Sweet and Tangy Summer Macaroni Salad image

Quick and easy. Tastes best when it sits for a while before serving. I change up the veggies every time I make it, with whatever I have on hand. Carrots and celery work well.

2 cups elbow macaroni
2 ripe tomatoes, chopped
½ green bell pepper, seeded and chopped
¼ cucumber, chopped
1 green onion, chopped
⅔ cup white sugar
½ cup vegetable oil
⅓ cup ketchup
¼ cup vinegar
1 teaspoon salt
1 teaspoon paprika
¼ teaspoon ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain and rinse in cold water until macaroni is cooled.
  • Place macaroni into a large salad bowl and stir in tomatoes, green bell pepper, cucumber, and green onion.
  • Whisk sugar, vegetable oil, ketchup, vinegar, salt, paprika, and black pepper, stirring in a bowl until sugar has dissolved. Pour dressing over macaroni and vegetables and toss to coat.

For the Dressing:
1 1/2 cups mayonnaise
1/2 cup sour cream
3/4 cup whole milk
3 tablespoons Dijon mustard
2 tablespoons fresh lemon juice from 1 lemon
1 tablespoon hot sauce, preferably Texas Pete
3/4 teaspoon Worcestershire sauce
3/4 teaspoon garlic powder
For the Salad:
1 pound elbow macaroni
1/2 cup apple cider vinegar
1 rib celery, finely chopped
1/4 cup finely chopped shallots
4 scallions, finely sliced
Kosher salt and freshly ground black pepper

Steps:

  • For the dressing: Whisk together all ingredients in a medium bowl. Set aside.
  • For the Salad: In a large pot of salted boiling water, cook pasta until very tender, about 15 minutes. Drain pasta and transfer to a large bowl. Add vinegar and stir until completely absorbed. Let pasta stand until cool, about 10 minutes.

1 cup uncooked elbow macaroni
1 cup chopped celery
1 can (6 ounces) light water-packed tuna, drained and flaked
3/4 cup frozen peas, thawed
3 tablespoons minced fresh parsley
2 tablespoons sliced pimiento-stuffed olives
1/2 cup reduced-fat mayonnaise
1/2 cup fat-free plain yogurt
1 tablespoon red wine vinegar
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon garlic salt
1/4 teaspoon ground mustard

  • Cook macaroni according to package direction; drain and rinse in cold water. 6 slices OSCAR MAYER Bacon
1 cup MIRACLE WHIP Dressing
2 Tbsp. sugar
1/2 tsp. garlic salt
1 pkg. (16 oz.) pasta (such as mostaccioli, macaroni or rotini), cooked, drained
3 carrots, shredded
1 small red or yellow onion, sliced
1 medium green pepper, chopped

Steps:

  • Cook bacon in skillet on medium heat to desired crispness, turning frequently. Drain bacon, reserving 2 Tbsp. of the drippings. Crumble bacon; set aside.
  • Mix reserved drippings, the dressing, sugar and garlic salt in large bowl. Add all remaining ingredients except bacon; mix lightly. Cover.
  • Refrigerate several hours or until chilled. Sprinkle with crumbled bacon just before serving.

My family doesn't like macaroni salad with a lot of mayonnaise. I threw together this recipe one day when I couldn't find one I liked online. It was a huge hit with everyone helping themselves to seconds. I think this recipe would also be great with some hard boiled egg added. You could also try different vegetables such as celery or green pepper according to your taste. The result is a sweet and tangy, not overly creamy or mayonnaise tasting macaroni salad. Great with grilled food!

3/4 cup mayonnaise
3 tablespoons cider vinegar

2 -3 chopped scallions
shredded carrot
