My mother-in-law created this recipe, and we just can't get enough of her delectable sauce! I always keep a little out of the basting dish prior to using it on the grill so we have some to serve at the table. It tastes terrific on any grilled meat. -Mary Kaye Rackowitz, Marysville, Washington

Number Of Ingredients 11

1 cup ketchup
2 tablespoons lemon juice
2 tablespoons cider vinegar
1/4 cup packed brown sugar
2 teaspoons prepared mustard
1 teaspoon salt
1/2 to 1 teaspoon hot pepper sauce
1 bay leaf
1 garlic clove, minced
1/2 cup water
2 teaspoons Worcestershire sauce

Steps:

  • Combine all of the ingredients in a small saucepan; bring to a boil, stirring occasionally. Reduce heat; cover and simmer for 30 minutes., Discard bay leaf. Use as a basting sauce when grilling chicken, pork or beef.

Number Of Ingredients 12

1 tablespoon unsalted butter
1/2 small onion, grated
2 garlic cloves, minced
Coarse salt and freshly ground pepper
1 1/2 cups ketchup
1/2 cup packed light-brown sugar
1/3 cup cider vinegar
2 tablespoons unsulphured molasses
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1/2 teaspoon cayenne
Juice of 1 lemon

Steps:

  • In a medium saucepan, melt butter over medium heat. Add onion and garlic; season with salt and pepper. Cook, stirring occasionally, until onion is soft, 2 to 3 minutes. Add ketchup, brown sugar, vinegar, molasses, Worcestershire, mustard, cayenne, and lemon juice. Bring to a simmer. Cook, stirring occasionally, until thick, about 5 minutes. Carefully transfer mixture to a blender and puree until smooth. Sauce can be cooled completely and refrigerated in an airtight container for up to 2 weeks.

1/2 cup ketchup
1 teaspoon hot sauce
1/3 cup cider vinegar
3 tablespoons Dijon mustard
3 cloves garlic, minced
1/2 cup light-brown sugar
1/4 cup molasses
1 cut-up chicken (3 pounds)
1 tablespoon vegetable oil
Coarse salt and ground pepper

Steps:

  • Heat grill to medium. Simmer sauce ingredients (first 7 ingredients listed above) in a small saucepan over medium heat until reduced to about 1 1/4 cups, 5 to 7 minutes. Divide barbecue sauce between two bowls; use one for basting and set aside the other for serving.
  • In a large bowl, toss chicken with vegetable oil; season well with coarse salt and ground pepper.
  • Lightly oil grates; place chicken on grill. Cover grill; cook, turning frequently, until chicken registers 165 degrees (160 degrees for breast) on an instant-read thermometer, 10 to 15 minutes. Uncover grill; continue cooking, basting frequently with sauce, until chicken is glazed thoroughly, 3 to 4 minutes more. Serve with remaining sauce.

1 small onion, finely chopped

1/4 teaspoon allspice
One 15-ounce can tomato puree
1 teaspoon Worcestershire sauce
2 tablespoons molasses
1/4 cup cider vinegar
1/4 teaspoon freshly ground black pepper

Steps:

  • Heat oil in a saucepan over medium heat. Add onion and garlic; cook, stirring, until translucent, about 3 minutes. Add cayenne, ginger, mustard, salt, and allspice; cook just until spices become very fragrant, about 2 minutes more.
  • Add tomato puree, Worcestershire, molasses, and vinegar. Bring to a boil. Reduce heat to low; simmer, stirring often, until slightly thickened, about 15 minutes. Season with pepper. Use immediately, or cool and refrigerate until needed, up to 1 week.

1 onion, finely chopped

1 teaspoon coarse salt

1 (28 ounce) can whole canned tomatoes, pureed with juice
3/4 cup water, plus more if needed
1/4 cup packed dark brown sugar
1/4 cup ketchup
2 tablespoons cider vinegar

Steps:

  • Heat oil in a medium saucepan over medium-high heat. Cook onion, garlic, salt, and pepper until onion is translucent, about 5 minutes. Stir in chili powder, and cook until fragrant, about 1 minute.
  • Add tomatoes, 3/4 cup water, the sugar, and ketchup. Bring to a boil. Reduce heat, and simmer, partially covered and stirring occasionally, for 1 1/2 hours. Add more water as needed to avoid scorching. Let cool slightly.
  • Working in batches, puree sauce in a blender. Stir in vinegar; season with salt and pepper. Let cool.
