Sweet and Tangy Pulled Pork is one of my go-to dinner recipes. We eat pulled pork on its own, in sandwiches, stuffed into tacos, piled on nachos, stacked with enchiladas, and last but most certainly not least, layered into BBQ Sundaes!

2 pound pork roast
1 small onion (sliced thin)
2 tablespoons brown sugar
1 tablespoon paprika
2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/3 cup cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon crushed red pepper flakes
1 tablespoon sugar
1/4 teaspoons dry mustard
1/2 teaspoon granulated garlic
1/4 teaspoon cayenne pepper

Steps:

  • Rinse and pat dry the pork roast. Place onions in the slow-cooker or pressure cooker. In a small bowl, combine brown sugar, paprika, kosher salt and pepper; mix thoroughly. Rub mixture all over roast and place the roast on top of the onions.
  • In a medium bowl, combine vinegar, Worcestershire, red pepper flakes, sugar, mustard, garlic salt and cayenne pepper; whisk to combine. Pour over roast.
  • CROCK-POT DIRECTIONS: Cover the pork in the slow cooker and cook on low for 4-5 hours, adding about 30-40 minutes for each additional pound if you're multiplying the recipe. Shred with tongs and allow the shredded pork to rest in the cooking liquids until ready to serve. Serve warm on your favorite rolls.
  • PRESSURE COOKER DIRECTIONS: Seal the pressure cooker; cook on high for 60-90 minutes, (The cooking time is 90 minutes for the Insta-Pot, but I've been told that it requires less time for a stove-top pressure cooker.) check to see if it is shreddable. Cook an additional 30-40 minutes as needed. Shred with tongs and allow the shredded pork to rest in the cooking liquids until ready to serve. Serve warm on your favorite rolls. Enjoy!

This tangy coleslaw is great used as a topping for pulled pork sandwiches.

1 head cabbage, finely shredded
1 red onion, quartered and thinly sliced
1 cup white sugar
1 cup white vinegar
⅔ cup vegetable oil
1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon celery seed

Steps:

  • Combine cabbage and red onion in a large bowl.
  • Stir sugar, vinegar, vegetable oil, salt, dry mustard, and celery seed together in a saucepan. Bring to a boil; remove from heat.
  • Pour sugar and vinegar mixture over the cabbage and red onion. Toss mixture. Let cool, about 10 minutes. Refrigerate for at least 1 hour.

3 1/2 pound boneless pork butt
1/3 cup ketchup
1/3 cup brown sugar
2 1/2 tablespoons Worcestershire sauce
2 tablespoons apple cider vinegar
2 tablespoons mustard powder
1 tablespoon Kosher salt
1 tablespoon chili powder
2 teaspoons black pepper
2 teaspoon onion powder
2 (12 count) packages of slider buns
1 (14 ounce) package classic coleslaw mix
1 (16-ounce) hamburger-sliced dill pickles
About 2 1/4 cups BBQ sauce (store-bought or homemade)
About 1 cup mayonnaise (optional)

Steps:

  • Trim away any excess fat from the pork butt. Pat the pork butt dry with a paper towel and make the rub.
  • Add the ketchup, sugar, Worcestershire, apple cider vinegar, mustard powder, salt, chili powder, pepper, and onion powder to a medium-sized mixing bowl and stir to combine
  • Add about half of the sauce to the bottom of the crock pot and set the pork butt inside. Pour the remaining sauce over the pork butt, and turn on the slow cooker.
  • Cook for 6 hours on the high setting or 8 hours on the low setting. Shred with two forks and stir the pulled pork so that it is coated in the sauce.
  • To assemble the sliders, spread the inside of each bun with a thin layer of mayonnaise (if using). Add a scant 1/2 cup of pulled pork to the bottom bun, top with a pinch of coleslaw, a couple of pickles, a drizzle of BBQ sauce. Finally, cap with the top bun. Repeat for the remaining sliders.

