1 slice day-old whole-grain bread, torn into 2-inch pieces
¼ cup 1% low-fat milk
1 onion, quartered
1 red bell pepper, seeded and quartered
2 cloves garlic
1 pound 93% lean ground turkey
1 egg, lightly beaten
2 tablespoons chopped fresh Italian parsley
1 tablespoon grainy Dijon mustard
¾ teaspoon salt
½ teaspoon ground black pepper
cooking spray
⅓ cup non-fat Greek yogurt
¼ cup light mayonnaise
4 teaspoons grainy Dijon mustard

Steps:

  • Place torn bread in a food processor and pulse until fine crumbs form. Transfer bread crumbs to a large bowl and add milk; set aside until bread is completely soaked.
  • Place onion, red bell pepper, and garlic in a food processor and pulse until finely chopped; stir into bread mixture. Add turkey, egg, parsley, 1 tablespoon mustard, salt, and pepper to bread crumb mixture and mix well. Cover bowl with plastic wrap and refrigerate for 1 hour.
  • Preheat oven to 450 degrees F (230 degrees C). Spray a rimmed baking sheet with cooking spray.
  • Shape turkey mixture into 1-inch balls; arrange on the prepared baking sheet.
  • Bake in the preheated oven until firm and cooked through, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Let meatballs stand for 5 minutes.
  • Mix yogurt, mayonnaise, and 4 teaspoons mustard together in a bowl; serve alongside meatballs.

We love these juicy, Italian ground turkey meatballs in homemade tomato sauce. Serve them over your favorite pasta, pizza or sandwich!

20 oz 1.3 lb ground turkey breast 93% lean
1/4 cup whole wheat seasoned breadcrumbs (or gluten-free crumbs)
1/4 cup Pecorino or Parmesan cheese
1/4 cup parsley (finely chopped)
1 egg
1 large clove garlic (crushed)
1 tsp kosher salt + fresh pepper
2 tsp olive oil
4 cloves garlic (smashed)
2 28 oz cans crushed tomatoes (I swear by Tuttorosso)
1/2 small onion (cut in half but don't chop)
1 bay leaf
1 tsp dried oregano
1/4 cup fresh chopped basil
salt and fresh pepper to taste

Steps:

  • In a medium size pot, heat olive oil over medium heat. Add garlic and saute until golden, being careful not to burn. Add crushed tomatoes, onion, salt, pepper, oregano, basil and bay leaf. Stir and reduce heat to low. Cover and let simmer on low 5-10 minutes.
  • Meanwhile, in a large bowl, combine ground turkey, breadcrumbs, egg, parsley, garlic and cheese. Using wet hands, mix all the ingredients well until everything is combined. Form small meatballs, about the size of a ping ping ball (1/8th cup each).
  • If you wish, you can brown the meatballs in a skillet, or brown them in the broiler on a sheet pan until the tops are golden, 7 to 8 minutes. OR you can gently plop them right into the sauce.
  • Add the meatballs to the sauce and cook about 20 minutes. Discard the bay leaf and onion and serve over pasta or whole wheat Italian bread.

1/2 cup finely chopped onion
2 pounds ground turkey
1 jar (12 ounces) currant jelly
1 bottle (12 ounces) chili sauce

Steps:

  • In a large bowl, combine crumbs and onion. Crumble turkey over mixture and mix well. Shape into 1-in. balls. Place in a lightly greased 13-in. x 9-in. baking dish. Combine jelly and chili sauce; pour over meatballs. , Cover and bake at 350° for 40 minutes. Uncover; bake 10 minutes longer or until meat is no longer pink.

2 tablespoons orange juice
2 tablespoons honey
1 tablespoon cornstarch
1 tablespoon soy sauce
1/4 teaspoon red pepper flakes
1 large red bell pepper, cut into chunks
2 -3 cups hot cooked rice

Steps:

  • Combine the ingredients for the meatballs in a large bowl. Shape turkey mixture into 1 inch balls.
  • Heat a small amount of oil in a skillet. Add the meatballs & fry on all sides until no longer pink in the center, around 5 minutes. Place the meatballs on a paper towel lined plate to drain excess oil.
  • Drain the juice from the pineapple into a bowl. Add enough water to the juice to make 1 cup of liquid.
  • Whisk the pineapple juice, orange juice, honey, soy sauce, cornstarch, & pepper flakes together.
  • Pour the sauce into the skillet & cook over medium heat until it thickens, stir frequently.
  • Once thickened, add in the pineapple, peppers, & meatballs. Continue to cook until hot. Serve over rice.

1½ pounds ground turkey
½ cup breadcrumbs
¼ cup onion (minced)
1 teaspoon minced garlic
1 Tablespoon olive oil
⅓ cup brown sugar
¼ cup water
½ cup orange marmalade
¼ cup Honey
⅓ cup barbeque sauce
1 Tablespoon buffalo sauce
1 Tablespoon mustard

Steps:

  • Pre-heat the oven to 400 degrees.
  • In a large bowl, combine the ground turkey with the bread crumbs. It may be easiest to mix this with your hands.
  • Once combined, mix in the minced onion and garlic.
  • Roll the ground turkey mixture into 1 inch balls.
  • Heat stove to medium high heat.
  • Pour your olive oil into a pan or skillet.
  • Once the olive oil begins to bubble at the bottom, place your turkey meatballs in the pan or skillet.
  • Let each side of the pan or skillet cook the meatball until it begins to brown on the outside.
  • Brown the meatballs on all sides, then place them in a pan or baking dish and cook the meatballs at 400 degrees for about 20 minutes.
  • While the meatballs are cooking make the sauce as directed by combining the brown sugar and water until they are fully combined and melted together.
  • Add the orange marmalade, honey, barbecue sauce, buffalo sauce and mustard until it's fully combined.
  • Continue whisking until all the ingredients are fully mixed together and it begins to bubble, but don't let it come to a full boil or your sauce will be too thick and sticky.
  • Pour over the cooked meatballs immediately and serve warm.

1 cup freshly grated aged Asiago cheese
1/2 cup minced fresh parsley
1 teaspoon dried oregano
1 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
3 tablespoons good olive oil, plus extra for brushing the meatballs
2 extra-large eggs, lightly beaten
3 (24-ounce) jars good marinara sauce, such as Rao's
2 pounds dried spaghetti, such as De Cecco

Drain and place the spaghetti in individual bowls, and top with 3 meatballs and lots of sauce. Serve with Parmesan cheese on the side.
