2 tablespoons vegetable oil
1 medium onion, chopped, about 1 cup
1 -2 jalapeno chile, seeded and minced
3 garlic cloves, thinly sliced
1 lb tomatillo, chopped
salt
1/2 cup clam juice (or 1/2 cup tequila) or 1/4 cup water (or 1/2 cup tequila)
1 lb shrimp, cleaned, deveined
1 cup cotija queso seco cheese
1/4 cup chopped cilantro
lime juice
black pepper

Steps:

  • heat the oil in the pan you will use for baking. Add the onions and jalapenos, cook for 5 minutes on medium-high heat until the onions begin to brown. Add the garlic and cook a minute more.Add the tomatillos, reduce heat to medium and cook for 10 minutes, until the tomatillos are cooked through, but still hold their shape. Sprinkle salt over the tomatillos as they are cooking.
  • If using clam juice, add to the pan, turn up the heat and reduce by half. If using water, just add the 1/4 cup water without reducing.
  • Add the cheese and shrimp. Cook in a 425 degree preheated oven for 10 minutes.
  • Remove pan from the oven. Right before serving, mix in the cilantro and sprinkle with lime juice and freshly ground black pepper.

Spicy Shrimp Tamales with Roasted Tomatillo Sauce and Goat Cheese image

1 pound tomatillos, husked
1 white onion, peeled
4 garlic cloves
2 Anaheim green chiles, stems removed
2 teaspoons cumin
1 teaspoon salt
1/2 cup cilantro
2 cups prepared masa
6 ounces goat cheese, room temperature
1 bag dried cornhusks, cleaned and soaked
2 pounds jumbo shrimp, cleaned
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
1 teaspoon coriander
Salt and pepper, to taste
2 tablespoons olive oil

Steps:

  • Place tomatillos, onion, garlic, and green chiles in a roasting pan and bake in a preheated 400 degree F oven for 12 to 15 minutes. Transfer the roasted vegetables to a food processor along with any juices that are at the bottom of the pan. Add the cumin, salt, and cilantro. Pulse the mixture until combined but still chunky. You may add a bit of water or broth if the mixture is too thick. Reserve half the sauce to serve with the tamales.
  • In a deep bowl, combine the masa and remaining half of the tomatillo sauce. Beat until fully incorporated and the dough is green. Fold in the softened goat cheese.
  • Set the cornhusks on a sheet pan covered by a damp towel. Lay the husk flat on a plate with the smooth side up and the narrow end facing you. Spread a thin, even layer of the masa mixture over the surface of the husk with a tablespoon that is dipped in water. Fold the narrow end up to the center then fold both sides together to enclose the filling. The sticky masa will form a seal. Pinch the wide top closed.
  • Stand the tamales up in a large steamer or colander with the pinched end up. Load the steamer into a large pot filled with 2-inches of water. The water should not touch the tamales. Lay a damp cloth over the tamales and cover with lid. Keep the water at a low boil, checking periodically to make sure the water doesn't boil away. Steam the tamales for 2 hours.
  • Coat the shrimp with cumin, chili powder, cayenne, coriander, salt, and pepper. Heat oil in a saute pan, cook the shrimp for 5 minutes until pink. To serve, unfold the tamales, top with the spicy shrimp and spoon the reserved tomatillo sauce over the top.

5 large garlic cloves, peeled and halved
2 tablespoons extra virgin olive oil
1/2 lb tomatillo, husked
2 serrano chilies, stemmed
1/2 cup fresh basil leaf
2 tablespoons fresh mint leaves
1 tablespoon fresh tarragon leaves
1 1/4 lbs medium shrimp, peeled and deveined
freshly ground pepper
salt

Steps:

