SPICED BAKED APPLES
I LOVE harvesttime and being able to cook with all the fresh produce gathered from gardens and groves. Since there's so much of everything, I try to be creative by enhancing old recipes with slight variations. That's what happened with these baked apples. Steps:
- Combine raisins, nuts and orange zest; set aside. In a saucepan, bring brown sugar, water, butter, cinnamon and nutmeg to a boil. Reduce heat; simmer, uncovered, 2 minutes, stirring occasionally. Core apples and place in an ungreased 1-1/2-qt. baking dish; fill with raisin mixture. Pour sugar mixture over and around apples. Bake, uncovered, at 350° for 30-35 minutes or until apples are tender. Let stand 15 minutes before serving.

We like these simple baked apple slices spooned over oatmeal, but they would also be delightful cooled and swirled into yogurt. Fruity cardamom brings an extra layer of flavor to this recipe, but if you're averse to it, they're just as delicious without.

- Preheat oven to 400℉ and spray a baking pan with cooking spray.
- Slice apples in half, and then cut into medium slices. Add lemon juice, sugar, cardamom, pepper, cinnamon, nutmeg, and ginger to a bowl. Add apple slices and toss until coated.
- Spread coated apple slices into baking pan. Bake for 40-45 minutes, until softened and fragrant.

- Cut apples in half lengthwise; remove cores. Brush with 1 teaspoon lemon juice. Place in an ungreased 11x7-in. baking dish. - Preheat the oven to 250 degrees F. Generously butter a large baking sheet.
- On a cutting board, turn an apple on its side and cut into very thin slices, about 1/8-inch thick. (I used a mandolin.) Using a small cookie cutter, cut the core out of each apple slice and discard.
- Spread the apple slices out in one layer on the baking sheet. Sprinkle with cinnamon. Bake for 30 minutes, flip the apple pieces over, and bake for another 30-50 minutes until crisp. Depending on how evenly you sliced the apples, some may be done sooner than others. If so, remove the thinner ones when they are brown and crisp and allow the thicker ones additional time in the oven.

- Preheat the oven to 400 degrees F. Mix the granulated sugar, corn starch, apple pie spice and salt in a shallow dish.
- Cut both pieces of puff pastry in half so you have 4 rectangles. Use a rolling pin to gently roll out any cracks or creases. Then lay them on a large parchment paper lined baking sheet.
