I got this recipe from dear friends many years ago, and it has been a mainstay at my house ever since. This salad is a sweet refreshing side dish or light dessert.-Darlene Alexander, Nekoosa, Wisconsin

Number Of Ingredients 8

1 can (20 ounces) pineapple chunks
1 can (15 ounces) fruit cocktail, drained
1 can (11 ounces) mandarin oranges, drained
2 medium bananas, sliced
2 medium apples or pears, cut into chunks
1 cup sliced fresh strawberries, optional
1 package (3.4 ounces) instant vanilla pudding mix
1/4 cup orange breakfast drink mix

Steps:

  • Drain pineapple juice into a small bowl; set aside. In a large serving bowl, combine the pineapple, fruit cocktail, mandarin oranges, bananas, apples and strawberries if desired., Whisk the pudding mix and drink mix into the reserved pineapple juice. Fold into fruit mixture. Refrigerate before serving.

1 (20 ounce) can pineapple chunks - drained with juice reserved
1 orange, peeled and segmented
1 kiwi -- peeled, halved and sliced
1 cup seedless grapes
1 cup quartered strawberries
¼ teaspoon grated lime zest
2 tablespoons lime juice
1 tablespoon honey
1 teaspoon poppy seeds

Steps:

  • In a large bowl, toss pineapple, orange, kiwi, grapes and strawberries. In a small cup or bowl, combine lime zest, lime juice, honey, poppy seeds and 1/4 cup reserved pineapple juice. Stir well and toss with fruit.

PASSION FRUIT CHEESECAKE RECIPE

1 cup of plain sweet biscuits (shortbread cookies work for this)
1/2 cup of melted unsalted butter
2 cups of cream cheese (room temperature)
3/4 cup + 1/4 cup of caster sugar
2 teaspoons of lemon rind (finely grated)
2 tablespoons of lemon juice
5 eggs
1/2 cup of heavy cream
1 tablespoon of cornstarch
1/3 cup of water
1/2 cup of passion fruit pulp

Steps:

  • In an 8-inch springform pan, invert it and line the base with baking paper. Let the sides overhang and secure the base to the pan again.
  • Using a food processor, mix the biscuits until it is finely crushed. Add the butter and process the mixture together until it's combined. Put the crust mixture into the springform pan, using the back of your spoon to spread it around and press it. Cover the pan with plastic wrap and put it in your refrigerator, letting it chill for 30 minutes.
  • Preheat oven to 325 degrees F. Beat the cream cheese, lemon rind, and the caster sugar with an electric mixer until smooth. Add the flour and lemon juice, then the eggs one at a time. Make sure it beats well after adding one egg after another. Last, add the heavy cream and mix well.
  • Add cream cheese mixture into the 8-inch springform pan, on top of the crust. Place on a baking tray and let it bake for about an hour and ten minutes, or once your cheesecake is set in the center.
  • Turn off the oven and open the door just a bit, letting the cheesecake stay in the oven for two hours until it's completely cooled. Place the cheesecake in the fridge overnight to let it set.
  • For the passion fruit topping, mix the cornstarch and water in a bowl and put it in a saucepan. Add the extra caster sugar and passion fruit pulp, letting it cook over medium heat. Stir for about three minutes or when the mixture starts to boil and thicken
  • Remove from heat and allow the passion fruit cool for about 30 minutes. Pour it over the cheesecake and put it back in the fridge for about two hours or until it sets

3 cups low-fat vanilla frozen yogurt
