CHICKEN TACOS WITH SLAW



Chicken Tacos With Slaw image

This recipe for fried chicken tacos with slaw takes only 20 minutes to make and is a delicious combination of flavors for a quick dinner or lunch.

0.75 cup mayonnaise
0.25 cup apple cider vinegar
1 teaspoon black pepper
1.25 teaspoons kosher salt, divided
0.25 head red cabbage, thinly sliced (about 8 oz.)
0.5 cup canola oil
0.75 cup all-purpose flour
1 pound chicken breast tenders
0.5 cup buttermilk
1 tablespoon light brown sugar
0.5 teaspoon paprika
1-4 teaspoons cayenne pepper
8 6-in. flour tortillas, warmed
Dill pickle chips, for serving

Steps:

  • Whisk together mayonnaise, vinegar, black pepper, and ½ teaspoon of the salt in a large bowl. Set aside ½ cup of the white sauce for serving. Toss remaining sauce with cabbage.
  • Heat oil in a large, heavy-bottomed skillet over medium-high. Combine flour and remaining ¾ teaspoon salt in a shallow dish. Dip chicken in buttermilk and dredge in flour mixture, shaking off excess. Working in batches, add chicken to oil and fry, turning once, until golden brown and crispy, about 3 minutes per side. Transfer to a paper towel-lined plate.
  • Remove skillet from heat and whisk in sugar, paprika, and 1 teaspoon cayenne, tasting and adding more cayenne to reach desired heat preference. Add chicken and toss to coat; transfer to a cutting board and cut into 1-inch pieces. Build tacos with slaw, chicken, and pickle chips. Serve drizzled with reserved white sauce.

3 cups chopped red cabbage
1 ½ cups chopped celery
1 cup chopped onion
3 cloves garlic, crushed
5 cups water
1 cube vegetable bouillon
1 (14 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
2 tablespoons white vinegar
¼ cup brown sugar, or to taste
½ teaspoon paprika
½ teaspoon cayenne powder, or to taste
¼ teaspoon dried rosemary
¼ teaspoon dried thyme
1 pinch salt and ground black pepper

Steps:

  • Heat oil in a large saucepan over medium heat. Stir in cabbage, celery, onion, and garlic. Cook until onion is translucent, about 5 minutes. Stir in water and vegetable bouillon. Add diced tomatoes, tomato paste, and vinegar. Continue stirring, slowly adding sugar until broth reaches the desired sweetness.
  • Season soup with paprika, cayenne, rosemary, thyme, salt, and pepper. Bring to a boil; reduce heat and simmer until vegetables are tender, 40 minutes to 1 hour.

1 tbsp olive oil
1 medium-size red cabbage, quartered, cored and shredded
1 finger-size piece fresh root ginger, finely chopped
2 onions, sliced
1 tsp ground allspice
1 tbsp mustard seed
100g golden caster sugar
150ml red wine vinegar

Steps:

  • Heat oil in a large saucepan, add cabbage, ginger, onions, allspice and mustard seeds, then cook for 5 mins until just starting to wilt.
  • Scatter over the sugar and pour in the vinegar. Cover pan, gently cook for 10 mins, then remove lid and turn up the heat to medium. Simmer the liquid in the cabbage for about 20 mins, stirring occasionally, then stir continuously for the last few mins until all the liquid has evaporated and becomes sticky on the bottom of the pan. Tip cabbage into a large bowl and serve.

1 large red cabbage (about 1kg/2lb 4oz)
25g butter
2 red onions, finely chopped
finely grated zest and juice 1 orange
1 cinnamon stick
150ml port
1 tbsp red wine vinegar

Steps:

  • Peel off the outer leaves of the cabbage, then cut into quarters and slice out the core. Use a sharp knife or the slicing attachment of a food processor to thinly slice the cabbage.
  • Heat the butter in a large saucepan, then tip in the onions and gently fry until softened, about 5 mins. Add the orange zest to the pan along with the cinnamon stick, then cook for 1 min more. Add the shredded cabbage, then pour over the port, red wine vinegar, orange juice and 150ml water. Bring up to the boil, then reduce the heat to a simmer, cover the pan and cook for 45 mins-1 hr until the cabbage is softened.

1 Tbsp salted butter
1 onion, (diced)
1 tart green apple ((like Granny Smith), cored and diced)
2 bay leaves
2 whole cloves
1/2 tsp whole peppercorns
1 lb red cabbage, (shredded)
1/2 tsp salt
1 c dry red wine ((like Merlot))
1/4 c red wine vinegar
1 Tbsp unbleached all-purpose flour

Steps:

  • Melt the butter in a large Dutch oven over medium high heat. Add the diced onions and saute for 2-3 minutes. Add the diced apples and continue to saute 2-3 minutes.
  • Tie the bay leaves, cloves, and peppercorns together in a cheesecloth. (Optional, but this makes for much easier removal later).
  • Add the cabbage, spices, salt, red wine, and red wine vinegar. Bring the mixture to a simmer.
  • Cover and simmer over low heat for 1.5 - 2 hours, checking occasionally to be sure there is enough moisture and the cabbage isn't sticking.
  • When the cabbage is tender to your liking, sprinkle 1 Tbsp of flour over the cabbage. Mix it in well and continue to cook the cabbage for 1-2 minutes, while any remaining liquid thickens.
  • This dish can be served immediately (remember to take out the bay leaves, peppercorn, and cloves) or it can be refrigerated for later. Some people swear that the flavor improves with time.