1 medium onion, chopped
5 cloves garlic, minced
1 tablespoon chili powder
½ teaspoon ground black pepper
1 ¼ cups steak sauce (such as Heinz 57®)
¼ cup apple cider vinegar
¼ cup packed brown sugar
1 tablespoon Worcestershire sauce
1 ¼ teaspoons liquid smoke
1 (3 pound) lean boneless pork tenderloin, or to taste

Steps:

  • Heat oil in a skillet over medium heat. Add onion and cook until soft, about 5 minutes. Stir in garlic, chili powder, and pepper until blended; cook until garlic has softened, 3 to 4 minutes. Add steak sauce, vinegar, brown sugar, Worcestershire sauce, and liquid smoke. Stir and bring to a light boil.
  • Put pork tenderloin into a slow cooker and pour the sauce on top. Cook until the pork falls apart when touched with a fork, 5 to 6 hours on High or 10 to 12 hours on Low.

½ higher-welfare pork shoulder, neck end with bone in (5kg)
olive oil
2 heaped teaspoons smoked paprika, plus extra for sprinkling
½ a bunch of fresh mint
1-2 fresh red chillies
6 tablespoons olive oil
3 tablespoons red wine vinegar
COLLARD GREENS & APPLE SLAW
½ a white cabbage
1 red onion
3 carrots
2 big handfuls collard greens or spring cabbage
3 crunchy eating apples
2 tablespoons free-range mayonnaise
extra virgin olive oil
cayenne pepper
4-5 tablespoons red wine vinegar

Steps:

  • Preheat the oven to full whack.
  • Score the pork skin about 1cm deep all over with a sharp knife. Drizzle a little olive oil over the pork and season generously with sea salt, black pepper and the paprika.
  • Rub the flavours all over the skin, then place your pork in a roasting tray in the middle of the oven and immediately turn the temperature down to 160ºC/320ºF/gas 3.
  • Cook for about 4 hours, basting occasionally with the juices from the tray, then turn the oven down to 150ºC/300ºF/gas 2 and continue to cook for another 2 hours, or until you can pull the meat apart really easily.
  • Remove the crackling and put it to one side, then remove any fat from the tray. Pull all the pork apart, discarding any bones and fat as you go, and use 2 forks to break the meat into small- and medium-sized pieces. Cover with foil until needed.
  • To make the coleslaw, finely slice all the veg (peeling and trimming first, if necessary) or use a food processor or box grater, then very finely slice the apples. Put them into a large bowl and season with a pinch of salt and pepper.
  • Add the mayonnaise, a drizzle of extra virgin olive oil, a pinch of cayenne and the red wine vinegar. Mix everything together until you've got a perfect coleslaw texture. Taste and season to perfection.
  • Pick the mint leaves and finely chop them on a large board. Deseed and finely chop the chilli. Drizzle the olive oil and red wine vinegar all over the chilli and mint and add a good pinch of salt. Add this to the tray of pulled pork and mix it all together.
  • Serve the dressed pork in a pile on to a plate next to some crackling and a good portion of that wonderful coleslaw. Finish the whole plate off with a little salt and a hit of paprika and tuck in with a lovely cold beer.

1 (4 to 6-pound) Boston Butt, (with or without bone)
1 cup apple cider vinegar
3/4 cup ketchup

1/2 teaspoon red pepper flakes
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 cup apple cider vinegar
3/4 cup ketchup
1 tablespoon brown sugar
1 tablespoon honey
1 teaspoon Worcestershire sauce
1/4 teaspoon crushed red pepper
1/2 teaspoon black pepper

Steps:

  • Place chopped onion on bottom of a slow cooker.
  • Trim excess fat from Boston Butt and place in slow cooker on top of onions.
  • Combine remaining ingredients in a bowl and pour on top of pork. Cover and cook on low 8-10 hours.
  • Combine all ingredients for BBQ Sauce in a medium saucepan. Simmer for 20 minutes.
  • Remove pork from slow cooker (after 8-10 hours) and place in a large bowl. Use forks to shred the meat.
  • Discard the majority of liquid in the slow cooker. Return meat to slow cooker and add BBQ Sauce. Cover and cook on low 30 minutes. Serve.