  • Place the garlic in a mortar and pestle with a generous amount. Grind to a paste. Add 1 tbsp olive oil and blend together.
  • Preheat the broiler. Cover a rimmed baking sheet with foil and place the tomatillos on top, stem side down. Place under the broiler on the highest rack and broil 2-5 minutes, until charred on one side. Turn over and broil the other side for 2-5 minutes until charred on the other side.
  • Remove tomatillos from the heat and transfer to a blender, including any juice that may have accumulated. Add chilies, basil, mint, and tarragon and blend until smooth. Season with salt to taste.
  • Season the shrimp with salt and pepper. Heat the remaining 1 tbsp olive oil over medium-high heat in a heavy saucepan and add the shrimp. Cook on one side for 1 minute then use tongs to turn the shrimp over and cook on the other side for one minute. Remove shrimp from the pan and set aside.
  • Add garlic paste to the hot pan and cook, stirring, for 30 seconds to 1 minute, until fragrant. Add the tomatillo mixture, stir together, and lower the heat to medium-low. Simmer for 5 minutes, stirring constantly, until the sauce thickens slightly.
  • Return the shrimp to the pan, bring to a simmer, and cook for about 3 minutes, stirring often, until the sauce coats the shrimp and the shrimp is cooked through. Taste, season with salt and pepper as necessary, and serve.

3 tbsp olive oil
1 lb (about 3 to 4) fresh Poblano chilies, seeded, ribs removed and roughly chopped
6 garlic cloves, finely minced
1 lb tomatillos, husked, rinsed and quartered
1-1/2 tsp salt plus extra for the shrimp
3 tbsp unsalted butter
2 lbs large shrimp, peeled and deveined
Freshly ground pepper
4 cups fresh cilantro leaves

Steps:

  • Heat the olive oil in a large skillet over medium-high heat for 1 minute. Add the chopped chilies and 1/2 of the garlic and cook until the peppers start to soften, about 5 minutes. Add the tomatillos and 1 1/2 teaspoons of salt, reduce the heat to medium-low and cook until the tomatillos begin to break down and release some liquid, about 10 minutes, stirring occasionally.
  • Transfer the tomatillo sauce to your blender, puree, and set aside.
  • Melt the butter in a large skillet over medium-high heat. Add the shrimp, season them with some salt and pepper and the remaining chopped garlic. Cook until the garlic becomes fragrant, 1 to 2 minutes, stirring often. Add the tomatillo sauce and simmer until the shrimp are curled and opaque, 1 to 2 minutes. Serve sprinkled with the cilantro.

This fragrant, pungent shrimp dish is an adaptation of a dish from Veracruz. In the authentic dish the herbal flavor comes from hoja santa, an aniselike Mexican herb that isn't easy to find in the United States. I've created a flavor that is reminiscent of hoja santa by combining basil, tarragon and mint.

5 large garlic cloves, peeled and halved
Salt to taste
2 tablespoons extra virgin olive oil
1/2 pound tomatillos, husked
2 serrano chilies, stemmed
1/2 cup fresh basil leaves
2 tablespoons fresh mint leaves
1 tablespoon fresh tarragon leaves
1 1/4 pounds medium shrimp, peeled and deveined
Freshly ground pepper

Steps:

  • Place the garlic in a mortar and pestle with a generous pinch of salt and grind to a paste. Add 1 tablespoon of the olive oil and blend together.

  • Season the shrimp with salt and pepper. Heat the remaining tablespoon of olive oil over medium-high heat in a heavy saucepan and add the shrimp. Cook on one side for one minute, then, using tongs, turn the shrimp over and cook on the other side for one minute. Remove from the pan and set aside on a plate.
  • Add the garlic paste to the hot pan and cook, stirring, for another 30 seconds to a minute, until fragrant. Add the tomatillo mixture, stir together, turn the heat to medium low and simmer, stirring often, for five minutes, until the sauce thickens slightly. Return the shrimp to the pan, bring to a simmer and cook, stirring often, for about three minutes, until the sauce coats the shrimp and the shrimp is tender but still moist. Taste, adjust salt and serve.
