SPICY ROASTED CHICKEN LEGS

2 sticks butter
Juice of 2 to 3 lemons
1/2 teaspoon salt
1 teaspoon black pepper
1 teaspoon cayenne pepper
4 cloves garlic, minced
24 whole chicken legs

Steps:

  • Preheat the oven to 450 degrees F. Line baking sheets with foil.
  • Melt the butter in a saucepan. Add the lemon juice, salt, black pepper, cayenne and garlic, and stir. Set aside.
  • Rinse and pat the chicken legs dry. With metal tongs, dip them one by one into the butter mixture and place on the prepared baking sheets.
  • Once all of the chicken legs are coated and on the baking sheet, take a pastry brush and give them one last coating of the butter mixture.
  • Place them into the oven for 30 to 35 minutes, basting a couple of times during roasting. If they need a bit more color, turn on the broiler for a couple minutes and watch them closely.
  • Remove them when they are nice and golden brown and fully cooked.

12 chicken drumsticks
6 cloves garlic, crushed
3 tablespoons ginger
1 red chili
3 tablespoons honey
½ cup soy sauce
sesame seed
spring onion

Steps:

  • In a mixing bowl, combine the garlic, ginger, chili, honey, and soy sauce.
  • Mix in the chicken drumsticks.
  • Cover with cling film and leave to marinate in the fridge for 4-6 hours, or overnight.
  • Fry the chicken in a large pan, on all sides for about 10-15 minutes, stirring often to prevent the marinade from burning, until golden brown.
  • Remove from the pan and pour in the marinade.
  • Bring to a boil and stir, until the marinade is thick and resembles a sauce.
  • Throw the chicken back in the pan and fry for a further 5-10 minutes in the sauce, making sure each drumstick is evenly coated and cooked through.
  • Garnish with sesame seeds and spring onions.

8 medium chicken drumsticks (4 oz each)
2 tablespoons olive oil
1 teaspoon Diamond Crystal kosher salt ((not fine salt))
2 teaspoons chili powder
1/2 teaspoon cayenne pepper
2 tablespoons chopped parsley
Pinch red pepper flakes

Steps:

  • Preheat your oven to 400 degrees F. Line a rimmed baking sheet with high-heat-resistant parchment paper.
  • Wipe the chicken drumsticks dry with paper towels. Arrange them in a single layer on the baking sheet.
  • Prepare the rub: In a small bowl, combine the olive oil, kosher salt, chili powder and cayenne pepper to create a paste. Pour the paste over the chicken pieces and, using your hands or a pastry brush, coat the chicken on all sides.
  • Bake the drumsticks until cooked through (their internal temperature should reach 165ºF) and juices run clear, about 40 minutes. Check them after the first 30 minutes and loosely cover them with foil if they seem to be darkening too fast on top.
  • If you wish, garnish with chopped parsley and red pepper flakes, then serve.

1 broiler/fryer chicken (3 pounds), cut up, skin removed
2/3 cup ketchup
1/3 cup packed brown sugar
1 tablespoon chili powder
1 tablespoon lemon juice
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon hot pepper sauce
2 tablespoons cornstarch
3 tablespoons cold water

Steps:

  • In a 3-qt. slow cooker, combine onion and garlic; top with chicken. In a small bowl, combine the ketchup, brown sugar, chili powder, lemon juice, basil, salt, pepper and pepper sauce; pour over chicken. Cover and cook on low until juices run clear, 4-5 hours. Remove chicken to a serving platter; keep warm. , Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth. I don't remember where I found this recipe or what I've changed from the original recipe, but it's one that my family and friends use again and again. No one ever expects to find coffee as an ingredient, but it adds the perfect flavor and wouldn't be the same without it. Easy way to make 'BBQ' sauce from stuff sitting around the kitchen.

1 cup brewed coffee (I use leftover coffee from breakfast)
1 cup ketchup
1/2 cup sugar
1/4 cup brown sugar
1/2 cup Worcestershire sauce
1/4 cup vinegar
2 tablespoons yellow mustard
pepper
1 tablespoon red pepper flakes (more or less to taste)
8 chicken leg quarters

Steps:

  • In a saucepan combine the first nine ingredients.
  • Bring to a boil; reduce heat and simmer uncovered about 45 minutes to an hour, stirring frequently.
  • Put chicken in a 13x9 baking dish and cover with sauce. (The sauce tends to get greasy this way, so I prefer grilling or broiling.)
  • Bake at 350° for an hour or until juices run clear.
  • If grilling, brush chicken with sauce before putting on the grill and brush again every 15 minutes, turning to coat both sides well until chicken juices run clear.

2 garlic cloves, peeled and crushed
8tbsp tomato ketchup
2tbsp dark soft brown sugar
2tbsp Worcestershire sauce
1tsp mustard powder
1tbsp sunflower oil
Salt and freshly ground black pepper
8 chicken drumsticks
Fresh herbs and tomatoes, to serve

Steps:

  • Mix the garlic, tomato ketchup, sugar, Worcestershire sauce, mustard powder and oil in a bowl and season with salt and freshly ground black pepper.
  • Make 2-3 deep cuts in the each chicken drumstick then add to the bowl and turn to coat completely in the marinade. Cover and leave to marinate at room temperature for 1hr or overnight in the fridge.
  • Preheat the oven to 200°C/400°F/Gas Mark 6. Transfer the drumsticks to roasting tin and roast for 35-40 mins until golden, lightly charred in places and cooked through. Serve garnished with fresh herbs and tomato wedges.