1 medium onion (sliced thin)
3 tablespoons minced garlic
1 cup BBQ sauce
1/2 cup chicken broth
6-8 Hamburger buns
coleslaw

Steps:

  • In a skillet over medium heat, add onion, garlic, BBQ sauce and chicken broth. Cook until the onions are soft.
  • Add leftover pulled pork to the pan and toss with the sauce. Cook until it's heated through.
  • Toasted the buns. Then spoon shredded pork onto one half of the toasted bun.
  • Drizzle with BBQ sauce, top with coleslaw and cover with the bun tops. Serve and enjoy!

1/4 cup brown sugar
1 tablespoon chile powder
1 tablespoon smoked paprika
1 tablespoon kosher salt

2 jalapeno peppers, halved
1 large onion, quartered
One 6-pound pork shoulder roast/butt
One 18-ounce jar spicy barbecue sauce (Head Country makes a spicy one)
3 dozen mini buns, for serving
Crispy fried bacon slices, halved
Colorful Coleslaw, recipe follows
Variety of pickles such as regular, pickled red onions and pickled jalapenos
Variety of pickles such as regular, pickled red onions and pickled jalapenos
Whole-grain mustard
Spicy barbecue sauce
Hot sauce
3 mini sweet peppers (in 2 different colors), thinly sliced
2 carrots, shredded
1/2 head green cabbage, thinly sliced
1/2 head purple cabbage, thinly sliced
1/2 cup whole milk
1/2 cup mayonnaise
1 tablespoon sugar
1 teaspoon white vinegar
1/4 teaspoon kosher salt
Couple dashes hot sauce
2 cups fresh cilantro leaves

Steps:

  • For the sliders: Preheat the oven to 300 degrees F.
  • In a food processor, combine the olive oil, brown sugar, chile powder, smoked paprika, salt, pepper, cayenne, garlic, jalapenos and onions and blend until a thick paste forms. Rub the paste all over the pork and place in a large Dutch oven skin-side up. Add 1 cup water, cover tightly with a lid and roast until just tender, 4 to 5 hours.
  • Remove the lid and continue cooking until the pork is falling apart and a dark bark has formed, 1 to 2 hours longer. Allow to cool slightly.
  • Remove the pork from the pot and remove and discard the fat. Shred the pork with 2 forks. Remove as much of the fat as possible from the sauce, then transfer the shredded pork back to the sauce. Stir in the spicy barbecue sauce to just coat the meat.
  • For the fixings: Serve on mini buns with a toppings bar including bacon, Colorful Coleslaw, a variety of pickles [regular, pickled red onions and pickled jalapenos], whole-grain mustard, spicy barbecue sauce and hot sauce.
  • Combine the mini sweet peppers, carrots and cabbage in a bowl. In a separate bowl, mix together the milk, mayonnaise, sugar, vinegar, salt and hot sauce. Pour over the cabbage mixture and toss to combine. Add the cilantro and mix. Cover and refrigerate for 2 hours.

1/4 cup smoked Spanish paprika
1/4 cup packed dark brown sugar
1 tablespoon garlic powder
1 tablespoon dry mustard powder
1 tablespoon onion powder
Kosher salt
One 5- to 7-pound bone-in pork shoulder
1 cup apple cider vinegar
12 mini potato buns
Coleslaw, for serving

Steps:

  • Set an oven rack in the lowest position and preheat the oven to 300°F. Combine the paprika, brown sugar, garlic powder, mustard powder, onion powder and 2 tablespoons salt in a small bowl. Evenly rub half the spice mixture over the pork in a large bowl. Set the remaining spice mixture aside. Place the pork skin-side up in a large Food Network 5.5-qt Enameled Cast-Iron Dutch Oven or roasting pan. Roast, covered, until the meat is falling apart and easily pulls away from the bone, 4 to 5 hours. Let the pork rest, covered, for 30 minutes. Shred the pork using 2 forks and mix with the juices in the bottom of the pot. Bring the cider vinegar to a simmer in a small pot over medium heat and add the reserved spice mixture. Simmer until the sugar is dissolved, about 1 minute, then pour over the pork. Mix well to combine. Serve the warm pulled pork on the buns with the coleslaw.
