The only barbecue sauce I use, for everything from shredded pork loin or ribs to thin sliced ham sandwiches or shredded beef. Often served with chilled potato salad & fresh homemade dinner rolls to mop up the sauce (if not using the meat in a sandwich already).

Steps:
- In large saucepan, combine all ingredients and bring to a boil over medium heat.
- Reduce heat and simmer, uncovered, for about one hour. Stir occasionally.
- *For ribs: Boil ribs with some salt & pepper and a quartered onion until tender. Then drain and place on broiler pan. Baste with sauce, broil 5 minutes, turn ribs over and baste other side. Broil 5 minutes longer. Serve.
- *For shredded pork sandwiches: Put sauce and pork loin in crock pot on low for 5-6 hours or until pork begins to shred itself when poked with a fork.
- *For barbecue ham sandwiches: Put sauce and thin, deli sliced ham torn into 2 inch pieces into crock pot and heat on low for 2 hours or until hot.
GRILLED SWEET AND TANGY PORK CHOPS

- Preheat the grill to medium-high heat.
- Season the pork chops lightly on both sides with the Seasoning Salt. Remember, we aren't rubbing the chops.
- Grill the chops for 5 to 7 minutes per side. Brush them with the Sweet and Tangy Glaze the last 5 minutes of grilling. Internal temperature should register 145 degrees F on an instant-read thermometer. Remove the chops from the grill to a serving platter and allow them to rest for 5 minutes before serving.
- Mix the salt, onion powder, black pepper, garlic powder, celery seed, cayenne, and smoked paprika in a small bowl. Reserve a small amount for another use.
- You can store the remaining Seasoning Salt in an airtight container for up to 6 months.
- In a small bowl, mix together the apple cider vinegar, maple syrup, ketchup, mustard, Worcestershire, and hot sauce. Season with salt and pepper, to taste, and refrigerate if not using immediately.

- To make a rub, bash all the spices together with a good pinch of sea salt and black pepper in a pestle and mortar till fine (or use a blender). Muddle in 2 tablespoons of olive oil.
- Trim the fat off the pork, then rub the spice mix over the pork and marinate for 1 hour.
- Light your barbecue and let it calm down. Make sure you've got your coals high on one side and low on the other for control.
- Grill the pork for 5 to 10 minutes, using tongs to turn it till charred all over. Fat will render out, so keep it moving to avoid any flames.
- Once it's looking beautiful, move it to the cool side of the barbecue, cover with tin foil and cook for 45 to 60 minutes, turning every 5 to 10 minutes - you should get gnarly pork that's beautifully cooked. Check it by cutting in half and looking, or use a meat thermometer and stop when it reaches 72ºC inside - you don't want it pink but please don't cook the hell out of it either.
- Meanwhile, for the sauce, mix all the ingredients together. Taste it, and tweak the flavours until it tastes right for you. Whatever vibe you're going for, you want to go slightly too far as it will mellow when it cooks. You don't have to, but it's nice to put it on the heat for a couple of minutes to help it along.
- For the salad, pick and finely slice all the herbs. Scrub the beetroot and shred the cabbage. Finely slice the chillies (if using).
- Add the herbs to a large serving bowl. Thinly slice your beets and apples (core and all), then finely slice into matchsticks (a food processor will do a fine job).
- Put these in the bowl, along with the chilli (if using), and add a squeeze of lemon juice.
- Just before serving, pour on the extra virgin olive oil, squeeze over the rest of the lemon juice and add a good pinch of pepper. Toss it all together, then have a taste and season to perfection, if needed.
- Brush half the sauce all over the pork so it's shiny and dark, and cook for the final few minutes till it sizzles.
- Put it back on the hot side if it needs help to get sticky, but don't let it burn.
- Transfer to a nice board, drizzle over the rest of the sauce and carve at the table, to eat with your lovely salad.

- Slice the pork into extremely thin slices, then transfer to a large bowl. This works best when the pork is super cold or partially frozen.
- Add in all of the ingredients besides the canola oil, then mix until the pork and the vegetables are evenly coated with the marinade.
- Cover and marinate in the refrigerator for at least 30 minutes.
- Heat the oil in a pan over high heat, add pork, being sure not to crowd the pan, stir-fry the pork in batches until slightly crispy on the edges, about 3-4 minutes. If you're using pork belly, cook for a bit longer, around 6-7 minutes.

- Combine the Rub ingredients and rub onto both sides of the ribs (most on meaty side). Set aside to marinate for 20 minutes (or overnight).
- Preheat oven to 160°C/320°F (all oven types).
- Place ribs on a tray in a single layer. Pour apple cider underneath the ribs, cover with foil then bake for 1 hour 30 minutes or until the meat is pretty tender (Note 5).
- Remove from oven, turn up to 180°C/350°F. Remove foil, drizzle with olive oil, then return ribs to oven for 15 minutes or until rub becomes nice and crusty.
- Line a new tray with foil then baking / parchment paper (you'll thank me later).
- Remove ribs from oven, transfer to lined tray. Pour any juices from tray over the ribs.
- Flip ribs so the bonier side is up. Slather with Barbecue Sauce, then bake 10 minutes.
- Remove from oven, then turn ribs over so the meaty side is up. Slather with Barbecue Sauce, bake 5 minutes. Repeat 2 or 3 more times until you've got a thick glaze on the ribs.
- Cut ribs into individual or multiple rib portions and serve with remaining Barbcue Sauce!

- To make the pork: Dissolve 1 cup salt, ½ cup sugar, and 3 tablespoons liquid smoke in 4 quarts cold water in large container. Submerge pork in brine, cover with plastic wrap, and refrigerate for 2 hours.
- Meanwhile, in a small prep bowl, stir together the mustard and remaining 2 tsp liquid smoke; set aside. In a second small prep bowl, mix the black pepper, paprika, remaining 2 tbsp sugar, remaining 2 tsp salt, and cayenne together; set aside. During the last 15 minutes that the pork is brining, adjust oven rack to the lower-middle position and preheat oven to 325° F.
- Remove pork from brine and dry thoroughly with paper towels. Rub the mustard mixture over entire surface of each piece of pork. Sprinkle entire surface of each piece with all of the spice mixture, gently pressing the spice mixture into the mustard with your fingers. Place pork on wire rack set inside foil-lined rimmed 12×18-inch baking sheet. Place a piece of parchment paper over pork, then cover with a sheet of heavy duty aluminum foil (heavy duty foil will cover the sheet in one large, neat sheet), sealing the edges to prevent moisture from escaping. Roast the pork for 3 hours.
- Remove pork from oven; remove and discard foil and parchment. Carefully pour off liquid in bottom of baking sheet into a heat-proof bowl or fat can, discard. Return the pork to oven and cook, uncovered, until well browned, tender, and internal temperature registers 200° F on instant-read thermometer, about 1 to 1 ½ hours. Transfer the pork to serving dish, tent loosely with foil, and let rest for 20 minutes.
- To make the sauce: While the pork rests, whisk the first six ingredients for the sauce in a medium bowl. Add salt and pepper to taste.
- To serve: Pull the pork into shredded bite-size pieces with two forks. Toss with 1 cup of the sauce and season with salt and pepper as needed. Serve the pork hot, passing remaining sauce separately. Transfer any remaining sauce to a resealable container and store in the refrigerator for up to 4 weeks.
