1 orange, peeled and segmented
1 kiwi -- peeled, halved and sliced
1 cup seedless grapes
1 cup quartered strawberries
¼ teaspoon grated lime zest
2 tablespoons lime juice
1 tablespoon honey
1 teaspoon poppy seeds

Steps:

  • In a large bowl, toss pineapple, orange, kiwi, grapes and strawberries. In a small cup or bowl, combine lime zest, lime juice, honey, poppy seeds and 1/4 cup reserved pineapple juice. Stir well and toss with fruit.

A bright and colourful salad to brighten up a gloomy day, featuring a creamy yogurt-based dressing of marinated basil, lemon zest and poppy seeds over a bed of colourful vegetables. Easy, tangy and satisfying.

1/3 cup Greek yogurt
1 tbsp Olive oil
1 tbsp Shio koji*
1 Lemon, zest and juice
1 Sallot, julienned
1 tbsp White wine Vinegar
1 tbsp poppy seeds
Handful Basil leaves, chiffonaded
1/2 tsp Maple Syrup
Pinch Black pepper
Half a bunch Kale
Handful Cherry Tomatoes
1/4 Red Onion, thinly sliced
1-2 Scallions, thinly sliced
Sheep Feta, crumbled
A few Basil leaves
A sprinkle of poppy seeds

Steps:

  • Prepare the dressing first by mixing all the ingredients together. I like to leave the dressing in the fridge to marinate for a couple hours, but you can also use it straightaway.
  • Separate kale leaves from the tough stems, and steam the leaves from 3-4 minutes. Discard the stems.
  • While the kale is steaming, and cooling down, prepare the other salad ingredients and add them to a large bowl. Add the kale when it has cooled to room temperature.
  • Mix in the dressing, and add the garnishes. Voila!

2 1/4 cups cold spring water
2/3 cup of Bragg Raw Apple Cider Vinegar
2 tsp chopped sweet or red onion
1 cup raw organic sugar or raw honey
2 teaspoon dry mustard
2 teaspoon Celtic Sea Salt
1/3 cup mayo
4 tablespoons Tapioca flour (or cornstarch but we don't use cornstarch)

Steps:

  • In a small pan roast, the poppy seeds for a few seconds set aside. In a blender place the rest of your ingredients. Blend well and place in small pan and heat until thickened then stir in your 1 of tablespoon poppy seeds. Cool. Pour into a quart jar and refrigerate. Makes about a quart If you find it thicker than you like, add about 1/4 cup water after it has been in the fridge and that will thin it out some.

1 small shallot

  • In a small mason jar, combine the vinegar and sugar. Secure the lid and shake until the sugar is mostly dissolved.

1 teaspoon dry mustard
1 teaspoon onion flakes
¼ teaspoon kosher salt
½ cup grapeseed oil* (or other neutral oil like organic vegetable or canola)

Steps:

  • In a medium bowl, whisk together the granulated sugar, white vinegar, dry mustard, onion flakes, and kosher salt. Remove immediately from the heat and transfer to a plate to stop the cooking.
  • Place the greens on a plate or platter. Top with the pear slices, shallot, toasted pecans, pomegranate seeds, and gorgonzola cheese crumbles. Drizzle with the desired amount of dressing and serve (use approximately 6 tablespoons for 4 servings; store the remaining dressing refrigerated).
