nonstick skillet over medium heat.
- Add the patties and cook until golden brown and heated through, about 3 minutes per side.

TANGY TUNA PATTIES
i came up with this recipe as a healthy snack that is very tasty and portable. the patties freeze well and reheat quickly in the microwave, so i often make extra batches to freeze. you can eat them in a sandwich, or just as is, with your fingers!

Steps:
- Combine all ingredients EXCEPT OATMEAL in a large bowl, and mix well.
- Mix in 1/4 cup oatmeal at a time, until mixture is a good texture to form into patties.
- It should still be moist, but not drippy.
- If you are not in a hurry, put the bowl in the refrigerator for 10 minutes to make the mixture easier to form into patties.
- Otherwise, go directly to next step.
- Cover broiler pan with foil and coat with cooking spray.
- Form mixture into a ball with your hands, and then flatten into a pattie and put on broiler pan.
- You can make whatever size you prefer, but make sure they are not very thick, or else the outside will burn before the inside is cooked.
- I usually end up with 9 patties per batch.
- Put pan in broiler and broil for about 8 minutes, or until top starts to brown.
- Take out the pan, flip the patties, and cook another 6 minutes or so, until other side browns.
- Remove from broiler and eat!
