250ml mayonnaise
zest and juice 1 lemon
2 tbsp cider vinegar
2 tbsp wholegrain mustard
1 tsp celery salt
¼ head white cabbage, very thinly sliced
¼ head red cabbage, very thinly sliced
2 carrots, julienned
1 large red onion, diced
2 sticks celery, thinly sliced

Steps:

  • Whisk together mayonnaise, lemon zest and juice, vinegar, mustard and celery salt in a small bowl, then season generously.
  • Add cabbage, carrots, onion and celery. Mix well and refrigerate. Can be made up to 1 day ahead.

3-3/4 cups coleslaw mix
1/3 cup slivered almonds
3 tablespoons sliced green onions
1/2 cup canola oil
1/3 cup white wine vinegar
3 tablespoons sugar

Steps:

  • In a large bowl, break noodles into small pieces; set seasoning packet aside. Add the coleslaw mix, almonds and onions. , In a small bowl, whisk the oil, vinegar, sugar and contents of seasoning packet. Pour over coleslaw mixture and toss to coat. Serve with a slotted spoon. Refrigerate leftovers.

2 tablespoons soy sauce
2 tablespoons rice vinegar, or white vinegar
2 tablespoons sugar
2 tablespoons crushed red pepper ( kochukaru / gochugaru )
1 tablespoon sesame oil
1 tablespoon sesame seeds

Steps:

  • Gather the ingredients.

6 cups shredded red cabbage
3 cups shredded carrots
¼ cup finely chopped shallots, from 1 to 2 shallots
1 clove garlic, minced
½ cup coarsely chopped fresh cilantro (parsley may be substituted)
Zest and juice from 1 orange (about 1 teaspoon zest and ¼ cup juice)
¼ cup fresh lime juice, from 2 limes
⅓ cup vegetable oil
1½ tablespoons sugar or honey
1 teaspoon salt
½ teaspoon freshly ground black pepper

Steps:

  • Combine all of the ingredients in a large bowl and toss well. Cover and refrigerate for at least 1 hour or overnight. Stir well, then taste and adjust seasoning, if necessary (I sometimes add a bit more sugar or honey).

4 scallions, sliced

1 bunch radishes, thinly sliced (about 2 cups)

Steps:

  • In a large bowl, whisk together the cider vinegar, canola oil and sugar. Season with salt and pepper. Add the cilantro, scallions, three-quarters of the cabbage (reserve the remaining cabbage for another use, such as Round 2 Recipe Cabbage and Beef Stir Fry), cucumbers and radishes. Toss to combine.
