3/4 cup sugar
1/3 cup white vinegar
1/3 cup ketchup
1 teaspoon Worcestershire sauce
1/2 cup vegetable oil
8 bacon strips, cooked and crumbled
1 small onion, finely chopped

Steps:

  • In a small bowl, whisk together the sugar, vinegar, ketchup and Worcestershire sauce. Gradually whisk in the oil in a steady stream. Stir in bacon and onion. Store in the refrigerator.

8 slices bacon
1 ½ cups white sugar
3 teaspoons cornstarch
½ teaspoon salt
¼ cup water
½ cup white vinegar

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • In a medium bowl, whisk together the sugar, cornstarch and salt, and slowly pour in water and vinegar, whisking constantly.
  • In a medium skillet, add the crumbled bacon and pour the vinegar mixture over it. Cook over medium heat, stirring constantly, until mixture thickens.

3 strips bacon
1/4 cup extra-virgin olive oil
2 tablespoons white wine vinegar
1 tablespoon finely chopped capers
1 teaspoon whole-grain mustard
1 hard-boiled egg, finely chopped
1 tablespoon finely minced fresh chives
1 tablespoon finely chopped fresh parsley
5 ounces baby spinach leaves (about 8 cups)
Kosher salt and freshly ground black pepper

Steps:

  • Cook the bacon in a large skillet over medium heat, turning once, until very crisp, 7 to 9 minutes. Transfer the bacon to a paper towel-lined plate. Spoon up 1 tablespoon of the remaining drippings and add them to a small measuring cup along with the olive oil.
  • Whisk together the vinegar, capers, mustard, egg and oil mixture in a large salad bowl. Stir in the chives and parsley. Add the spinach to the bowl and toss to coat. Finely chop the reserved bacon and sprinkle over the top of the salad. Season to taste.

The secret is to add enough sugar to reach the desired sweetness level. Just keep tasting and stirring the dressing -- just don't eat all of it or you won't have anything to put on the salad! 16 ounces Baby Spinach
6 eggs, hard boiled and sliced
16 pieces cooked bacon, chopped
9 tablespoons red wine vinegar
4 -6 tablespoons sugar
2 teaspoons Dijon mustard
sea salt
fresh ground black pepper
12 medium white mushrooms, sliced
6 ounces red onions, very thinly sliced (1 small)
1 cup dried cranberries
garlic cheese crouton

Steps:

  • Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
  • While the eggs are hard boiling, fry the bacon and remove to a paper towel to drain, reserving 9 tablespoons of the rendered fat. Crumble the bacon and set aside. I like to fry bacon in the oven. Just spread out the slices on a cookie sheet and pop into a 400 degree oven for about 20 minutes. You can turn the bacon during the last 5 minutes to get it crispier.
  • Transfer the bacon grease to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a few small pinches each of kosher salt and black pepper.
  • Add the mushrooms, cranberries and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 8 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

My ex-wife developed this recipe about 30 years ago, but it has been modified many times over the years due to changing tastes and the availability of ingredients. Decrease olive oil by half, and increase spices and hot sauce to make a great marinade for grilling meat and veggies. Prep time does not include time for designing and building your salad... just for making the dressing.

1/2 medium onion, finely chopped
1/4 cup cider vinegar
2 tablespoons distilled white vinegar, for 'bite'
1 tablespoon sugar, to taste (originally had 1/4 cup. but that's way to sweet for me now)
1 teaspoon salt
1/2 teaspoon garlic granules
1/4 teaspoon fresh ground black pepper, to taste
1/2 teaspoon sweet paprika
1/2 teaspoon dry mustard
1/2 teaspoon celery salt
1/2 teaspoon sriracha sauce (preferred) or 1/4 teaspoon Tabasco sauce, to taste
1/2 cup extra virgin olive oil

Steps:

  • Combine all ingredients in a jar, except olive oil, and shake thoroughly to mix.
  • Allow to set at room temperature for 30 minutes, shaking occasionally, add olive oil, shake again, and refrigerate until needed, but at least 1 hour.
  • Shake and toss with spinach salad (spinach, hard-boiled egg, sliced fresh mushrooms, real crisp bacon bits, croutons, etc.) or other greens.
  • Note: Use the Sriracha hot sauce if you can find it.
  • It adds a lot of flavor, not just heat!

  • Cook bacon in a skillet over medium heat until crisp. After the bacon is cooked, rough chop it and set it aside for the salad. Then pour off all but 2 Tbsp of bacon grease from the skillet, leaving all those good bits in the bottom of the skillet.
  • Return the skillet, 2 Tbsp of bacon fat and the "good bits" to the stovetop and heat over medium-high heat. Add the shallots, or green onions and garlic. Sautee for 1-2 minutes.
  • Whisk in the vinegar and deglaze the pan. Whisk in honey mustard, and continue to whisk until bacon renderings, vinegar and mustard are all well incorporated. Salt and pepper to taste (about 1/2 tsp each) and bring to a simmer while whisking. Remove from heat and let cool a little.
  • Assemble salad in a large salad bowl by tossing together the spinach, mushrooms, bacon, onion. Drizzle with warm bacon dressing and toss. Add sliced boiled eggs last. Serve. See post for extras to add in your salad.
