¼ cup mayonnaise
¼ cup minced red onion
½ cup finely chopped tomato
2 tablespoons dill pickle relish
½ teaspoon ground piri piri chile pepper
salt and ground black pepper to taste
2 (4 ounce) fillets tilapia fillets
1 teaspoon seafood seasoning (such as Old Bay®)
½ teaspoon garlic powder
2 tablespoons butter
4 slices pepperjack cheese
4 slices whole wheat bread, toasted

Steps:

  • Stir together the mayonnaise, onion, tomato, relish, and piri piri in a small bowl. Season to taste with salt and pepper, and set aside.
  • Season the tilapia fillets on both sides with the seafood seasoning and garlic powder. Melt the butter in a skillet over medium heat. Cook the tilapia fillets until they are golden brown on both sides and no longer translucent in the center, 2 to 3 minutes per side. Place two slices of pepperjack cheese on top of each fillet, cover the skillet, and cook until the cheese has melted.
  • Place each tilapia fillet onto a slice of toasted bread, spread with the reserved sauce, then top with the remaining slices of bread.

1 tablespoon butter (divided)

Steps:

  • Begin by seasoning both sides of each filet and cutting the first lemon into slices to lay on top of each filet.
  • Heat a pan large enough to fit 5 filets, adding half of the butter and half of the olive oil. Squeezing half a lemon over each side as it cooks.
  • Once the first side has turned golden, turn over and cook on the other side. Add the remaining olive oil and butter.
  • Add the lemon slices to each filet once they are almost done cooking, allowing them to sit until the slices soften slightly before removing from heat.
  • Serve with steamed rice and your favorite vegetable for a simple and easy meal. I love to serve it with my Garlic Parmesan Asparagus for a tasty meal.

4 fillets Tilapia Fish
1/2 tsp Mixed seasoning (adjust qty to your taste)
1/4 tsp Black pepper
1/4 tsp Cayenne Pepper or Cameroon Pepper

Steps:

  • Pat your fish fillets dry
  • Rub Olive Oil all over fish.
  • Sprinkle your seasoning mix, black pepper and Cayenne or Cameroon pepper - on both sides of fish.
  • Heat up 2 tbsps of olive oil in pan on medium heat for about 1 minute.
  • Place fish in pan and cool for 3 minutes.

Steps:

  • Defrost your fish fillets in a bowl of cold water for 20-30 minutes or overnight in the refrigerator.
  • Mix together the sugar, chili powder, salt, garlic powder and zest of 1 lime together in a small bowl.

  • Heat oil in nonstick skillet over medium high heat.

1/2 teaspoon fresh ground black pepper
1 1/2 pounds fresh tilapia fillets
2 tablespoons canola oil

2 tablespoons lemon juice

Steps:

  • Heat oven to 300 degrees F.
